New breweries seem to open every week and established ones continue to push themselves to invent new offerings to keep us satiated. But it can sometimes feel like a struggle to get to the latest and greatest in Ontario craft beer. One challenge is the sheer size of our province. I haven’t visited all of the Northern Ontario breweries, so I’m happy to see Crystal Luxmore has a guide to them (pg. 8). Also, Jordan St. John takes a look at how bar owners are building mini-empires (pg. 14) to get more of the good stuff into our hands. And Ben Johnson goes over to the dark side to see how social media has been corrupted (pg. 4) but could still, with a little work, be a force for good beer. As well, breweries are seeing online ordering for home delivery as a solution for connecting with both die-hard fans and the curious dabblers. So, we added a new icon to our brewery directory (pg. 24) so that you can tell who sells on the web. But, if you’re like me, you’ll want to join our old-school, in-person tour of Prince Edward County (pg. 17). Plus: fall colours! Social media platforms, and the proverbial influencers, are changing how we find out about new craft beers—and probably not for the better.

here was a point in time, the early aughts perhaps, when it seemed like the prevalence of social media was something that was changing the world for the better. Like no other time in history, we had access to virtually all the world’s information, Twitter seemed to be helping spread democracy across the globe, Facebook was simultaneously letting us connect with one another 24/7 and giving a voice to the marginalized. The possibilities for achievement seemed limitless. But then we over did it. We’ve since learned that disinformation can be spread just as fast as actual information, our newfound digital democracy cleared the way for demented despots to dominate our collective conscious, and there is now virtually

no limit to the amount of fucking invites to improv shows and amateur concerts I receive. The movement to give everyone a voice and share virtually all information all the time has of course had many casualties (see: America, United States of ), and so it’s not all that surprising that the beer world has not been spared. Yes, on the one hand, the prevalence of social media has allowed small, independent companies to affordably share their stories and their brands and, as a result, craft beer has chipped away at a landscape formerly dominated entirely by behemoth industrial breweries.. But on the other hand, the newly-amplified conversation about beer has…kind of ruined everything.

Because social media has created an atmosphere where virtually all content exists as a sort of attention-deficit version of what it once was, we don’t have any time for anything — and that includes good criticism. In the digital age, no one seems to have the patience or inclination to digest considered commentary on any topic, and so when it comes to thoughtful discussion on beer, the chatter has become even more scarce. An example: I have occasional tendencies toward masochism and, when they surface, I find myself looking at beer-related Reddit subs. On one such perusal, I read a post where a redditor called writers who were considering larger issues related to the beer industry in Ontario “insufferable.” All the PeterHoppingtail86 (or something like that) really wanted was to know was “what new beer is out there?” Someone had actually taken the time to write about larger themes shaping the craft beer industry, but people, like this guy, are either too busy or too inundated with content to engage actual criticism and literally just want pictures of new beer. The result of this need for lowest-common-denominator “news” has, of course, led to a predictable end result: Suddenly, everyone thinks their opinion matters. When no one really gives a shit who has the best information or who wrote the best article about a certain topic, all that really stands out is who was first, who has a bigger audience, or who presented their point of view in the flashiest way possible. Suddenly, the voices leading the conversation have shifted.

It’s not just the quality of beer criticism that’s deteriorated, it might just be the beer, too. what a rare and beautiful thing it is that you’re holding a print publication that pays for beer writing (subscribe today, please)? The concept of “beer criticism” in 2019 has largely been replaced with Instagram posts, vaguely-toxic reddit threads, rarely updated websites, and unedited Youtube videos of people drinking beer they got for free and calling it a review. And I know, coming from someone who has been writing about beer for almost a decade, this might all seem a little Old Man Yells at Cloud, but I’d argue it’s not just the quality of beer criticism that’s deteriorated, it might just be the beer, too. Just as influencers have realized how easy is to get free shit in pursuit of followers and likes, brewers have realized it is a cheap and easy marketing ploy to simply send beer to people who are already happily over-sharing online. And I can’t say I blame them. The cost of sending a beer to @MaltyMary420 is minimal and the potential that she will take a picture with your beer in it and share it with a couple thousand

Enter, the Beer Influencer. As soon as people figured out that you don’t actually need to put thought into a considered review, you don’t need to engage the owners of breweries, take time to interview the people who actually make beer, or taste and sample beer (let alone visit a brewery) with a critical eye, there came a shit storm of people to fill the void. Every alcoholic with an Instagram account, boozer with a decent Twitter following, or craft beer fan with 30 minutes to set up a YouTube channel now fancies him or herself a tastemaker and, as a result, the critical landscape is basically a wasteland. Newspapers laid off critics—do you even know a mainstream media outlet with a dedicated drinks person or restaurant critic anymore? — and beer magazines closed up shop. Do you have any idea

followers is high, so why not? Whereas, even five years ago, sending a beer to say, author Jordan St. John might have earned you a public tongue lashing if you sent him a sub-par lager on an evening he found himself with some time to write in his blog. Today, brewers can ship a dozen cans of their new release to twitterati bros or scantily-clad instarones and there is virtually zero chance of anyone taking a critical stance of the product. And if someone like St. John does opt to wax poetic on the shortcomings of the beer? Not to worry, few people will take the time to even read anything over 500 words and, instead your beer will be readily hash-tagged with the #excitement at having received free product and you’ll get fomo-inducing images of your product shared across the internet for the cost of half a case of beer. But this has of course created a sort of negative feedback loop. Brewers send a sub-par beer to “influencers” and it gets the same dutiful “Look what I’m drinking!” treatment that every other beer gets, so the brewer can infer that the beer is objectively good, and they keep making it. The alternative is that someone with an actual opinion about a beer dares to voice such an opinion and jeopardizes their access to free shit, so they don’t. Because influencers trade on the currency of being likable (they literally gauge performance based on “likes”), being negative puts that currency in jeopardy: If they don’t get free shit, they don’t get likes, and if they don’t get likes, they stop getting free shit, so it is of paramount importance to remain likable. The result is that no one is offering up real criticism anymore. Brewers reward mediocre social media efforts, mediocre social media efforts are rewarded with the desired traffic, and the cycle repeats itself, pushing the industry toward mediocrity. Of course, there is a cure and it’s called disclosure.

There are still some voices on social media who are engaging both their audience and the industry they cover with fairness and transparency. Increasingly, they are the only people I bother to talk to. So, if you actively follow “beer people” on social media, seek out those who disclose. If you want to read the work of critics who conduct themselves with integrity look to those who let you know when they are being plied with freebies. If someone is at a dinner hosted by a brewery and the brewery paid for the ticket or meal or drinks, it should be acknowledged so that followers can take the praise for the spinach dip and dutiful hash-tagging with a grain of salt. "PS - I got this shit for free" goes a long way to building trust. Beware those who seem to gleefully post the free shit they got without much commentary. It is definitely fun, in the beginning at least, to have a brewery send you free beer in the mail (it’s free beer, what could be more fun?), but that really shouldn’t be what motivates any one to take to their digital soapbox. If you’re avoiding writing negative stuff that beer drinkers would want to hear because you’re worried it will jeopardize your next “beer mail” delivery, just throw your laptop in a lake and never write anything again because you don’t deserve a public forum any way. And, breweries, you’ll be better off in the long term if you kick the nasty habit of rotating your freebies through the latest glommers-on. Work with reviewers with integrity and experience and you’ll get more than cheap likes and momentary screen time. Part of the craft beer anthem is that we’re choosing something more substantial than fizzy corn water marketed with bikinis and patriotic platitudes about beavers. Let’s put the same consideration into how we talk about craft beer. j

northern Exposure We find out about the craft beer coming from Ontario’s most northerly breweries by Crystal Luxmore

orthern Ontario is a place where people where camo for moose hunting, not for fashion. Majestic pine and cedar forests blanket a gently rolling, rocky landscape criss-crossed by rivers and streams all feeding into some of the coldest, freshwater lakes in the world. It’s a stunning region home to outdoor enthusiasts who drink a lot of beer, and also to almost 20 craft breweries, most of which opened up in the last five years.

The autumn—bug-free, crisp and awash in ambers, yellows and reds, is the best time of year to visit. These craft breweries are farflung—it’s a 17-hour drive from North Bay to Thunder Bay, but Porter Airlines flies to Thunder Bay and Timmins on the regular. All you need now is a plan to harness that inspiration. Here’s a snapshot of what to drink and what to do for beer lovers up north this fall.

Lake of the Woods, Kenora Think of Lake of the Woods as the Muskoka of the North. It’s full of cabins and lodges and is a playground for Winnipegers, Minnesotans and Ontarians alike. The friendly craft brewery of the same name is at the heart of it all, recently opening a new brewery in Warroad, Minnesota, and about to open another in Winnipeg.

Drink: Forgotten Lake Blueberry Ale is a legend among Northwesterners for its wild blueberry aroma and deceptive easy drinkability for a 7.1% ABV count. Or try the new Channel Marker Lite, a citra lager clocking in at a respectable 4%. Do: This isolated region is chock-full of wildlife and tranquility. Book a local cabin and get thee in a canoe. Celebrate Oktoberfest at Lake of the Woods’ own street party October 5.

Sleeping Giant Brewery, Thunder Bay Named for the tabletop mountain jutting out into Lake Superior that looks like, you guessed it, a sleeping giant, Thunder Bay’s first craft brewery is a social engine of the city. Drink: Northern Logger golden ale, voted Thunder Bay’s Best Beer 2019 by culture magazine Walleye, this bready, kölsch-style ale has subtle stone fruit notes. Brewer’s Pick: Beaver Duck session IPA, which is now rolling out to LCBO locations and Beer Stores across Ontario. Do: Wake the Giant Music Festival celebrates a movement to make Thunder Bay welcoming and inclusive to Indigenous people, it’s on September 14 and features July Talk, Metric and electro-pop artist, Wolf Saga. On October 5, raise a stein in the brewery’s packed taproom at its 7th Annual Oktoberfest.

Dawson Trail Craft Brewery, Thunder Bay Thunder Bay’s second craft brewery was opened in 2016 by two homebrewers who named it for the nearby Old Dawson Trail, a trade route from Thunder Bay to Manitoba. Drink: Locals love Border Run, a balanced cream ale. The owner’s pick: low-IBU IPAs like Out Bae’s Haze, a double-dry hopped beauty. Do: Play pinball and arcade games in the taproom.

Full Beard Brewing Company, Timmins Opened in January 2017, Full Beard is already cranking out a mix of IPAs, easy-drinking pale ales and classics at full capacity. One block down from Main Street, the steel and wood taproom has board games, a chalkboard full of rotating beers and friendly, down-to-earth service.

Drink: Master of Beta, an unfiltered session IPA explodes with tropical and citrus fruits on the nose, and finishes brisk and clean. Don’t miss The Banks of Mattagami, a smooth, nutty brown ale with an espresso finish. Do: Take to Mattagami River for the 11th Annual Great Canadian Kayak Challenge & Festival August 23-25th. Or pack a picnic lunch and head 45 minutes east to Kettle Lakes Provincial Park for a day hike.

Compass Brewing, Timmins Opened a few months after Full Beard, Compass Brewing was founded by four Timmins miners and long-time homebrewers, Kevin Patriquin, Corey McLister, Mael Girard and Joel Bradette who built the brewery on their time off from their mine shifts. The beers nod to the lumberjacks and miners at the heart of the city. The trio makes beers they couldn’t easily find in Timmins like grisettes, IPAs and sours. Drink: La Grisette Belgian Blonde—a unique beer style for Northern Ontario with a lightly fruity Belgian yeast strain and a bready backbone. Do: Hit up Kapuskasing Beer Fest September 13-14 to sip brews from a dozen breweries, cideries and distilleries. Or grab tickets to a Timmins Rock NHL Junior A Hockey game at the McInytre Arena and head to the mezzanine for a pint of Compass.

Do: The Soo is a big hub for cyclists—check out Crank the Shield, a massive three-day backcountry bike race in August where Outspoken beer will be flowing.

Northern Superior Brewing Company, Sault Ste. Marie

Stack Brewing, Sudbury One of the first breweries to open in northern Ontario, Stack launched in “The Big Nickel” (a former nickel-mining town with the iconic tourist attraction) in 2013 and has been steadily expanding, opening a second location in July. The new location is home to the main brewhouse and a smokehouse restaurant run by award-winning chef duo, Nicolas Gignac and Jessica Roy. Stack offers a mix of easy-drinking brews like Nickel City, a light lager, and Saturday Night cream ale which are complemented by the bolder flavours in its Sour Series. Drink: Last Bite pumpkin porter, a roasty, spiced porter made with tons of pumpkin. Or try an altbier, Stack’s Impact is a crisp, earthy brown ale with whispers of toffee. Do: Visit the new brewery and taproom for lunch or dinner. Say hello to beavers and learn about how Sudbury is reforesting scarred mining lands at Science North, before taking a deep dive underground through old mine shafts and a guided tour of the Big Nickel (wear a sweater!).

Outspoken Brewing Company, Sault Ste. Marie This charming brewery opened in a 1930’s building downtown in the Soo, helped revitalize historic Queen Street. Local thirst led them to expand within three years of opening—that means more tanks, a canning line and tasting room in 2017. Drink: Split Shot extra pale ale, the brewery’s biggest seller and a gateway craft beer for BudLight-loving locals.

You’ll find the town’s second craft brewery in the Bushplane Heritage Centre. The brewery pays tribute to the 100-year history of brewing in Sault Ste. Marie, the last brewery in town, the Northern Brewing Company, operated until 2006. Drink: Try the Northern Superior, a clean lager that veteran brewers from the old Northern Brewing add a dash of salt to before drinking, like in the old days. Or try Northern 55, a toasty Marzen lager perfect for fall. Do: Visit the cozy taproom and then head next door for a Beaver Tail.

New Ontario Brewing, North Bay Housed in a bright, busy red taproom along the Trans-Canada Highway, New Ontario Brewing was named for North Bay’s former brewery which operated from 1907 to 1915. Opened in 2015, the brewery is a hub of the city thanks to its support for local fundraisers and businesses. Drink: The popular Treetopper red ale has subtle notes of toffee and caramel with bold citrusy hops, and the Edwards Pumpkinhands brown ale is eagerly awaited by locals every fall. Do: Party on Main Street in August for the city’s Block Party headlined by The Dirty Nil and featuring a number of Northern Ontario craft breweries.

Gateway City Brewing, North Bay Founded in 2018, brewmaster John Palko brings years of experience to the tanks as former head brewer at Jasper Craft Brewing. Drink: Twiggs Fire Tower, an English dark mild conditioned with coffee from local roastery Twiggs. It’s only available in the taproom or at Twigg’s four coffee houses. Brewer’s Pick: Lookout IPA, a single-hopped series — #4 will employ New World German hops and be out this fall. Do: Take in some open-air blues on Sept. 6 at the Gateway City Brewery Bluesfest on Main Street. j

BREWER vs. BREWER THE BARREL-AGED EDITION

ntario’s craft beer industry continues to grow and—more strikingly—the quality of beer manages to go up year after year. Ottawa has a distinct beer culture; London is a hub for new breweries; and PEC is suddenly a destination for craft beer fans.

But, in some ways, Toronto’s west end, especially around the Junction, was where Ontario’s top-quality breweries started to cluster together. To get a sense of how the area has changed, what that means for beer in general and what’s exciting at their breweries, we sat down with Stéphane Dubois of Bandit and Jordan Rainhard of, you guessed it, Rainhard for a beer-fuelled conversation.

GROWLER: Can you give me a sense of how you got to be running a brewery? DUBOIS: After Shehzad and I had decided to open a brewery, we spent six months looking for a place. We really loved the area and it is way better than what we thought we could find. RAINHARD: Your building is attached to the Beer Store there, right? Did they have any concerns? DUBOIS: No we didn’t even talk about that. [The Beer Store people] were super nice because we don’t really compete. Maybe now we compete a little bit. Now there is more craft beer at the Beer Store, but then, no. We stored some hops in their fridge before we had our own cold storage. How about you? How did you get into brewing? RAINHARD: Like you, it was homebrewing. That was my start. When I started in 2009, I used to say to family and friends that I was really into beer. I cared about beer and I loved talking about beer. My father made beer and my grandparents did, too. My earliest beer memory is of going with my dad to the u-brew store in Brampton and I used to hate the smell of the hops. I was really young. My wife brought back some really good double IPAs from the US and I thought, “wow this is really hoppy, interesting and I like this.” That’s what piqued my interest in brewing because there wasn’t anything like that around in Ontario. I watched a bunch of video on YouTube and that’s how I learned to brew. The rest is history because one thing led to another. GROWLER: I want to ask about barrel aging beer. You’ve both committed to that pretty strong-

ly and renovated your breweries to accommodate barrels. Why? DUBOIS: At the end of the day you have to make the beer you want to drink. It’s much more enjoyable that way. RAINHARD: Did you get more space? DUBOIS: Yes, we pushed a wall and have reorganized. A bit of a downside of being a brewpub is that when you do renovations the kitchen has to close. We don’t have the new barrels yet but we should be up to 40 barrels. With 20 we can do some blending but with 40 it will be even more fun. GROWLER: Obviously, barrels have been a big part of brewing at Rainhard. RAINHARD: Uh, yeah. Started with bourbon barrels. That was kinda our thing for a while because of what got me brewing stouts was a beer I had from Great Lakes. It was from their Project X series and it was a bourbon-barrel-aged stout in Buffalo Trace barrels. I bought it on a whim when I was looking for Karma Citra and they had nothing left but this one stout. Opened it, it was amazing.

Too much. We wasted a lot of product on commercial pitches of lacto, pedio or brett only to not pay attention to where we were storing our barrels. GROWLER: Do you guys get much of a chance to drink other people’s beer? RAINHARD: Stéphane, when you visit a brewery do you judge it by its IPA? Barroom Landscape We find out how bar owners with a few locations are making it a whole lot easier to find our favourite brews by Jordan St. John

t’s hard out there for craft breweries. Market saturation is a real problem. With LCBO shelves at a premium and some breweries having to focus on taproom sales, adding craft beer bars seems like a potential solution. Despite the obvious demand, the big, established chains of pubs and sports bars, with more than ten locations, tend to focus on large-brewery beers— they have relationships to maintain and don’t want to mess with a working system. Sitting in the Woodlawn Public House just after Christmas last year, I was struck by its success. John Oakes of the Harbord House in Toronto has managed to expand the Canadiana-inspired pub to three locations including two in midtown; previously something of a wasteland. He’s not the only one building an empire. I set out to discover what difficulties entrepreneurs face when they begin to build a chain of pubs.

Location, location, location The restaurant business is fickle and turnover is high. The majority of restaurants will not see two years in business, let alone five. The good news is that there’s always the potential to expand into a turnkey space. The bad news is that it’s fairly likely the space’s previous business closed because they couldn’t make a go of it. “We’re like lawyers chasing an ambulance,” says Eric Jordan, owner of The John (formerly The Jim) at Dufferin and Bloor. Jordan, whose experience includes several years at Casino Niagara and Duke’s Refresher, is in the middle of an enormous expansion with three new locations nearing completion this summer, and more planned. The first, on College Street, replaces Coq of the Walk, an Absintherie — that one was perhaps too

niche to survive anywhere for long. The second and third locations replace KT Bar and Aft on Queen Street, west of Broadview. “This time of year, places are going belly up,” he says. “We were going to space out the openings, but we got a really good deal.” Each address comes with its own difficulties. Consider Bar Hop’s third location, just east of Pape and Danforth, which seems to suffer from a lack of foot traffic when compared to the King and Peter Street locations. In the case of a larger chain, like Calgary-based Craft Beer Market’s Toronto location, a new space might have to be created at great expense. “We converted a bank to a restaurant, in a downtown tower that didn’t have the infrastructure for a restaurant. So it took far more time and money than expected.” says owner PJ L’Heureux.

Renovation Failing restaurant spaces go downhill faster in terms of cleanliness than a first-year dorm room. It may be necessary to remove carpets that have absorbed a decade of spilled beer or to completely gut a badly maintained kitchen where everything is covered by a thick coating of grease. In a best case scenario, the space is practically turnkey, and all it needs is the proverbial coat of paint and armful of knick-knacks—coordinated with the chain’s existing theme, of course. In the case of the Woodlawn Public House, the commonality with the original location is the low-key Canadiana vibe; you get the comfort of the cottage with a little bit of urban sophistication thrown into the mix. The previous inhabitants had preferred a faux-tudor look, while the updated decor of the Woodlawn lends the space an updated, urbane feel.

The aesthetic is key, even when you start from scratch. It has to stretch across the chain. “I believe it is really important to retrofit the room to make our brand stand out. We could have spent less ... but we wanted the overall feel to be warm and inviting, so adding wood cladding to the ceiling, and exposing the character of the building was very important to us,” says Craft’s PJ L’Heureux. In the worst case scenario, there’s a significant retrofit. “We pulled seven-and-a-half dumpsters of stuff out of the basement of the original location,” says Eric Jordan. “There were computers still in their boxes from years ago.”

Bill of fare Regardless of the condition of the space when it’s occupied, you need taplines. Whether it’s a simple half-dozen or over a hundred, the necessity is the same: New hardware, new keg fridge, new lines. It’s the kind of technical difficulty that can cause delays, and even after that you still have to meet the demands of the neighbourhood, customizing each location to a specific vibe. “All of our locations have rotating taps, but in Toronto, we have rotating rotators,” says Joanna Britton, who oversees Craft’s Toronto and Ottawa locations. The demand for novelty is greater than in other markets. Ottawa’s demands are different. “We used to mandate monthly brewmaster’s

dinners at every location. Ottawa doesn’t have as many breweries, and fewer of them are brewpubs, so there’s more interest in that.” The brewmaster’s dinners give the kitchen staff an opportunity to play because each location is too large to offer feature specials. The menu fits Craft’s vision of sustainability, featuring Oceanwise-approved seafood, Beretta Farms beef, and local produce when available. Sometimes the ethos is driven from an individual direction. “I think I’m the best customer and I asked where would I go? I want the best beer and the best food, and I want to be comfortable,” says Eric Jordan. “Everyone has to be comfortable. I want a single woman to be able to read a book at the bar.” This has led The John to simplify in a way that opens their doors more widely. For example, all of the beers on draught and in cans are the same price, offering real bargains to the aficionado without gouging those with simpler tastes. While the daily specials frequently feature game meats, nearly everything on the menu can be customized as vegetarian or vegan. “Each one is individual, but no matter which location, you’re still going to get that John experience.”

The strengths Negotiating with a chain may seem like a losing proposition for small brewers, but there are definitely advantages. Each Craft location collaborates on a philanthropic community brew monthly with a local brewery, and that can be useful for R&D. Blood Brothers’ Cactus Head double-dryhopped IPA started out as one in Toronto. From a volume sales standpoint, it represents a significant expansion of what’s possible. The John chain will have 150 taps across four locations by the end of this summer. There’s also the question of stability. In a larger company, each location of the business can help to keep new ones afloat as they get up and running and establish themselves in the neighbourhood. That stability allows growth for the chain and also for the careers of the people that work for it. Employees have the potential for career advancement at new locations, taking on more responsibility. “We’re all industry lifers. Some of us 10 or 20 years. We’re bringing in staff we know from previous jobs,” says Eric Jordan. You’d be surprised at how many bars and restaurants have been blacklisted by craft breweries for not paying their bills. Doing business with the solid, growing operations can be a relief. That goes for the consumer, too. It’s confidence to walk into a bar and know that the staff will be trained, the selection of beer will be interesting, and the ambiance will be familiar. Not everything needs to be a challenge. j

Why PEC is the perfect place to unwind with Ontario’s soaring craft beer scene by David Ort

feel sorry for travel agents trying to hawk flights and all-inclusive packages to Ontarians at this time of year. From late summer, through until after Thanksgiving our always-beautiful province is at its very best. Whether you want to take the kids with you (and sneak in a few brewery visits between the hay-wagon rides and apple picking) or are planning a beer-fuelled getaway for two, Prince Edward County is a top-class destination. Geographically, it’s a headland—looks a bit like an island but is connected to the mainland by a thin strip—on Lake Ontario’s north shore that is halfway between Toronto and Ottawa. And in proper Ontario fashion, it has a non-standard political system: technically, it’s one city (of just 24,000 people spread over a whopping 1,000 square kilometres) with about ten wards. Far simpler to think of it under the historical organization: Picton is the main town with a tourist bent, Bloomfield is the arts-and-crafts village

and once-sleepy Wellington is a magnet for new restaurants. Everywhere else has the friendly, rural personality common in Loyalist country. Give some thought to how you’re going to get between stops. You could get in a few breweries with under 25 km of cycling. Or when the weather cools off, a designated driver or an organized tour company like Rides with John are the preferred options. There are cabs but you may have to wait or book ahead. In any case, don’t drink and drive. Even more than other parts of Ontario, the County has enjoyed a recent wave of new breweries that present a wide range of beer styles and are tightly focussed on quality brewing.

Just open this year, Gillingham feels very much like it belongs in Prince Edward County. Perched on the vineyard Andrew Gillingham’s family owns, the beer has a strong connection to his and his wife, Christine’s, family.

So, for instance, Dave ESB (5.9% ABV) is a refreshing, malt-forward take on the style that’s named for and designed to please both of their dads. Andrew combines his homebrewing background with his experience as a creative director. That means different iterations of a concept—such as wide-ranging interpretations for the Howlett IPA (about 6.5% ABV)—are to be expected.

At the same time, Parsons makes Crushable (5% ABV), one of the best and most approachable pilsners in the province. Oh and they also have a bit of a stout obsession with standouts like Devil’s Right Hand – The Son (8.5% ABV) which gets its character from time spent in whisky barrels from nearby distillery, Kinsip.

As we get even further into autumn, my bet is that their back patio will be one of the best spots to enjoy the waning warm weather. And while you’re in Hillier, check out Flossie’s Sandwich Parlor and Sugarbush Winery, both just down the road.

Get in a visit to the beer garden before the snow flies for a relaxing, easy-does-it drinking experience. The Argentinian-style asado grill lends a South American vibe to the food programme that ranges from grilled flatbread with chimichurri aioli ($11) to the gaucho burger ($19).

Parsons

Matron Fine Beer

Across the County and just outside of Picton, Parsons is the brewery with a gold-plated reputation among craft connoisseurs. That was earned with outstanding brews like Noice (8.1% ABV) a double IPA bursting with a tropical cocktail of aromas and flavours from six exotic hop varieties. Or there’s Sunkissed (7.5% ABV) a beer that’s made with 30% wine from their own pinot noir and chardonnay grapes.

Things tend to the extremely relaxed at PEC’s newest brewery, tucked down a country lane outside of Bloomfield. The renovated former warehouse has just the right amount of polish to make it the perfect spot for a lazy mid-afternoon tasting session. Beer options centre on their standbys like Janky IPA (6% ABV) that strikes a fine balance between a clear, medium-malt body and fine hop notes on the nose and in the background. Co-founders and vets of Stone City Ales in Kingston, Mallory Jones and Justin da Silva (plus Jes Nettleton) see the rest of Matron’s beers keeping a tight focus on refined styles from the farmhouse-style catalogue. Say hi and save an ear-scratch for Rhubarb, Matron’s friendly brewery dog.

Without picking favourites, I think it’s fair to say that Midtown might be the most balanced all-rounder. That means the brewpub, built into

a former meatpacking plant offers everything from an old woodstove to a skateboard ramp outside. The beer programme, led by co-owner Paul “Spike” Lees, has a noticeable British lean that reflects his childhood in Manchester. That means they do a UK-style IPA (5% ABV) with more copper malt character than is strictly typical these days and also a dry Irish stout (4.2% ABV) that swings heavier than its test indicates. Save a big spot in your eating schedule for chef Neil Dowson’s food. From chicken schnitzel ($20) to fish ‘n’ chips ($17) it manages to be both unpretentious and of top-notch quality. Given they’re a community cornerstone, it’s no surprise that Midtown has a “pay it forward” board so that customers can buy each other a pint of beer in absentia.

Where Else to Visit

A quick glance at a map makes the County look like an island sticking out into Lake Ontario. It’s easier to get to than most islands but enjoying the lake is a must-do while there. Walking amongst the picturesque dunes at Sandbanks Provincial Park, especially near sunset, should be high on your list. Like Niagara, PEC started its recent career as a culinary destination with wine — thanks, guys, we’ll take it from here. Kidding aside, there are a few really interesting wineries that stand out from a crowd of winners. Rosehall Run and Closson Chase specialize in the cool weather grapes—mainly pinot noir and riesling—that Ontario’s climate is built to produce. The Grange is our good-value pick for County wine to go with the country chic atmosphere. Hinterland is the place for clean and crisp sparkling wines—plus they took a crack at making beer, so there’s a kinship here. And Lighthall makes their own cheese to go with a pleasant lineup of light-touch wines.

Getting to PEC

I love finding ways to get out from behind the wheel, but driving really is the easiest route to the County. (There is a VIA station in Belleville but it’s about a $50 cab ride the rest of the way to Picton, Bloomfield or Wellington.) The southern half of the area, in particular, offers plenty of scenic spots and reasons to pull over and take in the view.

Where to Stay

Bed-and-breakfasts and rental properties were the established go-to until the Drake made PEC their weekend home. First it was the Drake Devonshire on the lakefront in Wellington (opened in 2014) and it has now been joined by the Drake Motor Inn. This is a stylish and very modernized take on the highway motel concept with an app for checking in and the Drake’s trademark, hip-retro aesthetic. Plus, it’s about 25 steps from Midtown Brewing so there’s no need worry how you’re getting home after your last pint. Speaking of cheese—even better with beer— Fifth Town Artisan Cheese is a world-class producer located out on the eastern side of the County. They take an environmentally respectful approach (Platinum LEED-certified since 2009) to fermenting local goat, cow and water buffalo milk. Their Isabirra is a cow’s milk cheese soaked in dark beer. In the same neck of the woods, the County Cider Company is a longstanding favourite for its namesake drink and Kinsip is one of the most interesting new distilleries in Ontario. And, of course, there are several more breweries to visit, include Prince Eddy’s, 555 Brewing and Strange Brewing, spread throughout the area's backroads and main thoroughfares. Farmers’ produce stands, craft stores and antique shops are pretty easy to find, with slightly more in artsier Bloomfield. And if you didn’t cover off your dining needs at one of the breweries, Sand and Pearl Raw Bar is the place for all things briny. Plus, spots like Ponodoro are great for a full meal. j

Michael Jackson: The Beer Writer Who Changed the World I

f you were given the unenviable task of picking the single most important person to modern beer, it might seem odd that it is a writer’s name rather than a brewer or brewery founder’s that you keep coming back to. Yet outside of, say, Josef Groll, who invented the modern pale lager in 1842, or maybe Sierra Nevada founder Ken Grossman, the person who is undeniably essential to all things beer today is writer and critic Michael Jackson. The King of Pop…ular barley-based beverages, if you will.

Jackson was born in 1942 in the English county of Yorkshire and raised in the Leeds area. At the age of 16, he would drop out of school to become a journalist. Having tasted beer for the first time when he was 15, one of Jackson’s first gigs as an underage journalist was a column about the history of and his impression of English pubs called “This is Your Pub,” an idea he himself had pitched to his editor. For the next 20 years, Jackson would have a successful career as a journalist, including editing magazines and working as a TV investigative

reporter and producer. Maybe most importantly, he and two others founded a publishing company focusing on illustrated books called Quarto. When another writer was a no-show for a proposed book on the English pub, Jackson stepped in and wrote it. The English Pub, published in 1975, like the namesake establishments, is charming and full of history. Jackson knew his subject matter very well, even down to the history of the images on the sign outside the door or how English religious and political changes affected the names on those signs. One other thing that becomes very clear while reading The English Pub, something that would be essential to the rest of his life, was that Michael Jackson was a very good writer.

The next year Jackson would put his skill to work on the book that would change his life and beer forever, The World Guide to Beer. Inspired by Hugh Johnson’s The World Atlas of Wine, Jackson decided to do the same thing for beer. The World Guide to Beer was a landmark in modern beer writing for many reasons. Back in 1977, writers did not talk nor write about beer in the same way they did about wine, something we take for granted now. By writing that one should taste beer in a similar way that one tastes and judges wine, Jackson changed that. Maybe even more importantly, by creating a system of beer styles by which to judge and understand the many different kinds of unique beer in the world, Jackson single-handedly created the beer judge/critic, a role he himself would spend the rest of his life being the most famous example of. The World Guide to Beer was also incredibly important to the current state of modern beer for the effect it would have on two vastly different beer cultures. It was sometime in the late 1960s that “one weekend in Belgium changed my life,” according to Jackson. But that beer epiphany, something all beer geeks can relate to, was inspired by a beer culture that was in danger of going extinct. The unique and idiosyncratic beers and beer styles of Belgium were slowly disappearing. Family-owned breweries closed up shop as aging brewers retired or died, and the flood of pale lagers rolled in. Jackson—who would write extensively about Belgian beer, not just in the World Guide, but also in his other great work, The Great Beers of Belgium—would help wake up a generation of Belgians that it was necessary to protect their unique beer culture. It also helped create a world wide market that was thirsty to drink it. On the other side of the world, the U.S. market had all but succumbed to the pale lager spectre. Changes in the law, related to making your own beer, however, would allow a wedge in the homog-

enization. But what to brew? There is no end to the many future brewers who would turn to The World Guide to Beer as a source of information and inspiration on beer styles. After the World Guide, Jackson’s publication history is a bit difficult to track. He would leave Quarto without any rights to his book and would see little or no profit. Thankfully, he was now the world’s leading expert on beer, criss-crossing the globe, writing, hosting and judging. At one time, he was the person who had visited more breweries than anyone else alive. He was instrumental in championing the emerging craft beer scene. Unfortunately, Quarto would continue to pump out reprints of the World Guide without any revisions. Jackson would write his Beer Companion, what some would say is his best book, that basically competed against his own classic. Finally, out of frustration, he agreed in the 1990s to update the World Guide, completely rewriting the entire text and calling it the New World Guide to Beer. When he wasn’t writing about beer, Jackson also wrote about whisky. His three books on whisky are widely regarded as classics. It was also in the ’90s when Jackson used his experience in TV to produce and host his other claim to fame, the TV show The Beer Hunter, further evangelizing and elevating beer (it's on YouTube). For the last 10 years of his life, Jackson would suffer from Parkinsons. This wouldn’t prevent him from continuing to write and work until very close to the end of his life. He died of a heart attack in 2007 at the age of 65. The world of beer would be vastly diminished if it was not for the tireless and profound work and writings of Michael Jackson. You can find many of his articles online and you should never pass up a chance to pick up one of his books at a used book store. Think of him, if only briefly, the next time you drink a fine ale or lager. j

s that a cool breeze in the air? Can we finally turn the a/c off and open the window again? It’s the perfect time of a year for a return to hearty-but-not-too-heavy cooking. We can also spend more time in our kitchen and this recipe from Bar Lupulus in Ottawa is the perfect push to try something new. Guinea fowl is a relative of the chicken with stronger flavour and darker, leaner meat. Talk to your butcher about ordering one, or if you must, sub in a top-quality chicken. And koji is a Japanese ingredient, related to miso, that is grown on rice or barley and adds a ton of deep umami flavour. Find it in the fridge at Japanese grocery stores. There are a lot of savoury flavours bouncing around this plate and Macleans blonde ale does a sublime job of brightening them up. A bière de garde would also do the trick. —David Ort

• 1 cup wheat berries • ½ tsp salt

• 2 ½ cups chicken stock

Place on a tray and refrigerate (with plenty of space around it for airflow) for 4 days. 3. Bring 2 ½ cups of water to a boil. Add wheat berries and salt. Cover and simmer on low for 20-25 minutes. Strain and toss with a little oil. Cool if not making the risotto immediately.

4. Remove the breasts from the bone. Heat 1 Tbsp of butter over medium heat in a large frying pan. Brown the guinea fowl pieces on all sides. Reduce heat to low, 1 cup of chicken stock and cook, covered for 30 - 35 minutes. Turn the pieces as they cook until the breast meat is firm.

1. Remove the legs, wings and back from the guinea fowl. (Bar Lupulus uses these to make a stock and confit croquette to serve as part of a composed dish. You can cook them along with the breasts.)

5. Meanwhile, bring 1 ½ cups chicken stock to a boil and add the par-cooked wheat berries. Cook over medium-low heat until the stock has been absorbed and the wheat berries are tender but toothsome. Add butter, cheese and salt to taste.

2. Blitz the koji in a food processor and dust the guinea fowl breasts (still on the bone) with it.

6. Serve with seasonal vegetables, such as charred scallions and charred cabbage. j

London (summer 2019) Some towns have a good beer bar, London has a craft-beer centre of gravity at Milos’ Craft Beer Emporium. Two former employees have opened their own brewery, Beerlab!, next door. Hillier (summer 2019) It’s hard to imagine how a PEC brewery could be more true to type — think low-key, rustic aesthetic, a dog-friendly patio and rows of grapes literally in the backyard. Co-owner and head brewer Andrew Gillingham clearly enjoys experimentation and presenting different versions of his lineup to the brewery’s devoted fans. @gillinghambrewing

Toronto and Cannington (summer 2019) Partnering with Berkeley Events to be the house beer for their venues, this is a contract brewer with a different slant. First off, they plan to grow ingredients on a farm near Cannington. As well, they've set out to support animal welfare charities. @lordsimcoebrewingco Bloomfield (summer 2019) Not to be left out of the great County Craft Beer Boom of 2019, Bloomfield also welcomed a new brewery this summer. Guelph (2019) A few issues back, we reported on the closing of one of Ontario craft beer’s old guard. News came this spring that Mike Oosterveld, owner of Fixed Gear Brewing, is buying the space and reviving the StoneHammer beers as part of his brewery.
