A Toast, Good Friends, to the Coastal Bend Alcohol in its varied forms is often connected to the idea and act of celebration and enjoyment. The summer tends to evoke similar feelings. Regardless of your reason to rejoice or your libation of choice, there’s something special about sipping a refreshing alcoholic beverage in the heat of the season. Combine that sentiment with bright colors, juicy flavors and the imperative need to cool off in the South Texas heat, and we’ve got the perfect reason to dedicate this month’s issue to those keeping our glasses full this season. A unique concoction of artistry, history, knowledge and passion comes together within the pages of this month’s cover feature. Beginning on page 30, “Drink Like a Local” entails boozy delights from several corners of the Coastal Bend. Inside you’ll find a collection of spirits distilled right here in our neighborhood, summer wine recommendations to keep on

your radar and a look at the local craft beer scene’s recent expansion into cans. We also chat with a handful of local mixologists to find out what they drink at home after a long shift, pose a series of questions to a sommelier to help elevate our palates and pour up a few other intoxicating treats. This region is home to an ever-growing scene of distilleries, breweries, wine shops and craft cocktail bars. From supremely smooth vodka in Sandia to brilliantly brewed beers in Corpus Christi, these local establishments and makers are masters of their respective crafts, and are graciously sharing their talents with the lot of us to sip on. If beer, wine and liquor aren’t really your thing, fear not: This issue has plenty of alcohol-free stories to discover, too. We share a conversation with a marine biologist whose recent study on female dolphins became a viral headline and topic for late night shows; two different local businesses entering new eras of growth; a family-owned restaurant rooted in exquisitely delicious tradition and culture; and so much more. When it comes to the Coastal Bend, the growth it is experiencing and the talented people who inhabit the area, there’s plenty to celebrate. With that, I’d like to think of this month’s issue as its own celebration of sorts, so we’re raising our glass and sending a metaphorical “Cheers” to the innovative and passionate folks in this community who are elevating the way we drink, eat, think and live. A Sound Elevation HYBRID RECORDS’ NEW DOWNTOWN LOCATION OFFERS MORE THAN JUST A NEW ADDRESS BY: MARK GREGORY LOPEZ PHOTOS BY: TYLER SHULTZ

t’s not just the pulse of the record as it spins round and round. It’s not just the liner notes spilling out pieces of audible poetry. It’s not even the sounds emanating from the speakers. It’s the discovery, the feeling of elation while perusing the bins in search of that perfect LP, that signature sound that’ll enhance the room with every rotation and inspire conversations to be had. This is the culture and cultivation that Hybrid Records hopes to expand on in its new downtown location. A native of Corpus Christi, Carlos Cooper originally opened Hybrid Records in 2015, hoping to fill the niche for encountering music in a physical medium. And though, like many businesses, the record store has had its share of struggles (including 18 The Bend

surviving during a pandemic), Cooper recognizes the importance of community in keeping a space like this alive and thriving. “We’ve always had good support from the community,” he said. “As a born and raised Corpus Christian, I have an investment in this community, and I think people see that. So we’ve always had a lot of support, and it’s just continued to grow every year.” Though the business was originally started with little money and a more DIY sentiment, it has since grown to encompass an attitude of augmentation and expansion. In late 2021, Cooper made the decision to move the shop’s location for the first time in its existence, and join the renaissance that is a growing downtown scene.

“Corpus Christi wants downtown to grow, yet very few people have invested in that growth,” Cooper said. “Retail is a huge part of what makes a successful downtown in any city, so it was important for me as a native of the area to be a part of that revitalization and invest in the future I want to see for my city.” With six years of business, experience and a loyal following under its belt, relocating the shop and bringing another retail option to the area not only felt right, but important; and with neighbors such as Commons and local producer El Dusty’s PRODUCE collective, Hybrid Records fits quite nicely into the symbiotic block that is Peoples Street. The new location’s design is reminiscent of a Japanese-style listening bar, featuring clean lines, natural elements and an intimate environment with a retro feel. For Cooper, Hybrid Records, regardless of the address, has always been about creating a communal space. One where, yes, you’re encouraged

to buy vinyl, but you’re also inspired to converse about art and music and everything in between. “You don’t just come in to shop; you come in to catch the whole vibe of the space. We hired [designer] Justin Gainan to build out the space, and that’s really allowed us to elevate everything,” Cooper said. “So yeah, change can be exciting … new, shiny things and whatnot. But also just in terms of the intangibles, to be able to envision the future and how much further we can take this – like collaborating with surrounding business owners to curate unique community events and encouraging people who might not have been to the downtown area since living here – that’s almost even more exciting.”

Fostering Love & Hope IMPROVING THE LIVES OF SOUTH TEXAS CHILDREN IN FOSTER CARE BY: JESSIE CHROBOCINSKI

F

or 23 years, Foster Angels of South Texas has worked to improve the lives of children in foster care in the Coastal Bend by ensuring each child has their basic needs met, and by providing life-enriching experiences. The nonprofit identifies the gaps and quickly responds to children's circumstances so they, too, can have supportive, loving childhood experiences with long-felt, positive impact. "We help meet the many unfulfilled needs of children and foster care,” said Foster Angels’ executive director Hilary Jackson. “We believe all kids deserve to feel [cared for], so we make sure they receive the essentials and, when possible, those life-enhancing opportunities like extracurricular activities, summer camps and birthday parties. We do this through our partnership with Child Protective Services (CPS), as well as other nonprofit profit agencies." Foster Angels of South Texas receives requests from caseworkers with CPS and other agencies, which helps the organization to understand each child-specific need, and then responds within a 48-hour window. For example, Foster Angels helps with housing and rental assistance, which can mean bedding, mattresses, cribs and household items. The assistance continues with clothing, diapers, 24 The Bend

food, educational needs and much more, including a scholarship program for current or former foster youths pursuing higher education. Jackson elaborates on Foster Angels’ generous assistance with adoption, including attorney filing fees, home inspections and anything else that prepares a child for adoption, such as eye exams, glasses, braces, therapy services and even car assistance. "Some of the older youth with cars need assistance on their tires or oil changes, for example. Caseworkers and the case managers are allowed to think outside the box when it comes to the children's needs. There's nothing we say no to," Jackson said modestly. Collective programs and events throughout the year help to support the agency — such as the back-to-school shoe drive. Each year, Foster Angels collects new pairs of shoes so children can go back to school with confidence and feel cool in their new kicks. Jackson said that often, children are easily identified by their peers as being in foster care from their shoes, emphasizing the importance of sending students to school with the right supplies and materials they need. Jackson also expressed how proud she is of the organization in its unique ability to help a child in need quickly and efficiently. “[Foster Angels] is unique in that we do what we do in such a short amount of time — we can help a child literally within minutes if need be.” And when something as simple as a pair of shoes can make or break a child’s spirit, an organization like Foster Angels is not only an incredible resource in our community, but a crucial one.

AROUND THE BEND PERSON OF INTEREST KC: In terms of these specific findings, what could the potential conservation impact be? DDO: In humans, it has been shown that the contraction of vaginal muscles during female orgasm can enhance sperm travel through the female reproductive tract and potentially increase the likelihood of fertilization. Artificial insemination of endangered and threatened animals in managed breeding programs can vary widely in their success rates of fertilizing eggs. This may sound crude, but perhaps animal trainers could improve the success of breeding programs that use assisted reproductive technologies by stimulation first? There has been a deficit of research on female reproductive morphology, and with more research, we may find that several other species have sex for pleasure.

Dara Orbach, Ph.D. IN CONVERSATION WITH THE MARINE BIOLOGIST ON THE MOTIVATION, FINDINGS AND VIRALITY OF HER RECENT PUBLISHED STUDY ON DOLPHINS MATING FOR PLEASURE BY: KYLIE COOPER PHOTO BY: LILLIAN REITZ KC: Earlier this year, you, along with other researchers, published a study indicating that mammals other than humans, such as the bottlenose dolphin, have sex for pleasure. What was the initial motivation/inspiration behind the research? DDO: My research has largely focused on marine mammal genital evolution for the past decade. When I share this with people, one of the main questions I get asked is “I saw it on a Snapple bottle — is it true that dolphins have sex for pleasure?” It was speculated that dolphins have sex for pleasure because they mate throughout the year, despite having a limited season during which they can conceive. [Collaborator Patty] Brennan and I started thinking there may be more to the story, and we started planning how we could answer functionality questions using anatomy and outside-the-box thinking. 26 The Bend

KC: How might these findings aid in other marine-related studies? DDO: One way to tell if coitus is pleasurable for an individual is to look for behavioral and physiological cues. For example, the heart rate increases during copulation, as does breathing rate. Because dolphins mate in the water, measuring their heart rate and breathing rate would be a challenge during copulation. The same issues apply to most marine species. Additionally, having a scientist attach probes to an animal is probably stressful and may skew data. One aspect of our study that is exciting is that we have developed a technique to test if the clitoris is functional that could, in theory, be applied to most species of animals. Our study was also non-invasive in design since our subjects had already died from natural causes before we received their reproductive tracts (under federal permits). Our technique is not limited to marine species and could be applied widely without the constraints of fieldwork and animals that don’t read the protocol and are uncooperative. KC: Why do you think people might view this topic as taboo or a social faux pas? DDO: I just wrote a scientific paper addressing this topic and have spent a lot of time pondering why there are cultural and social taboos associated with discussing female genitalia.


Darwin’s research is fundamental to our understanding of evolution. Darwin’s theory of sexual selection, however, had some bias in that males were assumed to be active and females were assumed to be passive. If the historic perception of the role of females was to be a receptacle, then why would it matter if the act of copulation was pleasurable for females and what would be the evolutionary drivers of such a function? It turns out that male genitalia are studied substantially more prevalently than female genitalia, and this trend has not improved over the past 30 years despite calls to action to address the disparity. I corresponded with a retired professor who shared the backlash she faced from researching sexual pleasure in female primates in the 1970s, which almost cost her her job. I think the recurrent social faux pas of discussing female genitalia reflects pervasive remnants of a patriarchal society. Perhaps the lack of recognition of the importance of female reproductive morphology and funding support is perpetuating the stigma? I am hopeful that the work of my collaborators and I are changing the conversation and breaking social taboo boundaries to advance scientific discovery. KC: From “Saturday Night Live” to The New York Times and beyond, this study caught the attention of international news outlets. Did you expect the media attention that followed? DDO: Actually, yes, I did. I presented preliminary data at a conference in 2017 that went viral in the news and was mentioned in “SNL” then as well. We were excited for our paper to finally be published as it has been years in the making, and we anticipated it would garner broad interest and help break the stigma around female genitalia and sexual pleasure. I suppose what they say is true, that “sex sells,” especially when it is sex related to a charismatic, lovable animal, like a dolphin. Stay tuned, as I’m generating new and fascinating discoveries each year.

A GOLDEN RETURN The Gold Fish How the revamped local bar made it through the pandemic stronger than ever

Once an old service station and then a dry cleaning business, the humble corner

bar on Taylor and Mesquite Street has lived a few lives. In late 2017, the building was restored and turned into what is now known as The Gold Fish. After a two-year run, Michael Treiber and Houston Boswell purchased the bar, and its next chapter was set to unfold in March of 2020 with expanded outdoor seating, an additional bar and a whole new cocktail menu. However, March of 2020 had other plans. “We were very eager and excited to open and see our vision finally come to life,” Boswell said. “As news of the pandemic’s scope and its effect on other communities began to spread, a sense of apprehension began to creep in, but we remained hopeful.” As one can imagine, opening a bar alongside a pandemic that temporarily shut down the entire industry would be no easy feat. The Gold Fish had already become a popular local spot, and the community anxiously awaited its return. “[We] definitely had our challenges, and it was stressful at times,” Boswell said. “I think we were able to overcome many of these obstacles by being flexible and keeping an open mind, which allowed us to adapt during a rapidly changing situation.” After several hard months, a pivot was necessary for the bar to remain open, and after receiving a Food and Beverage license allowing it to serve food and operate at a limited capacity, The Gold Fish was able to truly open its doors in the summer of 2020. The pandemic would continue to throw the service industry curveballs, and while operations continued, the ebb and flow of high case numbers left patrons to choose their public outings carefully.

With the timing of the ownership change and the reopening of the bar right before COVID hit, the success The Gold Fish is seeing today is a testament to what a staple it has become in the local community. “I think our success can be attributed to our relaxed outdoor atmosphere and the great service we provide. We have an amazing staff that has many local ties within the community,” Boswell said. It’s a wonderful thing to see people rally behind a local business. The Gold Fish might have “returned” at the start of 2020, but now in the summer of 2022, it seems as though there isn’t a night that goes by where it isn’t filled. Whether you walk by the corner bar on a Tuesday or Saturday night, the chances of seeing a familiar face enjoying a cocktail on the patio are high, and after the last two years, that’s something we’ll certainly raise a glass and say “Cheers” to.

When curating a new cocktail menu, The Gold Fish wanted to create fresh, innovative drinks with names that reflect influences and landmarks in the Coastal Bend. Local sommelier answers questions to help elevate your palate and become a connoisseur of wine yourself

Find a great local wine shop. There should be someone on staff who buys the wine for the location and gets to try many different selections a week. I started in retail, and this is how I really fine-tuned my palate.

When tasting wines, what are your top three indicators for a well-made bottle?

Balance, complexity and structure — everything should be in harmony. I look for different things depending on which varietal I’m having. Cabernet should have intense aromatics, color and richness, but enough tannin and acid to bring it all together. Whereas when I’m having Pinot Noir, I’m looking for more elegance and purity of the fruit.

Is it true that there are good years for grapes and bad years for grapes? If so, can you elaborate on this idea?

Absolutely. But it’s very region-specific. For example, the 2000 vintage was a very challenging year for California, but it was an absolute classic vintage for Bordeaux in France. There are lots of good vintage charts available online; a quick Google search will give you vintage charts for just about any region you’re looking for.

Sometimes when I finish a glass of wine, there is crystalline sediment at the bottom of my glass. What does this mean?

In red wine you will often find sediment, especially in unfiltered wines. It can often be a sign of minimal intervention during the winemaking process. The sediment is particles left in the wine after fermentation (normally spent yeast), but they are completely harmless, and most winemakers will tell you it adds body and more flavor to the wine. In white wine the sediment more resembles crystals, or diamonds. This is normally a result of cold stabilization. Again, completely harmless — but if they truly bother you, try decanting your wine; pouring your wine through a cheesecloth or coffee filter to quickly remove them.

Walk us through the tasting process of a bottle of wine. If I am drinking a new bottle at home, what should I do?

Eyes, nose, then palate. First, I look at the wine’s color to see how intense and vibrant the color is. Aromatics are next: Give the wine a healthy swirl in the glass to open up aromas, and make sure to stick your nose well into the glass and really get the essence of the aromas. Then, of course, the best part: drinking it! Always remember to take in a little bit of air as you drink your wine, as it naturally aerates the wine before you consume it.

Thoughts on wine spritzers or cocktails that dilute wine?

I really don’t have a problem with a wine cocktail; they can be very tasty ways to jazz up a wine that maybe, let’s say, is lesser fare than others. I definitely wouldn’t use a highquality wine for a wine cocktail, but in the right mixologist’s hands, an ordinary wine can turn into a fantastic cocktail.

Are there any wine-related trends we should be on the lookout for?

Earth-friendly wines are a big trend right now, as people are definitely searching for more sustainable, mindfully farmed, organic selections. Just remember to do a little research on a wine before you buy it — because many times a producer may be using sustainable organic practices but unnoted on the label, as they aren’t doing it to market it in a certain way. They are using those methods because they feel it’s just the right thing to do for their wine.

What is your must-have summer wine, and what kind of food would you pair with it?

My go-to summer wine is a white wine from Spain called Albariño. The best come from an area called Rias Baixas. The wines have beautiful acidity and bright, refreshing citrus notes, and for the price (most are under $25) are just an incredible value. Go-to food pairing is any dish that’s just begging for citrus and acid to be in the dish, such as ceviche, oysters or fish tacos.

ITALIAN COWBOY'S SUMMER RECS Gaja Vistamare From one of Italy’s preeminent wine families, Vistamare is the only white wine made at the Gajas’ coastal Tuscan estate. Meaning “View of the Sea,” it is summer in a glass, with floral aromas, notes of orchard fruit and coastal herbs and a complex, minerally finish. Perfect dockside.

Monsecco Gattinara Who says you can’t enjoy red wine in the heat of the summer? Grown at the foot of the Italian Alps, this light-bodied, Nebbiolo-based wine smells and tastes very much like a Barolo, but with lighter red fruit (think cherries and plums) and loads of warm spice.

Kim Crawford Sauvignon Blanc From Rutherford, California, Kim Crawford produces one of Marlborough’s benchmark Sauvignon Blancs and has been named in the Wine Spectator Top 100 four times. Aromas of lifted citrus, tropical fruit and crushed herbs make this a fresh, juicy wine with vibrant acidity and plenty of weight and length on the palate. Pairs brilliantly with fresh oysters, asparagus, lobster or summer salads.

Stags’ Leap Petite Sirah The 2018 Petite Sirah exudes strong notes of blackberry, blueberry and black cherry fruits interwoven with more savory notes of black pepper and cocoa powder. On the palate, juicy flavors of creamy cassis, macerated blackberry, cherry kirsch, black licorice and peppery plum envelop the rich, saturated mouthfeel. This wine is smooth and silky with velvety tannins and a generous lengthy finish.

LUCY’S SNACKBAR'S SUMMER RECS Chiaretto Ciaro 2020, Vini Sassara From natural winemakers Alessia and Stefano Bertaiola, this still Rosato comes from the grape varieties Corvina, Rondinella and Molinara. The Bertaiolas’ first release comes from just outside Verona, in the Morainic Hills near Lake Garda. It is bright, elegant, with notes of pomegranate, grapefruit, tangerine and wet stone; a taste of spring and color of summer.

Avaline Sparkling Cameron Diaz’s natural wine group, Avaline, makes natural wines easy to understand. Her sparkling has become our go-to. Organic, sulfitefree and vegan. Macabeo, Xarel-lo and Parellada grapes make this bubbly dry and refreshing.

Frisant Rosato Il Farneto Frisant Rosato is a rose natural wine made in the pet nat style from organic and biodynamic grapes grown in Emilia-Romagna, Italy. Frisant Rosato is made with the “Metodo Ancestrale” technique: spontaneous fermentation with native yeasts, unrefined, unfiltered and minimal added sulfites.

Wavy Wines California Wine Cooler Red 2020 BT From Moon Mountain, California, Wavy’s Wine Cooler Red 2020 is a woody and herby sparkling red made from Barbera, Freisa, Merlot, Petite Syrah and Zinfandel grape varieties. It features fruit notes and great tannins, is organic, free of sulfur dioxide and made with native yeast.

An award-winning, classic method bubbly, it uses the same grapes and method as Champagne but is a fraction of the price. With no added dosage (sugar), it is crisp and complex out of the fridge and elegant and enchanting as it warms. Great for long summer nights.

ISLAND WINE'S SUMMER RECS Duchman Vermentino 2019 Hailing from Driftwood, Texas, Duchman Vermentino is widely recognized as one of the finest wines made in Texas. Grown in the High Plains by Bingham Family Vineyards, its flavor profile often garners comparisons to Sauvignon Blanc or Pinot Grigio. It’s bright and features a fresh acidity with soft notes of green apple and citrus fruits such as grapefruit and lime.

MUCH ADO ABOUT MICHELADAS

The history of the Michelada and its evolution into a full-blown meal

Have you ever been met with a Bloody Mary with maybe one celery stick and

an over-cooked piece of bacon? Natural selection and evolution occur as a part of life, and I subscribe to the belief that the Michelada is coming for Bloody Mary's neck. This beverage does not disappoint and could feed a table of four. In all seriousness, though, the lore of Micheladas includes disputed origins. Perhaps they were created by Mexican General Don Augosto Michel, who in the 1910s would serve his soldiers beer with lime and hot sauce to revitalize his forces. Another tale involves a man named Michel Ésper at Club Deportivo Potosino in San Luis Potosí, Mexico during the 1960s. Ésper would ask for a beer with lime, salt and ice, his refortifying beverage of choice. The drink's recipe would gain new sauces and seasoning as time progressed. In these stories the name’s etymology would be “Michel's ‘chelada’” or "Michel's cold 38 The Bend

beer." However, the translation can be further broken down to "mi chela helada," for "my cold beer." Either way, the lore and pragmatic analysis arrive at the same conclusion: a delicious cold brew with all the trappings, please. This staple has grown beyond a drink and into more of an entrée. We aren’t upset by this evolution, but it is crucial information for those uninitiated. Being a cultural staple locally, Micheladas take on various forms, and depending on how you take your drink, a local institution will provide you with your fix. Most notable is Burger Beach Hideaway for its loaded Michelada, comparable to a clown car (in a good way) with the number of embellishments packed in. The Michelada culture in South Texas is prominent, so if you want to elevate your Bloody Mary (unbiased take), then pay homage to either Michael Ésper or General Don Augosto Michel and treat yourself to a staple of the Coastal Bend.

We still love growlers, and they have their time and place, but canning has made it easier for anyone to enjoy our beverages wherever and whenever they like.” Lorelei Brewing Company, Rebel Toad Brewing Co. and Nueces Brewing Company are also local breweries with a delicious slate of beer they can and sell on tap. The newest addition to the local canning scene is Nueces Brewing. The crisp and refreshing Nueces Original Lager is now canned to perfection and available for purchase at select H-E-B stores. With this quartet of local brewers expanding their reach and selling some of their beverages in retail stores, the Coastal Bend is seeing an increasing embrace of local craft beers, which will be a boon for the brewery scene

to grow and is leading to plans for expanding options. Nathali Cavazos of Rebel Toad said, “Our next can release will be El Sapo Mexican Lager, releasing early summer along with our Peach to Bay ‘Summer Run,’ a kolsch with natural peach flavors,” something we should all be looking forward to picking up. Each location has its respective environment and signature products worth trying and visiting. Each year we make strides as a city. In regard to the brewery scene, who knows? Maybe we’ll give Portland, Oregon, a run for its money one day.

Thankfully, the moment I walked in, I was greeted by Coach Rudy and he calmed my nerves as he shared a bit of the gym’s history and helped to wrap my hands. I attended the Women’s Only Kickboxing class, which is designed to help participants learn the basic fundamental kickboxing techniques all performed on a heavy bag, sans any physical contact with another person. The coaches were extremely handson and helped with each new move and combination – giving tips and feedback the whole way through to help me get the technique down. They were patient, but motivating, which I really appreciated. What I took away from the class, and kickboxing as a whole, is that it truly combines so many components to make one fast paced, high-intensity workout. Balance, coordination, endurance and mental focus all come together and create an almost meditative experience. hroughout the years of my life, I always believed inner beauty magnified any person, whether it be a greeting with a sincere smile or with simple acts of kindness. I've always wanted to exemplify the woman who will be remembered as someone with a heart of gold and who advocates living a healthy lifestyle. I was raised by very strong women: my mother, who I am grateful to still call my best friend, and my grandmother, who I will forever remember looked her absolute best when she left her house, from her wardrobe to her flawless skin. These women are a mirror of who I am today — their beauty, poise and pure hearts. They always guided me to look my best. For me, that first consisted of treating people with kindness and benevolence. Of course, makeup and trendy outfits never hurt! My weekly routine consists of working out least four to five times a week, even if that means waking up at 4:30am to squeeze in a workout before heading to the studio for work. Working out has always been easy for me, while maintaining healthy, flawless skin has always been problematic, but with consistent cleansing and moisturizing, this sensitive skin has come a long way. I always believe that less is more, which includes keeping makeup to a minimum when I am off camera. Cleansing and detoxifying are things I follow with due diligence. This includes healthy juices, 10-12 glasses of water per day and, of course, proper rest and sleep. Beauty to me will always signify what is on the inside of one's spirit, but if there are products and healthy routines that help boost confidence and outer beauty, I believe this will encompass one’s vibrancy from the inside out. Being a girl who struggled with confidence, I'm now blossoming into a woman who promotes self-love and self-worth. Remember to love yourself first … because that's who you'll be spending the rest of your life with. I’m a firm believer in that statement. n the spacious neighborhood of Lago Vista sits a Hill Country-inspired estate on a sprawling green lot. Its prominent German farmhouse façade fits seamlessly into the natural surroundings. Lago Vista is one of the Southside’s premier neighborhoods, with its expansive lots and beautiful man-made lakes, and this home is one of the neighborhood’s most distinctive. Having moved to Corpus from San Antonio, the homeowners wanted to bring the Hill Country with them. To achieve that vision, they worked closely with architect Kai Geschke and builder Live

Oak Construction. The homeowners meticulously designed their German-inspired family estate. From the exposed wood beams and the Texas Lueders fireplace in the living room to the substantial, black framed windows throughout, this home exudes Hill Country charm. For the rest of the design choices, the homeowners referenced their extensive collection of inspiration photos. “We mostly wanted clean lines, bright light and a mix of textures and colors,” said one homeowner. Those design principles are evident throughout the home. The harmonious

One of the most noteworthy design choices in the kitchen is the two islands: Taj Mahal quartzite counters sit atop dark blue millwork, making for an attractive combination. To finish off the interiors, the homeowners collaborated with Neighbor Made Design Co. “We wanted the home to feel inviting and make everyone feel comfortable and welcome,” they said. Suede sofas and a massive coffee table placed in front of the fireplace draw guests to the living room, while an oversized dining table can seat plenty for a dinner party. One of the most special details in the home is the Hermés King Ranch scarf displayed in the entry. Framed like a piece of art, this scarf is a limited

L

emongrass is a pretty stand of sweet-smelling grass. Unlike the grass in your lawn, which requires endless mowing and a ton of water, lemongrass requires no work while giving a lot back, and its green and reddish flowers are gorgeous. It is a tropical plant from India and Indonesia that grows in a dense clump, similar to pampas grass. Lemongrass grows beautifully in pots. Use the largest pot you can find to start your transplant. Just make sure to bring it indoors during a freeze and your potted lemongrass will last for many years. To protect lemongrass in the ground from a freeze, cut the plant as much as possible down to ground level — this is a good winter practice to stimulate new growth whether or not temperatures reach freezing — then apply a thick layer of native leaf mulch around the plant. Once the weather warms in spring, your lemongrass will explode into a dense, lush stand. This plant has an extensive list of commercial and home uses. Most of the lemon-flavored teas on the market are flavored not with lemons, but with lemongrass. The essential oil is commonly used to treat oily skin, acne, dandruff and even rheumatoid arthritis, and it’s used as the active ingredient in some bug repellants. For home use, lemongrass tea is prized in many cultures to fight colds, fevers, digestive ailments and body aches. For a luxurious bath, steep lemongrass in hot water. Of course, it’s also an essential ingredient in many Asian dishes. To cook with lemongrass, peel the outer skin and chop the stalks finely, or grate the lemongrass and use a mortar and pestle to grind it into a paste or simply toss it into a food processor, as it can be chewy if not finely processed.

To harvest, cut stalks as needed at the base of the plant. Then, cut this stalk again at the point where it flares into a blade, about 7” to 10” from the base. This is the usable part of lemongrass. Be careful with the long blade, as it can cut you. Dry the stalks or freeze them (in a mason jar if possible), but fresh lemongrass is most potent.

WHERE TO EAT The Lookout fine dining restaurant atop the Big Cypress Lodge pyramid boasts a glass viewing deck with a 360-degree view of Memphis and the Mississippi River. For breakfast or brunch, The Arcade diner is the oldest cafe in town, founded in 1919 by immigrants from Greece. Four generations later, it is still a family operation. If it’s available, snag the “Elvis booth” (exactly what it sounds like: his favorite spot to eat) in the corner and order the exquisite sweet potato pancakes. Likely the most famous aspect of the city is its ties to the American music scene. Several of the most famous musicians throughout U.S. history were raised or discovered in Memphis, including Johnny Cash, Aretha Franklin, Otis Redding, Justin Timberlake—and of course, Elvis Presley. The lavish home of the King of Rock and Roll has become a fascinating time capsule featuring tours of the mansion, grounds, and his planes and cars.


Memphis played a prominent role in the American civil rights movement and is home to The National Civil Rights Museum. It is a complex of museums and historic buildings covering the history of the movement in the U.S. from the 17th century to the present. Visitors to the area must also prioritize a stroll down iconic Beale Street, three blocks of nightclubs, restaurants and shops in the heart of downtown.

WHERE TO DRINK Beer and spirits enthusiasts will have a heyday in Memphis. Two riveting tours top the list of attractions: Wiseacre Brewery has a tour that includes tastings, beer history and the science behind the ingredients and processes involved in making great beer. Founded by brothers Davin and Kellan Bartosch, its pilsner “Tiny Bomb" put it on the map within a year of opening in 2014 by winning Bronze at the Great American Beer Festival. The facility is huge, hip and fascinating. A few miles away, the Old Dominick Distillery tour is a sensory journey that covers the history of the founder, Domenico Canale, and his experience as the largest distributor of alcohol and produce before, during and after Prohibition. It has a close-up view of the extensive grain-to-glass craft distilling facility, and ends with a curated tasting of Old Dominick’s portfolio of unique spirits. A Community Pillar Enters a New Era

mall businesses are truly what make Corpus Christi the shining star it is. Over the years, the community has fought hard to keep local momand-pops in business rather than bringing in big box stores — and often, in the eyes of newcomers or transient residents, it might raise the question of why. But when you consider a longstanding woman-owned, minorityowned, small business that has been a cornerstone of the community for decades, the goals for keeping the local landscape thriving become crystal clear. Lott’s of Art by Evelyn Cooper is a contemporary African clothing, art, jewelry, furniture and accessories boutique that first opened its doors in October 1994. At that time, it was an art and gift gallery inside Sunrise Mall, where the specialty store gained notoriety for hosting community events centered around honoring African and Afrocentric cultures such as Indonesia, Morocco, India and others. 72 The Bend

Lott’s of Art was the first gallery of its kind, serving as a resource for expanding visitors’ horizons to include a more global point of view. “She travels all over the world to get the items [for her shop],” longtime customer and supporter Wanda Perry said of owner Evelyn Cooper, “and there is always a program for the community honoring Black History Month and other holidays like Kwanzaa [because of this business].” Perry is one of the many patrons who recognize the influence Lott’s of Art has had over the years, and why this business is a draw for everyone all around South Texas to experience the spirit of the store and of Cooper herself. “Cooper is also a musician and a director with a vision,” Perry added. While it’s no secret that art and activism often go hand-in-hand, Lott’s of Art is no exception. From her gallery opening to the emboldened clothing, decor and accessories mecca that it is today, Cooper’s intention

A

s we begin to gather and attend more parties and events after two years sans entertaining, you might be ready to dip your pinky toe back into the shallow end of the hosting pool. It’s been a while, so entertaining could be a little daunting. (Who else has forgotten what it’s like to have an intimate conversation in the 6-foot vicinity of another human being who doesn’t live in your house?) While the conversational aspect of entertaining might seem a bit overwhelming right now, the food part doesn’t have to. One thing that doesn’t seem up for debate is the popularity of the charcuterie board. It’s been touted as the adult version of Lunchables© and the bringer of joy at a family gathering. The brilliance of the charcuterie board lies in its versatility and ability to suit a spectrum of taste buds. Here’s how to build a charcuterie board that will draw a crowd faster than Lady Gaga in a meat dress: • • •

Plan 2 ounces of protein per person for an appetizer portion and 5 ounces per person for an entree portion. Offer hearty vegetarian and vegan options like hummus, yogurt-based dips, olives, nuts or seeds. Include soft and hard cheeses that pair well with your preferred carbohydrates (sliced fruit, seed crackers, baguette, etc.). Extra points if you include a gluten-free cracker or two. Don’t forget the condiments! Berry compote, stoneground mustard and honeycomb are guaranteed crowd pleasers. Throw in some fresh herbs for flavor and color. Finish the board with something salty, like spicy pickles, and something sweet, like dried fruit or dark chocolate.

We’re over two years into this pandemic. As a society, we’re feeling more isolated than ever before. Perhaps what we are all in need of is an evening filled with good conversations, a refreshing mocktail (add in your gin of choice if you’re in the mood for a stiff one), and a board for grazing to help lift our spirits. Just a suggestion: Start with a question about your guests’ recent projects and interests before escalating to worldwide events and gas prices.

Berry Herb Shrub Prepares two 8 oz portions

PREP TIME: 5 minutes COOK TIME: 5 minutes INGREDIENTS:

4 oz berries 2 sprigs fresh herbs 1/4 cup sugar 1/4 cup white wine vinegar 8 oz sparkling water or club soda DIRECTIONS:

In a small saucepan, combine sugar and 1/4 cup water over medium heat. Whisk mixture until sugar dissolves, about 3-4 minutes. Remove from heat and transfer to heattolerant container and place in the freezer. Pull herb leaves off the stem and add them to the bottom of a pitcher. Add the berries to the pitcher and macerate with the back of a fork or a small whisk. Add vinegar and cooled simple syrup to the pitcher. Fill two old fashioned glasses with ice. Divide the berry herb mixture between the two glasses and top them off with sparkling water. Enjoy immediately.

Beet Hummus Serves 6 appetizer portions

PREP TIME: 15 minutes COOK TIME: 25-35 minutes INGREDIENTS:

3 beets, scrubbed with tops removed 8 ounces canned chickpeas (recommend organic) 1/2 cup fresh cilantro, parsley or dill 3 cloves garlic 1/3 cup olive oil 1/3 cup tahini 1 lemon 1 tsp za’atar 1 tsp salt

DIRECTIONS:

Preheat oven to 375. Season beets with salt and pepper and coat them with olive oil cooking spray. Roast beets until fork tender, about 35 minutes. Remove from the oven and let cool. Meanwhile, combine remaining ingredients in a blender or food processor. Add beets once they are cool enough to handle. Blend on high, scraping down the sides on occasion, for about 5 minutes, until you obtain a creamy, smooth texture. Serve with crudites, crackers or bread. 86 The Bend

Baked Brie Serves 6 appetizer portions

PREP TIME: 3 minutes COOK TIME: 15 minutes INGREDIENTS:

1 wheel of brie 2 tbsp honey or preserves 2 sprigs of thyme, rosemary or basil 1/4 cup chopped roasted nuts

DIRECTIONS:

Preheat oven to 350. Place brie wheel in an oven-safe pan lined with parchment paper. Bake for 15 minutes, until brie is very soft. Transfer brie to your charcuterie board and top with honey or sweet or savory preserves, fresh herbs and nuts of your choice.

othing makes summer in the Coastal Bend better than a frozen cocktail — or four. The Waterline, the downstairs patio bar at Doc’s Seafood & Steaks, finds that frozen flights are the perfect way to cool down. The idea of a frozen flight, introduced by bartender Desiree Gonzales, was inspired by the on-the-rocks margarita flights she encountered during her summer travels, and while we love a good rocks drink, a frozen flurry version suits South Texas summers way better. It started with the frozen margaritas: an inviting set of flavors such as mango, strawberry, cucumber and OG lime all lined up, accessorized generously with chamoy and tajin. When the frozen marg flight took off, the bartenders at Waterline figured it’d be a good idea to invite the rest of their frozen best on board. The frozen flight features the best of rum, dark rum and tequila in a colorful quad: strawberry daiquiri, piña colada, house margarita and the classic Miami vice. Through seasonal flavors and bartender picks, the choices switch up, and the selections are endless. Waterfront bartender Parker Shelley gives a little helpful tip to his patrons: Out on the water where Waterline has its huge open patio, the sun beats down on sunscreened skin and drinks, and the latter get a little melty. So, he suggests sharing the flights with friends to find your favorite (and before they melt). 90 The Bend

“When you’re not quite sure what you want, if two of you split this, you may both find one that you want to get fullsized,” he said with a laugh. “You may both find a favorite, and they may be different, or the same. That’s part of the fun … tasting different things and finding what you like.” “Down here, it’s all about making everything refreshing, crisp and cold — it’s very hot out here in the summer,” said Waterline manager Nicholas Parra as we chatted out on the sunlit patio bar. “So when people come out here, they want something that’s chilled and going to make them feel cool and refreshed.” The beach bar keeps the tone fruity and tropical, with fresh purees on deck for whatever your flight selection might be. Mediterranean-inspired cuisine Inspired by the vibes of AMST, Elizabeth’s at the Museum was conceptualized according to its location, both at the museum and perched on the edge of the bayfront with those spectacular views. Elizabeth’s is a surprising departure from expectations. Both Water Street Restaurants and AMST have long-standing histories in the community, so to take on the task of bringing something new meant putting the best cutting-edge culinary team together to curate a dynamite menu. With a regional Mediterranean flair, and the desire to invoke a shared eating experience, Elizabeth’s menu is full of tapas-style nosh that is rooted in high-quality, fresh ingredients, and honoring those ingredients to let them shine. On the menu are two flatbread dishes that are simply luscious. The Casablanca is adorned with a white sauce, ricotta, caramelized onions, garlic, fig jam and basil. While it is enough to share, be warned that you won’t feel so inclined to do so. In which case, an order of the Blistered Shishito Peppers with whipped feta and pimento aioli will be the next star to steal the show. Keeping focus on the experience they are striving to offer diners – one that is specially curated for people and meant to be casual, educational, and enjoyable – is the secret ingredient to this successful new venture.

Chef Hernandez Water Street Restaurants

Jeannette Hernandez, a native of Corpus Christi, grew up around the kitchen with her mom baking fresh breads and great desserts. She began her professional culinary journey by attending the Le Cordon Bleu College of Culinary Arts in Austin, Tx. Being exposed to all aspects of being a chef, she chose to pursue the path of Executive Pastry Chef. She started out creating wedding cakes on request until she had the opportunity to develop her full pastry culinary skills at the Southerleigh Fine Food and Brewery in San Antonio where she helped to create a number of original desserts. After moving back to Corpus Christi to be close to family she began working as a baker for Sugarbaker’s and then Hester’s Café all the while learning how to effectively run a high production environment. After taking time off to take care of her newborn daughter she rekindled her baking passion by creating the on-line fine pastry bakery, Sucré. Word spread fast and her reputation for excellent pastries spread throughout the area. She became quickly recognized for her unique macaron creations and fine pastry’s and affectionally known as the Queen of Macarons. Joining the team at Waterstreet was a great opportunity to work with a team and ownership committed to excellence. Her third week on the job was creating and organizing all the desserts for the Artball event at the Art Museum of South Texas for over 600 people. Her passion for excellence and strong work ethic inspires those that work with her. When she is not busy making fine pastries, she is spending time with her two children, Ari and Isla, enjoying the outdoors, personal fitness and her second passion of playing the piano.

Chef Edwards

Water Street Oyster Bar Jeremy Edwards was born in Fresno, California and moved to Tucson, Arizona at the age of 15 where his uncle was getting ready to open his own restaurant. His first job was a dishwasher and prep cook at the family business and he has stayed in the hospitality industry ever since. He has worked with some great chefs and companies in Tucson such as Fox Restaurant Concepts and the Emmer & Rye Restaurant Group. In the past decade he has worked at the prestigious resort spas Miraval and Canyon Ranch. Edwards came on board to work with Water Street after a brief stint with Republic Of Texas in the Omni. He chose Water Street because he felt they had a very close bond with the community and are a great name to work with in the coastal bend. “All of the upcoming projects really excited me, as well as the startup of our own oyster farm!” Jeremy moved to Corpus Christi in August of 2021. He enjoys walks down Ocean Drive and hosting barbecues on the beach. He has a miniature dachshund named Layla that he spends all of his free time with.

Chops & Eggs • Ginger Cafe Chef Jordan and his brother Ramzi brought to Corpus Christi the iconic restaurants Ginger Cafe, the Mediterranean global food hub, and Chops and Eggs, which serves modern American food with a twist of country cooking. “I want to make sure everyone is fed good food from 7 AM ’til 11 PM all day, with a choice of breakfast, lunch and dinner,” said Chef Jordan. Chef Sprague

Omni Corpus Christi Hotel Dean C. Sprague CEC, WMCS began his culinary journey 33 years ago in a Fort Worth steakhouse as a dishwasher, and has never looked back. After quickly moving to the hot line, he found his passion in the creative chaos of the kitchen. While attending culinary school, Chef Sprague did his apprenticeship at the Marriott Solana Hotel in Southlake, Texas, as well as his pastry apprenticeship at the Four Seasons Resort and Spa in Las Colinas. Chef Sprague was voted the 1996 Best Young Chef of the Year by the Dallas chapter of the Texas Chefs Association, and was the team captain for the 1995 Dallas Culinary Team. He has received several awards in national hot and cold food competitions, including three gold and six silver medals. Additional experience includes continuing education classes at both the Hyde Park and Napa Valley campuses of the Culinary Institute of America. Chef Sprague advanced his culinary career as a Chef in many of the finest ski resorts in Colorado, including Vail Mountain and Telluride. Chef Rosa

Republic of Texas Bar & Grill Executive Chef Daniel Rosa owes his love of cooking to his mother’s mastery of transforming fresh ingredients into incredible feasts for family and friends. Living in the tiny haven of Ponce, Puerto Rico, he learned to take advantage of rich natural foods. His mother’s excellent cooking skills came naturally and her creations sprung from “love of family, love of the land and love of the moment.” His family moved to New York City when Rosa was 12, and he took on odd jobs at a friend’s small restaurant. In high school, he worked at a small French bistro, owned by a well-respected chef, where Rosa nurtured his esteem for traditional French. Seeing how great chefs brought joy to their guests, Rosa decided to enroll in New York Restaurant School when he was 18 years old. Following graduation, he took an internship with Chef John Hill, a former White House Chef in the Reagan administration, at the Wigwam, a Five Star-Five Diamond Resort in Litchfield Park, Arizona. He then moved on to the Ritz Carlton, where he met Julia Childs, Jacques Pepin and enjoyed cooking for celebrities including pop music and sports stars as he rose through the ranks. He later took a position at Wrights restaurant, one of Phoenix’s fine dining jewels, located at the historic Biltmore Resort and Spa.

Recruited to the position of Sous Chef by up-and-coming Chef Michael Hoobler at the Boulders Resort in Carefree, Arizona, Rosa made a huge leap in developing his skills as a manager and culinarian, cooking for resort guests, charities and at the James Beard House in New York City. On a brief Colorado vacation, he discovered Telluride and made a move. Rosa took the Chef de Cuisine position at the Peaks Resort, where he opened Navarra, a small Spanish tapas bistro. In September 2005, Rosa spent three years as the Executive Chef position at 9545 Restaurant and Bar before moving back east to Philadelphia. While in Philadelphia, he worked under the renowned Chef George Perrier. Rosa assisted Chef Perrier in opening his flagship restaurant, Table 31, in the heart of Philadelphia. After one year in Philadelphia, and three years back in Colorado, the opportunity presented itself with the prestigious Omni Hotels & Resorts. Chef Rosa moved to sunny Corpus Christi, where we find him at the helm of The Republic Of Texas Bar and Grill, offering world-class cuisine.

Chef Chapa Cruzy’s

Born and raised in Corpus Christi, Chef Javier Chapa has made quite a splash in his hometown. After traveling the country working in various kitchens offering diverse cuisines, this Le Cordon Bleu-trained Chef is serving up tacos not typically seen on the third coast. He credits his unique twist on tacos to his previous employment at P.F. Changs, Bone Daddy’s House of Smoke, Costa Sur, Island Time Sushi Bar and Waves Resort — to name a few. The moment you take a bite into one of these tacos, you’re inundated with flavors pulled from his past experiences. E

veryone knows the ambience of a restaurant is an important part of the dining experience. When guests enter Celsita’s restaurant, they’re greeted by a family who enjoys sharing their culture and love of food with each delicious item on the menu. From the owner, Celsa, making tortillas as she greets guests to welcoming decor and vibrant music playing from the speakers, the ambience conjures up feelings of family coming together to enjoy food, laughter and great company. The magic began when her grandfather taught an eager 7-year-old Celsa to make an over-easy egg. Growing up with a large family meant numerous gettogethers, and the more time she spent cooking for her family, the more Celsa became comfortable in the kitchen and developed a love for the craft. “All my life, I’ve been told that people deserve to taste my cooking, and that I should open a restaurant,” 104 The Bend

said Celsa. Even though the encouragement poured in, having worked as a server at the age of 16 allowed her to see that opening a restaurant was much more than just serving good food, and she wasn’t sure this was in the cards for her. When an opportunity presented itself, she still had her doubts, but with the support of her husband, she found herself getting ready to open the doors to Celsita’s, one year later. Her sisters, Janette and Janel, along with Celsa’s children and friends, became the powerhouses behind creating this unique gem on The Island. The original menu was retooled to add Tex-Mex staples such as chicken fajitas and carne guisada. Eventually, the more traditional dishes began to gain popularity, allowing for the reintroduction of dishes like mole, puerco verde, fideo and tostadas.

The colorful décor includes items purchased in Monterrey, Mexico and roosters handed down by Celsa's grandmother. Celsa also used her artistic talents to handmake each table with tiles that she bought, glued, grouted, sealed and sanded.


Celsa and Janette collaborate to ensure the best items are on the menu, which changes daily and is decided upon first thing in the morning. “When an item sells out for the day, that’s it until the next time we put it on the menu,” said Celsa. This technique is popular with locals who dine in regularly — not only for the savory delicacies, but also the desserts like the galletas de polvorones and the pineapple rum cupcakes. Celsa proudly looks toward the photo of her grandfather on the wall, and reflects on his influence: “He was my inspiration, and I can now do what I love thanks to everything he taught me and the support I’ve received from the community.” Now, that photo overlooking the kitchen allows her grandfather to watch as his family carries on one of their favorite traditions — cooking with love.

Prohibition created a network of enterprising residents who produced and sold bootleg liquor. With its repeal came strict liquor laws and taxes, and new business ideas for the bootleggers. The regulations led to a rise in private clubs, where owners could screen members before accepting their payment to join, thereby avoiding state-level liquor laws and keeping police and others who could expose the business’ activities away. The Dragon Grill boasted ornate furnishings and décor, with space for dancing near the orchestra stand. The restaurant advertised that it was “Famous for Fine Foods” and flew in steaks and lobster from across the country,

along with hiring the best chefs in town. Meals could be enjoyed by members in the first floor’s Zodiac Room. The formal attire worn by guests was appropriate for dancing to the famous orchestras brought in by owner “Doc” Mason, a veteran bootlegger. Access to the third floor Jalna Room was highly controlled, allowing all signs of gambling to be hidden away at a moment’s notice with trap doors and secret passages. The facility operated for years, offering the finest foods, drinks and gambling without any legal troubles, until a policeman posed as a guest to gain entrance. He threw his badge on the table instead of chips one night in 1953, spelling an end to Doc Mason’s Dragon Grill.
