WELL GROUNDED

Santa Barbara isn’t shy when it comes to showing off coffee blends by KARA THOMPSON Photographs by SILAS FALLSTICH

26 | MAY/JUNE 2021

F

or many, coffee is a ritual. The sound of a fresh cup brewing, the smell of a smooth roast, that warm first sip—coffee is less of a drink and more so something to look forward to. It signals the start of many of our days, setting the mood for what’s to come. Equally enticing in the afternoon, it’s the perfect pick me up after hours of slumping over a desk. Plus, it’s always there to offer a boost after a sleepless night. All this is to say, coffee is a love language that I don’t ever want to quit. Luckily, Santa Barbara is no stranger to charming coffee shops, flavorful roasts, and unique blends. Set out on a mission to source the best in town, I tried a handful of drinks from three local favorites. Here’s what stood out.

CAJE A visit to Caje’s Arlington Street location is like taking a vacation (without needing to pack any bags). The open concept courtyard is decorated with resort-like furniture, perfectly potted plants, and upscale chandeliers. Passionate staff members greet you with a smile and offer up plenty of recommendations while customers work on their laptops and catch up with friends. My impression of Caje goes beyond the relaxing atmosphere—the coffee cocktails are next-level when it comes to presentation and taste. My favorites: Jupiter’s Forest and Bella Rose. Jupiter’s Forest starts as an iced oat latte before being transformed into a coffee that tastes (and looks) more like a craft cocktail. Juniper berries, sage syrup, and grapefruit zest are the key ingredients that add earthy and energizing flavors to the drink. And because Caje doesn’t skip out on the details, a fresh orchid and dusting of edible gold top off the drink. The Bella Rose is a matcha lover’s dream. An iced matcha latte meets fresh pomegranate, strawberries, beet root powder, and notes of elderflower and rose. It tastes both sweet and savory and I relish in every last sip. The Instagram-worthy concoction is served with dried rose petals that sweep the side of the glass and a fresh strawberry that hugs the rim. I was dazzled by every detail at Caje. Next time, I plan to order the Burnout, a breve latte with bourbon pecan syrup, black lava salt, ginger, and blackberry.

DUNE COFFEE ROASTERS In a drink rut? Head to Dune Coffee Roasters, which offers one of the most extensive menus in SB. Some menu items include Nitro Cold Brew, Matcha Lemonade, and a Golden Latte. To keep things fresh, the baristas create an off-menu drink that consistently changes. Ask someone on staff what the “fancy drink” is and you’re sure to find yourself pleasantly surprised. Some “fancy drinks” from the past include an Orange Cardamom Latte and a Sprold Fashioned, a delicious combo of espresso and an old fashioned. With such a large variety of offerings, I knew I’d have to taste test a handful of drinks in order to properly experience Dune. First up was the Matcha Lemonade, one of the shop’s most popular beverages. They make the lemonade inhouse and it shows. Each sip was just the right amount of tart and refreshing. Order this on a warm summer day when you’re looking for a steady dose of caffeine. Next up was the Iced Tres Leches, a mouthwatering drink that’s named after Tres Leches cake. Not one who enjoys overly sweet drinks, I was pleased that although the coffee mimicked a dessert, it wasn’t too rich. The candy like confection would pair perfectly with a fresh croissant or buttered bagel. I wrapped up my stop at Dune with an Iced Chai Latte, a coffee-free menu option. The tea flaunted an inviting cinnamon and cardamom flavor that lingered even after my drink was gone. Traditionally, chai infused lattes signal the beginning of autumn, but when ordered iced, they make for savory summer drinks. Cinnamon is sprinkled on top when it’s ordered hot, but even with that taken into account, the latte is more spicy than it is sweet.

28 | MAY/JUNE 2021

LOW PIGEON The first thing I noticed upon arrival at Low Pigeon was the line outside the shop. Some might roll their eyes at the thought of having to wait, but any coffee connoisseur knows that’s a sign of a good ground. I quickly found myself at the counter and opted for a cappuccino and vanilla latte—two classics that can either be so good or so bland. Low Pigeon impressed me beyond belief after I downed both drinks. The Cappuccino was perhaps the best I’ve had. The taste was smooth and nutty, and the barista included the ideal amount of foam. Order it with a pump or two of vanilla to add some sweetness. After I finished off the Cappuccino, I dove into my Vanilla Latte. Thanks to just the right amount of housemade vanilla syrup, the bold flavors of the grind were left as the star of the show. Low Pigeon proved to me that sometimes simple is best. If a shop can brew a delicious cappuccino and a well-balanced latte, then you know their beans are good. When my road test on local grounds came to an end, I was left feeling both caffeinated and fulfilled by all that the Santa Barbara coffee scene has to offer. From fair-trade drip to frothy lattes, there’s an impressive variety of roasts for every type of java enthusiast. *

T

he scent of California red oak and floral notes permeate a garden oasis, adorned with vines and string lights. Dusk settles over Barbareño Restaurant as I sip on an apple jasmine hard kombucha and decide on my evening’s tastings. Each dish on the menu is astoundingly unique, as they are known for playing with and fusing flavors. I opt for the Market Crudo to start; a visually-stunning rainbow of bluefin tuna, avocado, watermelon radish, and garlic foam, finished with a garnish of sprouts and their signature yellow flower petal. A green gazpacho dotted with chili oil is delicately poured over the crudo adding a refreshing touch. I disassemble the perfectly layered pieces and go in for a bite, resulting in an explosion of flavor. The buttery tuna combined with the tang and spice of the gazpacho, along with the fixings, makes for an outstanding starter.

Market Crudo

Next, two halves of an avocado are placed before me, filled with ponzu, dusted with shaved horseradish and avocado salt, and smeared with a yuzu mousse. Truthfully, I did not know what to expect from the Grilled Avocado, but it did not disappoint. The charring of red oak paired with the citrus and salty elements of yuzu and ponzu, respectively, make for an exceptional bite evoking East Asian influence. The house-made sourdough fresh out of the oven immediately follows, to which my server playfully comments, “In California, you can’t eat avocado without toast.” I scrape the crusty bread through the yuzu and ponzu collecting every last drop. I venture onto the Acorn Tagliatelle, a homage to the culinary significance of acorns, an important staple in the native Chumash diet. The pasta is a classic tagliatelle with a twist, using ground acorn producing a nutty flavor and rich brown color. The dish incorporates wild mushrooms, charred onions and asparagus, and herbs, brought together by a charred oak broth. Chef Julian Martinez has achieved the perfect balance of a dish that is hearty and abundant while maintaining a light freshness. My plates are swept away and traded for the finale of the evening: the Baked California, a striking play on a baked Alaska. The deviation? The torched

“Barbareño’s thoughtful attention to detail, in flavor and in presentation, truly makes for an unforgettable dining experience.” meringue is infused with OG Kush terpenes, making for an extra relaxing end to my meal. A tower of hop cake, mango and basil semifreddo, and meringue sit on a bed of citrus, sprinkled with candied lavender pine nuts. The seeds are a floral dream, adding a juxtaposing crunch to the creamy baked dessert. Before the semifreddo has a chance to melt, the dish is devoured. I sip on my post-dinner Vermouth, and relish in the soothing atmosphere of the patio. Barbareño’s thoughtful attention to detail, in flavor and in presentation, truly makes for an unforgettable dining experience. They redefine California fare with exceptional flare, all the while incorporating local ingredients and traditional techniques. *

word aperitivo is relative to the American happy hour but, in Italy, means much more. Aperitivo is a routine, the place you always go for a nightcap with friends after finishing a long day at work. The aperitivo is the first drink of the evening, the one that marks the end of the day yet reminds you the night is still young. Luckily for those of us unable to catch a flight to Italy this spring, Aperitivo is Santa Barbara’s newest spot for an authentic Italian dining experience. Located on Haley Street, Aperitivo’s patio views are splendid, extending past the terracotta tile buildings of State Street and into the hills of the Santa Ynez mountains. This is the quaint Italian bistro of your European daydreams where friends you treat to a few aperitifs will ask, how did you find this place?

Aperitivo Spritz

Andrea Girardello, co-owner of Aperitivo, takes time to chat with each customer, creating a welcoming, homely atmosphere like you’ve just arrived at your friend’s dinner table for good food, wine, and conversation. I am greeted by Andrea, a Milan native, who whisks me through the double doors to meet his counterpart, SB local Chef Brian Dodero. The space is fully integrative, with an open floor plan that exposes the prep kitchen and makes the food the focal point. I eagerly peek over to catch a behind-the-scenes glimpse of pasta, seafood, and fresh herbs. The cooks behind the counter are bustling yet still smiling all the same, reminding me of the wonderful times my Italian family has spent together in the kitchen. I leave it to Chef Brian to curate my dinner, and I take a seat at my table.

While in the heart of Santa Barbara, I sip on the Santa Barbara Spritzer, a tart blend of T.W. Hollister & Co. Oso de Oro Vermouth, and Faretti Orange Liqueur that’s topped with prosecco. It’s a modern take on the Aperol Spritz, yet with the light and bubbly flavors of an Italian Negroni Sbagliato—a drink I’m sure my Italian mother would approve of. I can smell the chili oil as Aperitivo’s brand new appetizer is placed in front of me, a dish to transition the menu from winter to spring. So new in fact, that I am the first to try it. I spoon tuna tartare with a pea mousse onto homemade beetroot chips and my tastebuds are met with bright, bold flavors as if the fish were just caught off the shores of Sicily. The translucent, fishbowl style dish sits atop a white marble base, perfectly nestling with the red tuna

“Aperitivo has made it a part of their mission to source locally and collaborate with other small businesses in the area.” and green mousse to create the tri-colored flag of Italy. As I devour my last bite, octopus with roasted duck fat potatoes makes a daring appearance and I welcome it with wide eyes. My grandfather would always make octopus when I was growing up, in stews, sauteed, or grilled. It’s the most adventurous dish of the night; I am delighted by the soft, buttery texture of the octopus and the potatoes are golden and roasted to perfection. As a coastal town, Santa Barbara fisheries sell some of the best seafood in the world, making it the perfect location to recreate the most traditional of Italian dishes with Southern California flavors, this being one of them. The sun begins to set and I am in the mood for something comforting. As if reading my mind, Chef Brian brings out the porquette—tender, shaved pork on a thick slice of toasted bruschetta topped with heaps of arugula and parmesan. This is my kind of open-faced sandwich. Traditional

38 | MAY/JUNE 2021

porchetta is made with thick cuts of pork roast, usually sold as a deli sandwich in many northern Italian markets. I’d consider Aperitivo’s dish an upgraded version. The pork is savory and fatty and the bruschetta, made fresh by Aperitivo’s neighbor, Oat Bakery, solely for the restaurant, soaks up all the oils from the pork for a soft crunch. The restaurant business is a family affair and, in working with Oat Bakery, Aperitivo has made it a part of their mission to source locally and collaborate with other small businesses in the area. I am happy I wore loose fitting pants by the time fresh squid ink pasta (made daily by Chef Brian himself) with roasted garlic and parmesan arrives at the table. The black spirals flecked with red chili flakes have a poignant tang of sea saltiness that ties together the entire meal. It definitely passes my perfect pasta test—homemade, topped with Parmigiano Reggiano, and just enough spice. As Andrea pours me a glass of Tuscan Tenuta Meraviglia wine to finish off the night, he shares the story of Aperitivo’s conception. Brian cooks, cultivating new menus that reflect the nuanced cuisines of different Italian regions, and Andrea takes to hand-selecting quality, organic wines imported from small, sustainable Italian winemakers. Andrea and Brian coincidentally had their first meeting to discuss the opening of a restaurant the same day that this spot became available for rent. Some would say it was luck, Italians would say, “Il destino da le carte, ma chi le deve giocare siamo noi”—fate deals the cards, but we have to play them. Before long, a delicate espresso cup is placed before me. Affogato, a Milanese specialty. The blend of hazelnut ice cream topped with crushed hazelnuts and espresso is rich and warm, an homage to Andrea’s hometown. I can’t help but finish the entire thing, blissfully sipping the last few bittersweet drops as the coastal chill sets in for the evening. With a belly full of hearty food and wine, it is the perfect pick-me-up for my walk home. I couldn't leave without snagging a bottle of wine and, with it in hand, I wave goodbye to Andrea and Brian and step onto the street, convinced I am on the cobblestone pavement of some ancient alleyway in Italy. *

THIS REFRESHING SALAD COMBINES RAW ASPARAGUS RIBBONS, RADISH, RED ONION, TOASTED WALNUTS, AND A HONEY-LEMON VINAIGRETTE FOR THE ULTIMATE SPRING DISH

Recipe & Photograph by RILEY YAHR Mixed & Measured | mixedandmeasured.com

Shaved Asparagus Salad Serves 4

INGREDIENTS All ingredients available at Bristol Farms

1 bunch asparagus 1/2 teaspoon lemon zest 2 tablespoons lemon juice 1 tablespoon chopped Italian parsley 2 teaspoons white wine vinegar 2 tablespoons walnut oil 1/2 teaspoon honey 1/4 teaspoon salt 1/4 teaspoon pepper 4 thinly sliced radishes 1/3 cup thinly sliced red onion 1/3 cup chopped walnuts, lightly toasted 1/2 cup fresh shaved parmesan cheese

DIRECTIONS Trim off an inch of the rough ends of the asparagus. Using a vegetable peeler, shave the asparagus into long ribbons. Line a large bowl with a clean dishtowel and add the shaved asparagus. This helps absorb excess liquid. In a small bowl, whisk together the lemon zest, lemon juice, parsley, vinegar, oil, honey, salt, and pepper. Set aside. Remove the towel from the shaved asparagus and blot dry. Add the sliced radish, onion, walnuts, parmesan, and dressing. Toss to coat and enjoy! *

MEET AN ARTIST AND GALLERIST BRINGING GLOBAL INFLUENCE TO OUR LOCAL ART SCENE by EMMA MCDONNELL

BENJAMIN ANDERSON Benjamin Anderson, Carpinteria resident and artist, has called the Santa Barbara area home practically his whole life. “I love Santa Barbara’s European vibe. It has a cool energy that’s more laid back than a big city and it has a lot of nomads from other places who come to live here,” he expresses. The California contemporary realist artist has traveled the world, with stints in San Francisco, Los Angeles, and Italy, but Carpinteria is home. Heavily inspired by the Bay Area’s figurative art scene during his time at San Francisco’s Academy of Art University, Anderson found his own way of abstraction through water, something predominant in his California lifestyle. Best known for his paintings of objects and swimmers abstracted in water, Anderson’s work is alluring. Whether it be cars, guitars, or airplanes, Anderson uses water as a means to submerge objects in a way that is equal parts mystifying and compelling: “I started to realize the significance of not only the pool lifestyle but also dropping objects in that weren’t supposed to be in water.” The heavy objects juxtaposed with the fluidity of the water creates a captivating contrast. In this way, Anderson’s abstraction is highly personal, stemming from his own lifestyle with a conceptual twist. Anderson’s work has been showcased from coast to coast; the biggest highlight to date being a solo show at Blank Space Gallery in New York City. “Those big moments…you know it’s not the sales side that’s as important as achieving some artistic goal for me personally,” he explains.

CALDWELL SNYDER Lunch at the Honor Bar, an empty space, and Oliver Caldwell. What do these things have in common? Caldwell Snyder Gallery. Sometimes the best things happen by chance and serendipity played a huge role in the opening of Caldwell Snyder Gallery in Montecito: “I’m sitting at the Honor Bar and I’m looking across the street and there was this store that was closed and we thought let’s take a shot at this and open that up,” shares Oliver Caldwell. For the past 40 years, Oliver Caldwell and Susan Snyder have been a dynamic business duo; a rare occurrence, as Caldwell explains it’s unusual to be partners in the art business and survive for this long. What made it possible? “We share a common interest of caring for each other, caring for the staff, caring for the artists, caring for the clients. We both have an immense appreciation for beautiful things and the highest aesthetic quality.” In addition to their location in Montecito, Caldwell Snyder boasts two Northern California galleries as well as an extensive roster of staff, clients, and artists that have been with them for twenty to thirty years. With such little turnover, one can establish deep roots in the business community. It’s this personal approach that is embodied in the mindset of the art gallery: “We are one of the last of the handmade businesses in the world. Everything is either digital or machine made….There is no Zillow in the art world,” says Caldwell. With an appreciation for the ceremonial art process, Caldwell Snyder has stayed at the forefront of the art scene, representing artists from near and far: “My partner and I have a wide taste. I like all kinds of things. There is a common thread where I can sense the quality and I can sense the intent, the expression, the angst, the beauty.” Each connection and relationship the duo have with artists is an intimate and personal experience, as they travel to interact with the artists themselves, meet the families, and understand the artist’s inspiration and home. Caldwell Snyder is finding the next best thing for those with elegant and exquisite taste; bringing the pulse of the art world to Coast Village Road. *

A GUIDE TO GRACEFULLY FACING ADVERSITY

T

Adversity comes in many forms—from physical, mental, emotional, and social, to spiritual, or financial. Amidst these varied hardships, there is solace in the fact that no matter who you are or where you come from, we all fall on hard times at some point in our life. Whether small or big, looming or present, or some stressful combination of all, adversities tend to pile up until we feel overwhelmed and allow it to affect everyone.

he last year has been almost exclusively defined by adversity. Yet, can we thrive instead of survive amid a difficult or unpleasant situation? You may find comfort in knowing that, without a doubt, hardship can be spun into evolution in four practical, simple steps.

It is important to note that you could not possibly have become the person you are today if you did not have to contend with adversity on your way up. No matter how intelligent and careful you are, life will attempt to interrupt your natural path. It is only by facing these difficult situations that we are forced to grow into our strength and handle them. This becomes an opportunity to move toward greatness. Rarely do we step into our power through an easy life. We evolve predominantly when times are taxing. When considering your situation, it is essential that you mitigate your mindset. The starting point in dealing with any difficulty is to relax. Clear your mind. Get yourself into a calm enough headspace to control your emotions and senses, allowing you to become as objective as possible. Once you are able to step back and detach from the problem, you can clearly analyze your adversities as if they are affecting someone else.

STEP 1: DEFINE THE PROBLEM CLEARLY What exactly is the problem? What exactly are you worrying about? Write out the definition of your problem. Make sure that it's a single problem. If it's more than one issue, write out clear definitions of all the problems that together constitute what you are worrying about.

STEP 2: DETERMINE THE WORST POSSIBLE OUTCOME Ask, "What's the worst possible thing that can happen in this situation?" Be frank and honest with yourself. You might lose money, relationships, customers, or something else important to you. If everything fell apart, what is the worst thing that could occur?

STEP 3: RESOLVE TO ACCEPT THE WORST Having identified the worst possible outcome, you now can go through the mental exercise of accepting that it will happen, no matter what you do. The remarkable thing is that as soon as you stop resisting the worst possible outcome, you'll relax, your mind will clear, and your ability to deal with the situation will improve dramatically.

STEP 4: IMPROVE THE WORSTCASE SCENARIO Begin immediately to improve upon the worst possible scenario, which you are resigned to believe will happen. Throw all of your mental resources into the battle to minimize the problem or resolve the difficulty. Concentrate on the future. Try not to worry about what happened, why it happened, and who was responsible. Ponder only the question, "What do I do now?" How can you minimize the consequences? What's the first step you can take? And the second step? And the third step? And so on.

“It is only by facing these difficult situations that we are forced to grow into our strength and handle them. This becomes an opportunity to move toward greatness.”

A primary task in our existence is to gain dexterity in dealing with adversity. The most successful people on the planet are not people without life's problems. The difference is in your reaction to such issues. Successful people respond quickly and positively to their problems. They troubleshoot in advance; they anticipate conflict. When this is impossible, the four-step method resolves whatever difficulty one may encounter. With the above strategies, you may cease surviving these situations and instead begin thriving. Focus your thoughts on where you're going, not on where you've been. Making sure to keep your eyes on your goals, your head up, and your chin tilted upward toward the sunshine, realize this is just another opportunity to achieve greatness, which is what awaits you on the other side. *

daily defense by TAYLOR ROBERTS

A

s we return to a more social, public routine, immunity is at the forefront of everyone’s mind. To understand which practices keep a body’s defenses strong and how to strengthen our immune systems from a holistic perspective, I spoke with Dr. Sarah Murphy, an award-winning naturopathic doctor at Zuma Wellness.

COMPREHENDING OUR IMMUNE SYSTEM

The immune system is connected to every aspect of our body and health, considering it comprises all of the tissues, organs, and diverse immune cells. Responsible for both detecting and combating infections and toxic invaders, the goal is a fully optimized system. Dr. Murphy explains that the majority of people face a weakened system from continual exposure to stress, poor nutrition, and a lack of exercise and hence are at risk for more severe and elongated illness.

FOOD AS IMMUNITY FUEL

When our immune system is under attack, our body taps into energy and nutrient stores. Therefore, it is essential that we fuel and equip our bodies with the proper nutrients, such as vitamin C, zinc, glutathione, and bioflavonoids. Consider prioritizing citrus fruits, cruciferous vegetables, and healthy fats on your plate. Dr. Murphy especially preaches the value of ginger, which has been backed as an immunity booster

70 | MAY/JUNE 2021

by traditional medicine and modern research. Ginger’s antimicrobial benefits help combat infections, free radicals, and inflammation. In case you had forgotten, Dr. Murphy reminds us that “foods like sugar and junk food lower immunity.”

DAILY HABITS FOR DEFENSE

Stress has a detrimental effect on our immune system’s strength. Although easier said than done, Dr. Murphy’s #1 tip is to lower stress levels in an effort to improve your immunity from within. She shares, “Relaxation activities like meditation can help. Positive thinking also benefits the immune system, so practice gratitude.” Paired with proper sleep and exercise, cortisol levels and blood flow are often more effective than any prescription. For circulation, Dr. Murphy is a huge proponent of hydrotherapy, which involves alternating between hot and cold water baths. Used in naturopathic medicine for centuries, hydrotherapy has been studied and shown to boost immune system function because it enhances white blood cell counts and blood flow.

STOCKING YOUR SHELVES

Apart from stocking your pantry, stocking your shelves with natural, high-quality supplements can boost your immune system. Vitamin D, vitamin C, zinc, and quercetin have all been especially popular and for a good reason. It is important to remember that these vitamins and minerals are to supplement these nutrients, not replace a balanced, rich diet. When browsing the health-store aisles, select supplements that have been tested by a third-party company, rather than the FDA. Product quality and potency can be reviewed and indicated by a Certificate of Analysis (COA) label from these third-parties.

SCHEDULE A SERVICE

Outside of your own at-home routine, in-office services and treatments also have dramatic immune-boosting benefits. Dr. Murphy notes regenerative therapies like IV vitamin therapy, acupuncture, prolotherapy, plateletrich plasma (PRP), and hyperbaric oxygen as her best prescriptions for her patients. In addition to hydrotherapy, all of these treatments are offered at her office in Malibu.

IMMUNITY MYTH BUSTERS

Filtering through health myths is often the biggest obstacle to finding your ideal routine and peak well-being. Dr. Murphy acknowledges the rumor that hand sanitizer is superior to hand washing. While we are constantly surrounded by bottles of hand sanitizer on every store entrance and checkout counter, Dr. Murphy debunks this and emphasizes the value of properly washing your hands with soap. She shares, “If you have water and soap available, wash your hands. Hand sanitizer should only be used as a second choice when you can’t wash your hands.”

Dr. Murphy’s #1 tip is to lower stress levels in an effort to improve your immunity from within. PREVENTIVE AND PROACTIVE

Looking forward to our post-pandemic society, Dr. Murphy discusses what the new, enhanced focus on immunity could look like, “I’m hopeful that a positive outcome out of all of this is that people are motivated to take better care of themselves. Preventive and proactive health measures such as healthy nutrition are key. Our nation’s most common chronic illnesses would be drastically lowered if we chose to improve our society’s lifestyle standards. Our population could be far healthier than we are currently. This would have a multitude of positive benefits—not only reducing the severity of pandemics, but also lowering healthcare costs, reducing sick leaves in the workforce, and creating a culture of people that feel overall better and happier.” While there are endless ways to “be healthy,” fortifying our immune system is truly the best benefactor of optimized health. Shortening and weakening an illness should be two of our main goals. Afterall, with our busy schedules and long bucket lists, there is no time to waste on not feeling our best. *

lot of people look for a quick fix when it comes to health, and these days it seems like there’s a supplement for almost everything. Having sleep trouble? Here, take this concoction of herbs. Want to improve your hair and skin? Toss back some collagen. Many supplements on the market make big promises when it comes to results—better sleep, glowing skin, improved focus—but there’s no magic solution when it comes to health. Sometimes we need a little help from the right expert, like a functional medicine provider or nutritionist. So before you self-prescribe, here’s what you should know.

@ S B L I F E A N D S T Y L E | 73

“Some supplements may specifically focus on vitamins while others may be more geared towards minerals. You can find others that are a blend of both.”

VITAMINS VS MINERALS Let’s start with the basics. If you don’t know the difference between vitamins and minerals, then you certainly shouldn’t take supplements without consulting with a professional. Dr. Will Cole, a functional medicine expert, explains that vitamins are things like vitamin A, B, C, and D. Minerals are things like selenium, magnesium, iodine, and zinc. Supplements that you buy at the market can include both vitamins and minerals. “Essentially supplements are nutrients that are found in foods, but in a condensed formula. Some supplements may specifically focus on vitamins while others may be more geared towards minerals. You can find others that are a blend of both,” he says.

TALK TO YOUR DOCTOR While beneficial and oftentimes necessary for optimal health, many of us start on a supplement regimen without doing the proper leg work. News flash: taking supplements without guidance from a doctor can cause more harm than good. Some supplements can exacerbate existing symptoms, bring on new issues, or interact with medications you might already be taking.

74 | MAY/JUNE 2021

During your yearly physical, your doctor should order basic blood work that checks for deficiencies. The results from these labs will give you insight into what food or supplements are appropriate for you. If you’re having any symptoms or if your provider is worried you might have absorption issues, there are labs that specifically look at the gut microbiome and its ability to absorb and properly utilize nutrients.

KNOW WHAT YOU’RE TAKING Unfortunately, not all supplements are made equal. There are many on the market that have a lengthy list of filler ingredients like rice powder, gelatin, and corn syrup. These fillers can easily be avoided if you do some research or ask your doctor for some trusted brand recommendations. Dr. Cole notes that it’s important to read the instructions on supplement bottles and adhere to them, unless otherwise instructed by your doctor. “There are some nutrients that are more shelf stable (meaning they don’t need to be refrigerated) and there are other supplements that require temperature control to maintain their viability,” he explains. While many companies invest a lot of time and money into researching their products, they’ll only work to the best of their ability if they’re stored properly.

BE PATIENT WITH RESULTS Noticeable benefits from supplements don’t happen overnight. A minimum of three months is necessary for supplements to truly begin to work, but it could take as long as 6 to 12 months. “Have patience with your body as it begins to absorb and utilize these nutrients,” Dr. Cole says. It’s also important to remember that every person is different. What helped someone in your family might not be the best for you, even if you’re experiencing similar symptoms. Dr. Cole reminds his patients that eating a real, whole food diet with lots of vegetables and fruits goes a long way. “Also, consulting a functional medicine doctor to work specifically on what your body needs can take the pressure off of you having to figure out what you should be focusing on,” he explains. “Be kind and gracious to yourself when exploring the world of supplements and wanting to get more vitamins and nutrients in your diet.” *

AESTHETICS

ABOVE THE MASK

Although covered partially by a mask, there is still plenty of visible skin to show off. Aesthetician Dee Dee Serpa Wickman of Skin Prophecy in Montecito offers result-oriented aesthetic treatments and products to treat all skin types. While skin care is unique to everyone, Dee Dee recommends five key steps to optimized skin health and appearance:

1.

Try to let go of the stress in your life.

LOCAL TREATMENTS AND PRODUCTS TO ELEVATE YOUR BEAUTY REGIME

2.

Drink your water. To calculate how many ounces of water you should drink everyday: divide your body weight in half.

hile festive gatherings and exotic travels have been sparse the past year, it has allowed ample time to explore D.I.Y. self-care and beauty trends. Face masks, while essential for our health, have shifted our focus to beauty abovethe-mask. As salons and spas have safely reopened and social events are on the horizon, I asked local beauty experts to weigh in on the latest and most relevant treatments.

3.

Get your beauty sleep. Yes, this can make all the difference!

4.

Protect your skin by wearing a physical sunblock, which is important for both short and long-term skin health.

SKIN

Dee Dee advises, “You need to wear a new mask each day, and if you’re wearing a cloth mask, you need to wash it regularly using a chemicalfree/dye-free laundry detergent (and skip the dryer sheets).” In addition to our at-home routines, Dee Dee emphasizes the value of professional treatments. Skin Prophecy has specific maskne facials to keep the complexion clean and smooth. Although our skin care routine has new target areas, it is as important as ever.

“90% of our lifestyle affects our skin. It is the largest organ of the body and the last organ to receive anything.” - D E E D E E S E R PA WI C K M A N, S KI N P R O P H EC Y

NAILS

Our modern mask era is the perfect time to prioritize a quality manicure. Our nails take a beating from constant sanitizing and washing, so selecting nail products that keep them strong and long is essential. Heather Greene, owner of toxin-free nail salon Springtide in Santa Barbara, explains that interest in long-term beauty has increased in recent months, hence many people are moving away from dip manicures and towards non-toxic vegan gel. It is also the perfect time to incorporate nail art. Negative space nail art (the perfect mature design) has been a recent trend and will only continue as we enter the warmer, summer months.

BROWS

From thin to full and lined to natural, all eyes have been on our eyebrows in recent years. We now have a vast array of eyebrow gels and pencils, alongside numerous waxing, threading, and tinting services. Tanna Zahony, owner of Tanna Rae Beauty Lounge, says Yumi Brow Lamination, which naturally lifts and shapes brows, along with brow shaping, have been among her most frequent requests. “It’s all about the eyes and brows now that we are masked up all day,” she notes. For an at-home pickme-up, The Brow Mask from Sarah Maxwell Beauty is infused with collagen for restoring and strengthening, hyaluronic acid for deep hydration, and niacinamide for follicle elasticity. Simply, this brow mask is the ultimate product for noticeably fuller and lifted brows.

LASHES

Eyelashes have the power to change an entire face, which is why mascara seems to be the most popular makeup essential. Long, full lashes are everyone’s wish, but this does not mean you need lash perms or extensions. Sarah Maxwell, the face behind Sarah Maxwell Beauty, recently released a collection of products called the Daily Lash Ritual. The lineup includes Growth Serum, Keratin Conditioning Treatment, Sculpting Mascara, and Lid and Lash Cleanser, which target length, growth, thickness, and repair, and eliminate the harmful, toxic chemicals that are often used in cosmetics. It’s the perfect ensemble to help your eyes smile while our mouths are concealed under a face mask. After spending the last year in the privacy of our homes, we can only hope to debut into normal life with our best face forward. With the help of local beauty experts and clean products, our skin, nails, brows, and eyelashes will be ready to steal the show. *

H I ST O RY IN ANOTHER TIME…IN ISTANBUL

Shangri-La Bosphorus Istanbul

by ALEXANDRA SHAROVA

ince I can remember I’ve felt the undeniable allure of history calling me towards the places I learned about in books. This put Istanbul, Turkey—with its multi-cultural background that dates back to antiquity when the Greek, Roman, and finally Ottoman Empire ruled over the coveted port city—at the top of my travel list. Years in the making, and a 13-hour flight later, I finally arrive in the pan-continental city. Along with my brother, a fellow adventurer, we pull up to the Shangri-La Bosphorus Istanbul, and are stunned by the opulence of the lobby. It’s as though we’ve stepped into the Sultan’s quarters: pastels and rich jewel tones spill onto Parisian couches and ornate rugs, gilded details pop against a range of multi-colored marble, and a 22-foot tall crystal chandelier spanning two floors decorates a winding staircase. Our suite offers a more muted, yet no less plush, rendition. The centerpiece, however, is just outside the room. The view of the liveliest maritime gateways, the Bosphorus Strait bridge that both divides and unites Istanbul’s two continents, glistens before us.

78 | MAY/JUNE 2021

throughout the overwhelming space; bold reds, vibrant oranges, azure blues decorate traditional rugs that hang high above our heads. Although this destination is an absolute must, it’s not one to dally through, or be distracted in, as local pickpockets can spot scattered tourists from a mile away. After the sensory overload, and a failed attempt to track down a Daytona Rolex, it’s time to watch the city transform to dusk from the back of a speeding taxi.

In an effort to stop our impending jetlag in its tracks, we take the scenic (read: long) route towards the buzzing city center. Istanbul is busy; people walking in all directions, taxis honking, stray cats dodging bikes—it’s like New York in that way, it’s alive. We stop at a local café for some Turkish tea, which in spite of the warm weather is traditionally served hot. As I sip my aromatic beverage, the call to prayer echoes in harmony with the dancing sun as it coquettishly peeks through early-fall leaves. The prayer strikes a spiritual chord. It doesn’t matter that the words are foreign, and the religion is not my own. I feel it reverberating both within and around me, bouncing off the wall like a boomerang, returning home to the famed Hagia Sofia—the heart of the local mosques. Its power needs no translation.

A pandemic-prompted pivot brings our dining experience to the Shangri-La’s sweeping rooftop balcony. The moon, in all her bloated glory, is perched just above the strait—as though it was ordered in to illuminate the night. Honoring the city’s Asian heritage, Shang Palace offers authentic Cantonese dishes with a twist of contemporary presentation. We begin with a traditional Lo Hei Salmon—a Chinese New Year dish served for prosperity—digging into the thick sashimi and its multicolored surrounding garnishes that represent “life,” and all its flavors. In between attempts to capture the stunning view on film and sips of a refreshing cucumber gin and tonic, we munch on dim sum dumplings and savor a steamy hot and sour soup. Under normal circumstances the restaurant would be packed with international guests—businessmen wooing prospective clients, families enjoying a meal together, and couples soaking in the romantic ambiance. The relative quiet however is welcome after a day of exploring. My reflection is interrupted by the main course: Roasted Peking Duck served with pancakes—à la tacos—and Steamed Scallop Vermicelli. The Beijing-style pancake is light as air, allowing the crisped-skin duck to take center stage, while the smooth scallops leave us satiated beyond expectations. To us, dinner is not complete without dessert, and in sticking to their flawless presentation, the Shang Palace delivers mango-creamfilled choux pastry swans…and they are delectable. The time difference and whirlwind of a day awarded me an “early to bed, early to rise” mentality, which turns into enjoying the hotel’s well-equipped gym without a soul in sight. Breakfast is taken seriously here, with a buffet spread that covers the gamut

We make our way up a winding cobblestone road that becomes increasingly narrow and more crowded as we ascend. Chaos builds in tandem with the growing scent of spices, a sign that the Grand Bazaar is near. Built in 1461, it’s one of the largest and oldest markets in the world, with over 4,000 shops huddled in what appears to be a maze when you’re in the thick of it. The cacophony of the bazaar mingles with an even louder cocktail of aromas—cinnamon, cumin, cloves, and rosemary fill the hall. Vendors offer real and knock off designer bags, 3-carat diamonds, and every flavor of Turkish delight under the sun. Walking through the crowd we’re called into each passing stall, but what catches my eyes is the kaleidoscope of colors sprinkled

We arrive at the 70-acre property of the Topkapi Palace, otherwise known as Cannon Gate Palace. The grandiose complex was once the home of Ottoman sultans and boasts four courtyards, a Harem, an Imperial Council building, the Hagia Irene Church, and the Imperial Treasury. We follow our guide through various quarters, marveling at lavish gifts from foreign kingdoms and a golden Hammam that captures what it means to be palatial. She tells us about life in the palace and battles that ensued, as we pass intricate mosaics. Colors and patterns pop against each other, yet somehow bleed into a cohesive mural. It’s all so much, yet, it works.

of local and global favorites. We naturally go wild and order everything: fresh juice, two Turkish coffees each, Menemen (a skillet prepared spice-infused rendition of an omelet), a cheese and meat plate, assorted fruit and pastries, and of course, baklava. With enough caloric intake to hold an Olympian over, we join our guide Funda, in a luxe Mercedes minivan for a tour set up by the concierge. Since the city is steeped in history, a guide is a must in order to have a truly enriching experience. Since most of the main sites are conveniently within walking distance of one another, our driver leaves us around the corner from our first destination—the famed Hagia Sophia. The mosque (and museum) of today is the third iteration in the location, which was erected as a basilica for the Orthodox Christian Church in 532 AD. It stands like something out of The Hunger Games, an amalgamation of Byzantine and Ottoman styles with a colossal dome and four imposing minarets. Inside, sunlight pours in from 40 windows drenching golden mosaics like a divine intervention. On the way to our next destination, we walk through the Hippodrome of Constantinople, which served as a circus and sporting arena for Roman entertainment in 324 AD. Just when I think we’ve reached the peak of historical context, the Obelisk of Theodosius—an Egyptian gift from the 15thcentury BC— appears in striking glory.

The final stop is the renowned Blue Mosque, which looks like something from a magical land far, far away thanks to its unique color and six-minaret design. After removing our shoes and putting on provided headcovers, we walk in.

Stained glass windows and 20,000 handmade ceramic tiles adorn the space. Under the radiance of a low-hanging chandelier those who practice kneel, and I stand awestruck by the palpable energy. On our final morning we forgo breakfast, opting for high-tea in the grand lobby lounge. The colors and prints are loud, yet flawlessly pair with champagne. A five-level hot-air balloon creation is placed before us. Born out of the pandemic, when the hotel was closed, the culinary and visual masterpiece features six savory and five sweet food-art creations. Like everything at the Shangri-La Bosphorus, no detail is spared. From gold-leaf accents to the petite duck crepe, every bite rouses the senses. My sweet-tooth particularly falls for the Nutella Dream—a decadent macaron—and the Strawberry Chocolate Temptation, which has me rethinking leaving for the airport. High on saccharine treats and countless impressions from one of the richest trips of my life we set out for the airport—on to our next Turkish adventure. * shangri-la.com

A WEEKEND GETAWAY THAT WILL HAVE YOU ASKING FOR LATE CHECKOUT

T

NOBU RYOKAN MALIBU

by ELIZA KRPOYAN

he ocean air whirs through the car. My fingers poke out of the window, touching the cool temperature like a sort of greeting. It has become me and my husband’s ritual to slightly crack the car window open the moment we turn onto the PCH. Unconsciously, we both inhale a deep breath while filling our lungs with the salty breeze. Because of the chaos and uncertainty of the pandemic over the past year, moments of calm have been few and far between. In exploration of reconnection to our surroundings and ourselves, we packed a weekend bag and headed for Malibu.

82 | MAY/JUNE 2021

NOBU RYOKAN MALIBU thousands and thousands of lobster rolls every week. What started as Tompkins shucking oysters from an ice cart on wheels and a Coleman camping grill popped-up in brewery parking lots in 2017 has turned into a brick-and-mortar restaurant inside Malibu Village. On weekends, socially distanced lines can last up to two hours and the drive-thru can have cars backed up to the PCH. Tompkins offers a pro tip to order ahead of time on their online shop, broadstreetmalibu.com, so that you can skip the wait and head straight to the pick-up window. Here, seafood is sourced as locally as possible and specializes in Santa Barbara sea urchin, oysters from Morro Bay, Hope Ranch mussels, and Regiis Ova caviar. While everything on the menu is noteworthy, personal favorites include the famous lobster roll served warm with butter, panko crusted jumbo shrimp, fried clam strips, and French fries with Old Bay aioli. Around the corner from the restaurant is their sister shop Joules & Watts where you can enjoy coffee and gelato. The beans are single origin and roasted weekly in downtown LA. The gelato is Nancy’s Fancy by Nancy Silverton of Osteria Mozza. After a picturesque coastal drive, we arrive at the sanctuary known as Nobu Ryokan Malibu. Nestled on the sand adjacent to exclusive members-only, Soho House Malibu is a fivestar, unassuming Japanese hotel. Immediately, upon entering the secluded hideaway a wave of Zen comes over us. It is a combination of the sound of the waves crashing coupled with a waterfall fountain tucked inside the traditional Japanese garden. Once we settle in, we are greeted with mochi and green tea, which we enjoy on our private deck overlooking the ocean. Privacy is expected from founders including Nobu Matsuhisa and Robert DeNiro. But particularly during this time there is even more seclusion with practices including registered guests only allowed on-site. The few signs of a pandemic are a contactless temperature check upon arrival and a complimentary safety amenity kit, which includes two masks, two pairs of gloves, and hand sanitizer. Otherwise, during our stay we briefly forget the events of the past year. Nobu Ryokan Malibu is the beacon of a safe, Covid-friendly vacation destination that doesn’t compromise luxury.

After a decadent meal, we attempt to burn some of it off with shopping at newly opened Bleusalt in the Malibu Country Mart, which is just minutes away from the hotel (spoiler: we return to the Country Mart for dinner at Lucky’s Steakhouse). Bleusalt is a line of luxurious basics that are 100 percent sustainably made in the USA. The natural beauty of Malibu is what inspired founder Lyndie Benson to create Bleusalt. The brand not only has a minimal impact on the ocean and planet, but each piece is vegan, cruelty-free, and antimicrobial. BLEUSALT

Minimalism is the ultimate luxury. It’s the absence of the complicated. At Nobu Ryokan Malibu this sentiment is evident in the design. The intimate property features 16 rooms. Each is adorned in traditional Japanese design elements including tatami mats, shoji-style closets, artwork from Japan, and limestone walls. Simple teak paneling dresses the walls and soaring ceilings throughout. The bathroom is outfitted with a handcrafted Japanese-inspired teak soaking-tub. The hotel requires a two-night minimum stay ($2,000/night). For lunch, we take a short drive to Broad Street Oyster Company where founder Christopher Tompkins sells

LUCKY’S STEAKHOUSE enjoy in our room. The hotel staff can assist in ordering from local restaurants, offer a lift in the Range Rover house-car to nearby locations, or they can pick-up on your behalf altogether. Lucky’s Steakhouse in Malibu, which opened in December 2020, is the second outpost, the flagship is in Montecito. For the most part, the menu items reflect the Santa Barbara location with the exception of seasonal specials created by Lucky’s Malibu Executive Chef Michael Rosen. Seated at the custom dining table in our room with the glass wall of doors open and fireplace on, we indulge in the 8 oz. Lucky Burger, 6 oz. Sliced Filet Mignon Open NOBU MALIBU Celebrities including Partrick Dempsey, Cindy Crawford, and Rande Gerber are among many who wear the luxurious line. As well as model, Kaia Gerber who inspired the design of a namesake flared legging. A portion of The Kaia Pant sales is donated to A Sense of Home, helping LA based youth transition out of foster homes.

Loungewear shopping leads us to lounging back at Nobu Ryokan where we want to spend as much time as possible. While Lucky’s Steakhouse offers outdoor dining, and as of March both Santa Barbara and LA County allow 25 percent interior dining, we later opt to take away dinner from Lucky’s Steakhouse to BLISS BEACH

Faced Sandwich with mushroom sauce, Greek salad with feta, Prosciutto Di Parma with roasted peppers and arugula, and skinny onion rings. The next morning, we opt to maximize our time in the serene sanctuary and call for early in-room dining consisting of a caramelized banana French toast, and an acai yogurt bowl. My husband soaks up the sun and sounds of the ocean as our stay comes to an end. We check out and walk over to Nobu Malibu for lunch. Our personal favorites here include the Crispy Rice with Spicy Tuna, Nobu Style Tacos, and Rock Shrimp Tempura among the nigiri sushi and sashimi. The proximity of the restaurant to the hotel makes it feel as though we are staying at a resort. Photo by Valorie Darling

If, like us, after checking out and eating lunch, you’re not ready to leave Malibu, reserve Bliss Beach for a chic beach setup at Pointe Dume. Founded by Brian Jones, Bliss Beach offers luxury beach lounges. Jones used to live in Kenya where he ran a children's center and also fell in love with safari and luxury camping. He founded a travel company called Kin Travel to design safaris with a focus on pioneering conservation efforts and eventually designed a tented hotel. “When I wasn't out in the bush, I was at home on the beach in LA and started to build a mini-version of our Caribbean camp to popup on the sand to host friends and gather our travel community. Neighbors would pass by and ask if they could rent the gear and Bliss Beach bloomed naturally from there,” he shares.

For two to four people there is the Little Lounge option, which includes two day-beds, two hardwood chairs, an umbrella with a large rug, side table, and a cooler with ice blocks—all you’ve got to do is bring whatever you’d like to eat or drink. After a successful day on the sand, the Bliss Beach team arrives at the end of your reservation time to gather the gear. The whole trip lasted two days, and yet we felt as though we had been gone for two weeks. We lost track of time in a way that was different than throughout the pandemic. It was a moment for us to lose ourselves in relaxation as time and stress melted away. Our getaway in Malibu was a glimpse of what used to be, as well as a recharge of hope for what will be again. *

auténtico CONRAD PUNTA DE MITA FUSES TRADITION, RELAXATION AND ADVENTURE by OTTOCINA RYAN Photographs by BRONWYN KNIGHT

86 | MAY/JUNE 2021

“Want another beer?” Our guide Pedro

pulls a Pacifico out of his saddlebag and extends it to me as we trot along the beach. A dramatic golden sunset fills the sky as our paintbrush horses glide across the sand. The sun slides below the horizon and my friends and I dismount at the new Conrad Punta de Mita, where we checked in earlier today. The ocean breeze fades, palm trees settle and a balmy evening sets in. We gather for dinner at the resort’s beachfront restaurant, Mezquite; feet in the sand, hibiscus margaritas all around. We share a whole red snapper, a tomahawk steak, and for dessert, grilled plantain topped with sweetened condensed milk ice cream. We close the restaurant down with a bottle of Don Julio and charcoal vanilla popsicles. Ahh I’ve truly arrived in Mexico. I wake up to the sound of waves outside my room, soft morning light pours in from the balcony, casting a glow on the airy space. Pelicans skim the surface as I plunge into the ocean, revitalized after a late night. I dry off and traverse the lush property, weaving between cerulean pools, to arrive at the outdoor area of the Conrad SPA for a Deep Relax Therapy massage. Trellised tunnels open to nest-like treatment rooms, housing private showers and plunge pools…and home to one of the best massages I’ve ever had.

After oysters and tacos from poolside restaurant Paleta, my friends and I take a 15 minute Uber to Sayulita. The vibrancy of the flags strung overhead reverberates through the cobblestone streets. The surf town is lively and full of artisans selling jewelry, clothes and hand-painted cow skulls. Expats on work calls navigate expertly through vendors. The relaxed yet driven culture has us second-guessing whether the phone calls we overhear are discussing dollars or pesos. The week is filled with everything you’d want from a Mexico getaway—mezcal Negronis, nachos, long walks on an uncrowded beach, room serviced melt-in-your-mouth coconut French toast, sliding down the water slide at the kids’ pool, Zoom meetings with real life tropical backgrounds.

“Within an hour of its leaving the ocean, I’m scooping the flavorful fish onto a thick tortilla with salsa, beans, and grilled onion. This is how seafood is meant to be eaten.”

We begin our last day with a temazcal ritual at the spa. Heavy steam and aromatics of chamomile, lavender, and cedar fill the sweat lodge until I can’t decipher the person next to me. All I can see is a bright white light. All I can hear is the shaman’s chanting, singing and prayers. An hour and a half later, we emerge soaked in sweat and condensation, with a fresh sense of renewal—physically and mentally. From one ancient tradition to another, we return to Mezquite for lunch. Chef Palma meets fishermen at the beach to retrieve their fresh catch. As we eat ceviche, he grills the fish zarandeado style (an over500-year-old tradition of cooking over hot coals) and serves us the whole fish, open-faced. Within an hour of its leaving the ocean, I’m scooping the flavorful fish onto a thick tortilla with salsa, beans, and grilled onion. This is how seafood is meant to be eaten. The trip concludes with an intimate dinner in the Agave Studio, best described as a Mexican spirits library. Barrels and bottles of tequila, mezcal and the lesser-known agave spirits, raicilla and sotol, replace books. Our table is soon filled with octopus tacos, mahi mahi ceviche, rib eye with mole, and a guided tasting of agave-based spirits from all over Mexico. The finale of the tasting is Flor del Desierto sotol infused with snake venom. We cheers to a wonderful trip—the perfect balance of authentic tradition and familiar comforts. * conradpuntademita.com
