TAKE THE TRAIN DES MERVEILLES...

Sumptuous coastal and hinterland scenery. Free historical commentary by a guide-lecturer on the various villages you pass through. From Nice-ville to Tende on the 9.08am train (arriving in Tende at 11.33am). Commentary by a guide every day from 03/06 to 01/10 and every weekend from 07/10 to 05/11.

On the way back, we recommend the village of Saorge, where you can visit the 17th-century monastery overlooking the village.

Bonus: in summer from June to September, the Alpes-Maritimes "Day Pass" gives you unlimited travel over 1 day for 16€/adult, 10€/child and 10 euros for other members of your tribe up to 8 accompanying adults, whereas the return Nice -Tende fare for 1 adult/1 child is 46 euros in high season.

... OR THE TRAIN DES PIGNES

1h20 of time travel (steam train). 20 km of breathtaking scenery. From Nice, go to Nice Chemin de Fer de Provence station, located in the Quartier de la Libération at 4bis Rue Alfred Binet. It serves several stations, including Puget-Théniers, Entrevaux and Annot, all pretty villages worth visiting. On the way back, we recommend stopping off at Entrevaux, a typical medieval village with a majestic fort and drawbridge. This is an extraordinary site set amidst olive groves, built on a narrow rocky outcrop and surrounded by a loop of the river Var.

Bonus: in summer, if you're coming as a family, you can take advantage of a special price (2 adults/2 children aged 4 to 11, for example, for Puget-Théniers-Entrevaux = €50, compared with the normal price of 2 adults: 2 children =66€).

To get there by bus from Nice (Grand Arénas), take bus no. 90 at 9am and then the free shuttle bus no. 94. Visit Roquebillière's two churches. Take an easy hike called "Plangast" for a breathtaking view of Roquebillière : Start: Roquebillière (620m) Distance: approx. 4km - Total duration: approx. 1h30 From the church (marker 79), turn left into rue St-Julien as far as marker 80 on leaving the village. Go uphill as far as the retirement home. Continue up the hill until you come to a crossroads and take the small road down to the right towards the Plangast plateau. Cross the plateau, dotted with houses, and take a short cut back down to the main road. Reach the church of St-Michel-de-Gast below the road. Return to the village along the Félix Gatti promenade. For those with vehicles, a village called Roquebillière is well worth a visit, around 15 minutes away by car.

LA TRINITÉ : VISIT NOTRE DAME DE LAGUET This Baroque-style sanctuary is nicknamed "Nice's little Lourdes". The statue of the Virgin Mary is enshrined in a "casket of gratitude", and there are thousands of paintings and votive plaques. Listed as a historic monument by decree of 12 January 1931, it's well worth a visit! At the Laghet sanctuary, you're welcome for a few hours or a few days. The guests welcomed here find both physical rest and spiritual strength. The shrine's guest house is open all year round to pilgrims, families, young people and all groups wishing to take a rest or retreat there, or to make a pilgrimage or hike. The shrine is open from 7am to 9.30pm (8.30pm on Sundays and Mondays). Free parking. AUTHENTIC NIÇOISE RECIPE

"La ratatouïa nissarda" La Ratatouille niçoise Needless to say, ratatouille is one of the bestknown and perhaps best-loved dishes from the Comté region of Nice. It can be eaten hot or cold.

Ingredients : 1 kg aubergines, 1 kg green peppers 1 kg long courgettes, 1 kg onions 1.5 kg tomatoes, 10 garlic cloves 5 pinches of crumbled thyme leaves, 1 bunch of parsley, 1 handful of 20 basil leaves Flour - Olive oil - Salt - Pepper 1- Cut the aubergines and courgettes into 1 cm-thick slices. Separate the aubergines and courgettes courgettes into 2 separate terrines. Sprinkle very lightly with flour. 2 - Cut the peppers into thin strips, remove the stalks and seeds and set aside in a terrine. in a bowl. 3 - Thinly slice the onion and set aside. 4 - Peel, seed and drain the tomatoes. Set aside. 5 - In a frying pan, fry the aubergine slices in 3 tablespoons of olive oil. Fry the courgettes in the same way in another pan. In a third pan, fry the peppers in the same way in strips. Repeat in a fourth pan for the onions. 6 - In a heavy-bottomed saucepan, simmer the finely chopped garlic, basil and herbs in the olive oil, the tomatoes, crushed between the fingers, until the sauce is concentrated. 7- In a large casserole dish, over an extremely low heat, add the vegetables as soon as each one has reached the desired degree of doneness. Add salt to taste. 8 - When the tomato sauce is well concentrated, stir it into the mixture, stirring carefully with a wooden spoon. Drain any excess oil from the ratatouille using the lid, turning the casserole dish 90 degrees, and serve.
