The Evolution of Birdsong We bought the property in 2017 as a home with the view of doing something with the land, we just weren’t sure what, and many options were considered. The land was a blank canvass

and there were quaint mud brick buildings and sheds that had been set up for blacksmithing, so they were dark and industrial but quite unappealing as was the land. We could see the potential. I guess we had vision of sorts. One thing we noticed early on was the abundance of birdlife and that the soil was particularly suited to growing Australian natives. Of course, the more we planted the more the birdlife increased. We use to sit on the veranda of a morning and have a ‘cuppa’ together and enjoy the sound of the birdsong before I would go off to work. An idea was hatched to formulate a plan where I could give up work and just work from home. At this point we just weren’t sure of what we would do, or how this would work. In the early days things just seemed to fall into place almost like divine intervention. We got a man, Warwick Pitcher to come in to look at the dam as it was not retaining water and he suggested channels through the paddock, which evolved into the creek beds. Warwick also mentioned that he could acquire large boulders for us and so the garden beds emerged. Finding Warwick was really the turning point for us and we could not have done any of this without his expertise,

he has been a Godsend. My Parents had transformed a similar block of land in Gippsland in to a garden and small nursery specialising in rare and unusual alpine bulbs and so their advice was also critical. I had been a cook for many years, and then pursued my passion into mental health. Ron has worn many hats, having been a butcher, run his own successful seafood business, built and run a caravan park and finally managed a

swimming pool in a remote Aboriginal community In Arnhem Land where we met. We are both animal lovers and wanted to combine all of these skills and interests into what has become Birdsong Nursery and Gardens. Story continues pages 3 and 4

We set about designing a nursery and garden where people could come and enjoy the serenity, leave their worries behind and just be spoiled for a while, with good affordable food, a great selection of Australian native plants and some lovely animals to cheer you up and above all, great old fashioned customer service. Ron insists on chatting to people and carrying their purchases to the car and our food, although prepared and cooked in a food van, is brought to your table on fine china. Our prices are kept to a minimum and the quality is optimal, so that people can enjoy it without any stress, and we love making people feel special, so we do go the extra mile. We are not gardening expert’s just garden enthusiasts, but we do love people and care about their enjoyment of the place. All of our

staff are family members and they love the place as much as we do, and it seems as much as our lovely loyal customers. ‘Birdsong’ won’t get any bigger ,but it is still evolving. Fungi play a crucial role in the ecosystem as decomposers, soil builders and nutrient cyclers. They also partner with at least 90% of plant species protecting them from disease, helping them to obtain nutrients and water and even communicate with other plants. New Rokewood Bridge The crossing over the Kuruc A Ruc Creek on Geggies Road in Rokewood is now safer and smoother, thanks to the replacement of the old bridge. Works were recently completed on replacing the old single-lane, load-limited bridge with a two-lane concrete bridge with guardrails. The new bridge is not load limited and is approximately one metre higher than the previous bridge, which allowed the original bluestone abutments to be left in place. Construction

I was born and bought up in Kuwait and returned back to Kerala, India during the Kuwait-Iraq war. Growing up my favourite food was Shawarma, Falafel and Kuboos the Arabic pita bread. Back in Kerala, we grew up mainly on fish and chicken dishes and some beef or mutton but rice was the staple as southern India grew a lot of rice. People rarely went to restaurants and mostly ate home cooked meals.In the last three decades people started travelling a lot and going to restaurants and more North Indian dishes came to be known in the southern states and vice versa. After completing my Engineering degree in India I came to Perth to do Masters in Computer Science then got married. After marriage my husband and I have lived few years in Malaysia before we moved to Melbourne permanently in 2010 and finally settled in Haddon for the last two years. Living in Malaysia we were exposed to a lot of Malay dishes and Chinese dishes of which Mee Goreng, Seafood Curry Laksa, Thai chicken curry and Roti Canai were our favourites. Back in Australia, we started trying out Italian dishes like pasta, carbonara and pizzas. Australian dishes like shepherds pie, meat loaf, steaks, Bbq, roast chicken became our favourites. We cook all sorts of cuisines at home with the help of my children from pizza, pasta, paella, seafood risotto, chicken rice, Thai chicken curry, seafood laksa, fried rice, noodles, stir fry, shawarma to North Indian dishes as well as South Indian. In the course I am mainly teaching Keralite dishes which were handed down from my mother except for butter chicken/butter paneer. These recipes are tried and tested many times and the spiciness can be altered according to each one’s taste. South Indian cooking uses a lot of grated coconut, coconut milk and coconut oil. Most of the dishes in the course uses the key ingredients- turmeric powder, coriander powder, chilli powder, ginger, garlic, red onions and curry leaves. As I am trying to teach this course in the most authentic way possible, they are not gluten free or dairy free but with substitutions we can make them tolerable for people with dietary restrictions. Nancy will be teaching a special series of six workshops at the Haddon Community Learning Centre starting in August. You can see all the details in the course guide in this newsletter. She will share her family Indian dishes and cooking experience and participants will assist in the preparation and the sharing of food prepared and fellowship afterwards. SCOTCH EGGS 4 hard boiled eggs 375g Sausage mince 1 egg beaten 1/2 cup browned breadcrumbs

POTATO AND VEGETABLE SOUP 680 Grams potatoes 1 small white turnip 1 medium onion 1 carrot 1 parsnip 1 cup celery 1/4 cup parsley Dice all vegetables. Cover with water and add pepper and salt to taste. Cook until tender. Drain, keep liquid, mash vegetables well or use stick blender. Return to liquid. Add approx. 2 cups milk and 1 dessertspoon of butter. Sprinkle with parsley. Serves 6.

Shell hard boiled eggs. Divide the sausage meat into 4 and cover each egg with one portion, making sure the layer is even, to keep the egg in good shape. Beat the remaining egg and brush it over the scotch eggs. Coat with breadcrumbs and press on firmly. Fry in deep fat or oil until golden brown (about 7 mins) Cut into halves with a sharp knife dipped in hot water. Serve hot or cold. TIP If you are having trouble to get the sausage mince to adher to the eggs, roll them first in flour. Do not have the fat too hot, or the sausage meat will not cook all the way through, before overcooking the outside.. Try using very dry mashed potatoes id preferred to sausage mince. SIMPLICITY CHOCOLATE CAKE EASY APRICOT CHICKEN 700g (approx.) Chicken pcs (any cut will do) 1 pkt French Onion Soup (I recommend the salt reduced type) 1 lge onion sliced thinly 1 lge can apricot nectar If a richer recipe is required, add a handful of chopped dried apricots. Add all ingredients to lge saucepan, and stir till soup is combined with the nectar. Cook over high heat till mixture just comes to the boil, then reduce to a low simmer for another hour. Serve with mash and steamed vegies or on a bed of rice.

CHEDDAR CHEESE BISCUITS 1 cup plain flour 2 tbs self-raising flour 1/4 tsp salt

Ingredients: 1 cup self raising flour 1 cup sugar 1 ½ tbs cocoa powder (or 2 tbs drinking chocolate) 2 eggs 60g butter (melted) 1/2 cup milk 1 tsp vanilla extract Sift dry ingredients together, and make well in the centre. Put the 2 eggs in the well. Melt (but don’t boil) the butter in the milk along with the vanilla extract, and pour into the well too. Beat on high speed for 2 mins until all ingredients are well mixed. Pour into a 20cms greased cake tin and bake at 180 deg C for approx. 45 mins, or until skewer comes out clean. Ice and decorate as desired.

1/4 tsp Cayenne 125g butter 2 tbs grated parmesan cheese 125g cheddar cheese 1 tbs lemon juice Sift 1st 4 ingredients into a large bowl. Rub in the butter and cheeses. Mix to a soft dough with lemon juice. Shape mixture into 2 soft rolls. Wrap in greaseproof (baking) paper, the aluminium foil. Refrigerate for approx. 3 hours. Cut roll into slices about 5mm thick. Place on a greased tray. Shake a little parmesan cheese over them before baking at 180 c (170 fan forced) for 15 mins. Cool on the trays.

1 1/2 cups sifted icing sugar 2 tbs cocoa

Beat butter with an electric beater till pale, then gradually add half the sugar, while still beating. Add milk gradually then the raining sugar. Beat in the sifted cocoa. Baking Tip: Sifting flour might seem like an extra step but it's the

Welcome to Our Term 3, 2021 Course Guide Welcome back everyone to Term 3. It doesn’t seem possible that we are already half way through the year already! So we are starting our winter term with some new exciting courses in our crafting program to hopefully tempt you to try a new skill. There are three new workshops involving ‘Wire Wrapping,’ where you can make some amazing jewellery items. Firstly we are offering a basics workshop, then next you can make a ‘Tree of Life’ pendant, followed by an amazing wire cuff. You can do one, or all three workshops and no experience is needed for any of them. You will be shown all the techniques you require to complete these projects. We have expanded our craft classes to include an advanced ‘Alcohol Inks’ workshop. The effects that can be created are simply stunning and it is so very easy! And we are excited to be offering six weeks of the ‘Taste of India” cooking workshops. You will get to participate in the cooking and learn traditional Indian dishes with Nancy and share in the meal prepared afterwards. Our drop in sewing group continues on Fridays, where you can expand your existing skills, learn new ones or just come along and enjoy the company of like minded people. We are also very excited to be offering classes at the Dereel Community Centre in ‘Silk Painting,’ (2 scarves), ‘Introduction to Alcohol Inks,’ ‘Wet felting ’(merino scarf) and ‘Acrylic Paint Pouring’ ansd we are also doing six weeks of ukulele lessons. Our cheesemaking and fermenting workshops proved so popular that we are offering them again, with a night session on offer for cheesemaking if the interest is there. As well as that, we are offering a workshop on ‘Sourdough’ breadmaking. These classes will need to be booked early as there has been a lot of interest in them. They also include tastings! We are also offering another of our very popular ‘Mycology’ courses due to demand from first term. There are several sessions and you can do one or all of these courses. If you need help to choose then just contact us. We are continuing our Environmental Studies Level 1 to improve your knowledge about our environment. As always we offer all levels of computer classes. These range from helping older Australians find their way around devices such as mobile phones, IPads, and anything they need to do online, to advanced skills needed for employment. We can tailor the classes to your needs and skill levels. We also offer a free Job Skills session, which can help to guide you through what you need for your job search, new career path or study options to reach your goals. Special Interest Workshops CHEESEMAKING AT HOME Cheesemaking is a simple skill anyone can learn. Labneh, Ricotta, Camembert and Halloumi are easy to make in your own home. It only takes a little knowledge to become a master and the superior handmade flavour will impress anyone. Each participant will take three cheeses home as well as recipes and your own cheese mould so you can make many more in the future. You will never waste yoghurt again once you know how to make Labneh. Ricotta can be made in five minutes and is delicious drizzled with honey. Age your Camembert in your own environment to create a cheese that is as unique as yourself. Once you eat Halloumi crafted with your own hands you will never bother with the rubbery, inferior ones from the supermarket again. A light dinner of spanakopita and baked camembert will be provided and we will taste test ricotta and halloumi once it’s freshly made. Please bring with you - 3-4 containers to take your cheeses home and an apron and a cooler bag if the weather is warm. (Some spares will be available if required). FERMENTING MADE SIMPLE Kimchi, Sauerkraut, Lacto-fermented Pickles and Wild Fermented Kombucha and Sourdough Mother. What is fermented food? Do you know they are good for your gut health? How is it made? What types of ferments are there? Chances are, you have eaten fermented foods before and did not realise it. Many traditional food preserving methods are actually fermented such as olives and pickled onions are lacto-fermented. Sourdough bread, yoghurt, vinegar, even beer and wine. In this workshop you will learn to make five simple ferments on the day and take them home so you can continue to ferment for years to come.. Anyone can learn make simple ferments and move to a healthier lifestyle. This workshop includes a light lunch of local breads, ferments, cheeses, preserves and pickles. SOUR DOUGH BREAD MAKING Love the taste and smell of freshly baked bread, straight out of the oven? Always wanted to bake your own sourdough, but don't know where to start? In this sourdough basics workshop, you'll learn about maintaining a sourdough starter culture, mixing and developing the dough, shaping and baking a loaf, and you'll walk away with the skills and confidence to start your own sourdough baking journey at home. Once you learn how to make your own delicious, chewy sourdough, you won't be able to go back to eating supermarket bread! You will also get to enjoy a sourdough-inspired dinner as part of the workshop. What you'll get to take home: A set of instructions for looking after your starter culture and a recipe for a basic sourdough loaf. I-PALS PROGRAM - A NEW DISABILITY PROGRAM The Independent Pathways and Living Skills (I -Pals) Program is designed to bring people with a disability (aged 18+)together to build skills, confidence and independence. The program encourages participants to share, learn and grow whilst making new connections and friendships. All people with a disability are welcome, with or without an NDIS plan. It is FREE to attend as this program is fully funded by the NDIA.

The Community Learning Centre has a library of pre loved books, videos and DVD’s available to borrow or swap. Take some, leave some, or relax and have a read, while enjoying a coffee in the lounge area. We also have a collection of LARGE PRINT, and TALKING books, for those who are vision impaired or just prefer this type of book. The Haddon Community Patchwork Group are a group of craft minded people who meet on Monday evenings at Haddon Community Learning Centre. I have belonged to this Haddon group for 7 years. I have personally been interested in patchwork for about 25 years, as I just love the chance to select many colourful fabrics and create some lovely quilts. The designs can be either traditional or contemporary. We have donated many hand-crafted

PERMANENT SEATS AT HADDON RSL CENOTAPH For the past nineteen years the Lions Club of Haddon and district has run the Anzac Day Service at Haddon. Part of the organizing has involved the transporting of sufficient chairs to the Cenotaph (at least 100), and then at the conclusion of the service, returning them to the clubrooms.

Anzac Day at Haddon saw the culmination of many months of work to achieve the goal of permanent seating at the Haddon Cenotaph. The Lions Club negotiated with the Golden Plains Shire, the Australian Lions Foundation who supplied a grant for about half of the cost of the project, and with ‘Replas’ who supplied the recycled plastic chairs. Many more hours of work by Lions Club members were spent in setting up the seats, and it is their hope that the Haddon community will use the seats and the area for more than just Anzac Day.

Lions Australia is Australia’s largest service club with more than 1200 clubs in Australia and Papua New Guinea. Their mission is “making our communities a better place to live, work and grow.” As a Lions Club member, you’ll join a local group of serviceminded men and women who volunteer to support your community every day. Joining a Lions Club is by invitation, but applications are encouraged from all members of the community. The Haddon Lions Club are always welcoming of new members. Allie Robinson is a Meredith based mixed-media artist working predominantly with polymer clay, alcohol inks and more recently with wire. Allie has a wealth of knowledge that she wants to share and this experienced artist provides lots of personal tuition in her classes.

Allies’ style is influenced by art nouveau, along with inspiration from the textures and shapes of the natural world. You can see in these photos how talented Allie is at her craft. Aliie will be holding three workshops at Haddon including: ‘an Introduction to Wire Wrappiing’ Saturday 21 August, 1.00 - 4.00pm, a Wired Cuff Bracelet, Saturday 18 September, 1.00 - 4.00pm and a "Tree of Life pendant on Saturday 09 October 1.00 - 4.00pm. So come join Allie to make some beautiful items for yourself, or to give as a ‘special’ gift.

Seniors Move It Gently Wednesday mornings Seniors Move It Gently classes are so very popular. We only have ladies at the moment but if there are any men who would like to come too then please do give it a try. Alana is a lovely patient tutor and she adjusts the activities to your fitness level and she has different activities each week to provide variety and interest. Classes start again after school holidays.
