The Ultimate Guide to Canadian Hockey Slang New to the good old hockey game? Here’s how to *not* sound like a hoser. Around this time of year, one thing begins to enter the minds of Canadians across the country: Hockey. To help us all keep up-to-date with the hockey chatter - and decode those watercooler conversations - the experts at language learning app Babbel have created a guide to all the Canadian hockey slang you’ll need to survive the season. Canadian Hockey Slang 101: Barn Burner - This is the kind of hockey game you dream about: one that’s packed with action, fast paced and high scoring. Birdcage - Slang for the goalie’s mask, or a helmet with a cage protecting the face. Not to be confused with “Fish Bowls” which have a clear face mask.

Chiclets - Teeth, usually used to describe the lack thereof. Chirp - Trash talk thrown at opponents (including players, the team bench or the referees) throughout a hockey game. Players will “chirp” others to try and throw off their opponent’s concentration.

Biscuit - The puck. It goes into the basket (the goal).

Dangler - Refers to a player with slick puckmanoeuvring skills.

Can-Opener - When a player puts his stick between another player’s legs and twists.

Drop the mitts/drop the gloves - The act of throwing off your gloves (or mitts) to get into a fight.

Dump and Chase - A tactic where players dump the puck into the opposition zone and then attack on a forecheck. Flamingo - When a player is afraid to block a shot and lifts one leg up like a flamingo in order to avoid getting hit with the puck. Gongshow - A chaotic situation during or after a game. Gordie Howe Hat Trick - When a player registers a goal, an assist and a fight all in one game. Heavy - Short form for “heavyweight,” used to describe a player who is an enforcer on a team or a designated fighter. Variations of this term include “Meathead” or “Cementhead.” Hoser - Essentially, a loser. Originally referring to someone who syphons gasoline out of farm equipPower to Move You

ment with a hose. This common Canadian slang term also derives from a time when the losing team had to hose off the ice to make it smooth again for the next game. Plumber - A player that loves to do all the dirty work in the corners. Although your average plumber might not be the most skilled player, they definitely work hard. Pylon - A player who moves slowly on the ice, and can be easily skated around. Sieve - A terrible goalie who lets many goals through. Slewfoot - When a player kicks the legs out from behind an opponent. (A very dirty tactic.) Tweeners/Five-hole - Scoring a goal between the goalie’s legs. 15

The Bank of Canada’s rate update for December 2023 As expected, Bank of Canada holds interest rate steady at 5%. Economists starting to think rate cuts will start happening in 2024. Bank of Canada governor Tiff Macklem and other members of the bank’s leadership group elected to hold the central bank’s trendsetting interest rate steady. The Bank of Canada decided to keep its benchmark interest rate steady at five per cent. The move was widely expected, as after raising its trendsetting rate 10 times since early 2022 to slow down runaway inflation, the bank has been signalling recently that it thinks it may be nearing the end of that hiking cycle. The bank’s rate influences the rate that Canadians get on things like variable-rate loans and some savings accounts. The bank raised the rate to its current level in July, but has stood still ever since, as the Canadian economy shows signs of cooling. “The slowdown in the economy is reducing inflationary pressures in a broadening range of goods and services prices,” the bank said in announcing its decision. New data suggests Canadian consumers are falling into the ‘lipstick index,’ spending more on cosmetics when financial times are tough. Several Canadian beauty retailers say they’re stocking up on products, expecting to build on last year’s holiday boom. Economists who monitor the central bank think it is indeed now done with hiking, and expectations are that the bank will in fact start to cut its rate some time in 2024. In its statement, the central bank noted that the economy “stalled” in the middle quarters of this year, with GDP contracting in the third quarter and the jobless rate ticking higher from multi-decade lows. “The economy is no longer in excess demand,” the bank said.

Under normal circumstances, a statement like that would be a clear sign that a central bank is getting to stand on the sidelines, but the bank took great pains to note that it is in fact still willing to raise rates by even more, should the need arise. “Governing Council is still concerned about risks to the outlook for inflation and remains prepared to raise the policy rate further if needed,” the bank, led by governor Tiff Macklem, said. For economist Royce Mendes with Desjardins, however, that’s mostly an empty threat aimed at making sure markets don’t react too forcefully in assuming cuts are coming. “Officials are probably just hesitant to prematurely declare victory in their battle with inflation,” Mendes said. Despite what the bank is saying every six weeks in their policy decisions, Mendes has detected a change in the messaging from bank officials in recent weeks. “In a recent speech, [Macklem] stated that the economy is approaching balance,” Mendes said. “In central bank speak, that means higher interest rates are working as intended. He also said that interest rates look restrictive enough to bring inflation back to the two per cent target, which is a pretty clear indication that rates will be held steady.”

How concerned are Canadian homeowners about meeting their mortgage obligations? Canadian homeowners are continuing to express concern about their ability to meet their mortgage payments, according to a new report by ratesdotca. The new survey found that 35% of homeowners were concerned about not being able to pay their mortgages over the next three years. While 51% of these respondents were younger than 55, there were 59% of respondents said they were not concerned about such payments. About 72% of these respondents were older than 55. Minorities (53%) were more likely to be concerned about their ability to pay their mortgages compared to respondents that were non-visible minority (32%). The report said that this difference was caused by visible minorities having less income on average compared to other Canadians.

Among those who expressed a lack of confidence regarding their financial future, 31% stated that inadequate income was a big factor. Nearly half of respondents said their current financial situations lacked stability as they could only afford $500 or less for extra monthly costs such as home repairs.

Out of all the regions, people residing in Quebec were the most confident in their ability to pay their mortgages with 71% saying that they were not concerned about meeting mortgage obligations. This comes with the findings that Quebec had lower average home prices and childcare costs which may be a reason behind residents’ higher level of confidence.

There were also 11% of homeowners who said that they could not afford their monthly expenses and were currently using their savings or credit to pay for their needs. This included 6% of respondents who were entirely or partially relying on credit to pay for their expenses.

This classic Champagne cocktail is batchable and not-too-sweet As a freshly minted bartender, still learning the ropes at PDT, the neo-speakeasy where I worked, I spent a lot of time studying a Rolodex of cocktail recipes. This was the late 2000s, a time when smartphones were only accessible to well-off early adopters, so I mean a literal Rolodex—an acrylic box that contained alphabetical-ordered, plastic-sheathed notecards with hundreds of recipes, from original PDT drinks to long-forgotten classics. One of these was the Air Mail. It’s an elegant concoction of rum, lime, honey, and sparkling wine that I would introduce to any bar guest of mine who liked a French 75 and perhaps wanted to try something “off menu.” It eventually ended up in my then-boss Jim Meehan’s excellent PDT Cocktail Book.

HOW TO MAKE AN AIR MAIL COCKTAIL: Stick some cocktail coupes in the freezer or fridge to chill. Combine 2 parts honey with 1 part warm water in an airtight jar with a lid. Shake until combined. Use immediately or transfer to the fridge for up to 2 weeks. (Besides the Air Mail, you can use this in other cocktails like a Bee’s Knees or Penicillin, or just a cup of tea.) Combine 2 parts white rum, 1 part fresh lime juice, and 1 part honey syrup in a cocktail shaker. Add ice and shake for 20 seconds. Strain into the chilled cocktail coupes and top each with sparkling wine. Garnish each glass with a lime wheel. (For example, for one cocktail, you’d need 1 oz. white rum, ½ oz. lime juice, ½ oz. honey syrup, and about 1 oz. sparkling wine.)

Pavlova Christmas Tree A Pavlova Christmas Tree! A spectacular Christmas dessert standing almost 40cm/ 16” tall, made with pavlova rounds, decorated with cream and berries just like a traditional Pav. Easier than you think, and a great holiday dessert to get everyone involved building it together! INGREDIENTS PAVLOVA 2/3 cup egg whites from 5 – 6 large eggs, at room temperature (Note 1) 1 1/4 cups caster sugar (superfine white sugar) 2 1/2 tsp cornflour/cornstarch 1 1/4 tsp white vinegar (Note 2) RASPBERRY COULIS (OR STRAWBERRY): 250g / 8oz frozen or fresh raspberries (no need to thaw, Note 3) 2 tbsp caster sugar (superfine white sugar) WHIPPED CREAM: 2 cups thickened/heavy cream (Note 8) 2 tsp vanilla extract 1 tbsp caster sugar (superfine white sugar) TO BUILD: 28cm/ 11” bamboo skewer – or 2 shorter skewers (Note 4) 10 strawberries , medium, cut into 1.75cm / 3/4” rounds (“Strawberry Pillars”) 12 strawberries cut into 1cm dices (for scattering between layers) DECORATING: Christmas tree star topper , edible or not, sticky taped to a toothpick 125g/ 4oz raspberries 16 small sprigs of rosemary 2 tbsp icing sugar/powdered sugar , for dusting SERVING: More strawberries (diced), raspberries, blueberries, and any other fruit you fancy! PREPARATION: 1) Preheat oven to 150°C / 300°F (130°C fan) (We drop the temperature down later). Set the oven shelves in the centre and lowest racks. 2) Draw circles: Take two sheets of baking/parchment paper and, using a pen that shows on the other side of the paper, trace circles around bowls, cookie cutters, scone cutters or glasses as follows: 3) Tray 1: 15cm, 12cm, 6.5cm (6”, 4.8”, 2.5”) diameter rounds 4) Tray 2: 10cm, 8.5cm, 5cm, 4cm (4”, 3.5”, 2”, 1.7”) diameter rounds 5) Turn the paper over and bake on the unmarked side (otherwise pen may stain pav). MERINGUE FOR PAVLOVA: 1) Soft peaks: Place egg whites in a bowl of a stand mixer and beat on Speed 8 for 1 1/2 minutes. 2) Add sugar gradually: With the beater still going, add sugar 1 tablespoon at a time until all used up – it should take around 90 seconds. 3) Beat 6 min: Beat for a further 6 minutes (still on Speed 8) until thick, glossy and no sugar grains remain (rub between fingers to check). 4) Add cornflour & vinegar: Stop beater, sift cornflour over surface. Add vinegar. Beat on speed 8 for a further 30 seconds. 5) Test: Flip bowl upside down. Meringue should be stiff enough that it does not fall out! If it does, keep beating. PIPING PAVLOVA ROUNDS: 1) Fit a piping bag with a large 1.2cm / 1/2” diameter star shaped piping nozzle, fill with meringue mixture. (Note 6 for alternatives) 2) Pipe tight coils, leaving a 1.2cm / 1/2” border within the guidelines for the decorative edge (except the two smallest ones, they are too small for decorative rims). 3) Then do another coil on top (ie two layers) so they are 2cm / 4/5” thick. Smooth surface. Pipe decorative edge, if using (I just do tight up-and-down swirls, see video). 4) Repeat for all rounds. (Note: Pavs will expand ever so slightly but will not rise) BAKE: 1) Place Tray 1 on middle shelf in oven, Tray 2 underneath. 2) Turn oven DOWN: Immediately turn oven DOWN to 120°C/250°F (100°C fan). 3) Bake 1 hour. Check to ensure base of large ones are fully crisp and dry, not wet & sticky. You should be able to lift off without sagging – be GENTLE, it’s fragile until dried out. 4) Cool 3 hours IN oven: Turn oven off. Leave pavlova to fully cool in oven, at least 3 hours, maybe longer. I often leave overnight. In this step, the outside of pav dries out and becomes more sturdy. The pav should be fully crisp and dry to touch. 5) Store until needed in airtight containers, in a cool, dry part of your house (I keep mine in the downstairs laundry!

RASPBERRY COULIS: (MAKE AT LEAST 2 HOURS AHEAD): Place ingredients in a saucepan over medium heat. Simmer 5 minutes, mashing with fork. Puree with stick blender (strain if you want, I do not). Cool fully before use. WHIP CREAM: 1) Whip cream just before building – do not whip in advance and keep in fridge, it deflates. 2) Place cream, vanilla and sugar in a large chilled bowl. Beat on high for 5 minutes until stiff. (Go beyond soft, lightly whipped, we need the structure!). Refrigerate until the very moment until you start building. CONSTRUCTION: Be prepared: Have everything out, ready to use. Construct at or near where you plan to serve. Layer 1: Place largest Pavlova Round on serving platter. Spread with 1cm / 2/5” thick layer of cream, right to the edge. Place 4 strawberry pillars around the edge, onto which the next layer will rest. Gently press them into the cream so they rest on the pav surface. Scatter some chopped strawberries in the middle of the pillars – not too many as we do not want to weigh the pav down. Drizzle with raspberry coulis, especially near the edge so it oozes out prettily. Spread with a bit more cream to cover the strawberries – make sure the cream is level for the next layer. Stick a skewer into the centre, pointy end up. Layer 2: Thread the centre of the next largest Pavlova Round onto the skewer, spinning back and forth gently to “screw” it through rather than pushing it through. It won’t shatter – pav is tougher than you think. Repeat the cream, strawberry pillars, strawberry dice, coulis and cream steps above. Repeat Layers 3 to 7: Continue this with layers 3 to 7, finishing with the smallest meringue. You will only need 2 strawberry pillars on the smaller layers, and 1 under the centre of the smallest. If the skewer isn’t long enough, thread through another one for the upper part of the tree. With each layer, check that the tree is straight and level. Use strawberries to level up the layers. Star topper: When the smallest Pavlova is placed on the very top, finish with a dollop of cream, small drizzle of coulis. Then insert the star, plus a raspberry and sprig or rosemary! DECORATE: Decorate with sprigs of rosemary, and insert raspberries onto the edges between layers (halve if necessary, to fit), using them to level out crooked layers, if needed. Dust with icing sugar and then serve immediately! SERVING: The top 2 layers are single serving size. The next 2 layers will serve 2 people each. The bottom 4 layers can be cut like traditional Pavs and will easily serve another 8 – 10 people.
