Macaron Magic Myles Fedun, Red Seal chef

The French macaron can be a showstopper when made correctly, but it can also be finicky and challenging to get just right. Join Chef Myles as he teaches you how to master this sweet meringue-based confection in under three hours. Learn a basic macaron recipe with some simple variations, the proper technique for making the perfect macaron (including how to make a delicious filling) and some simple dos and don’ts.

Myles Fedun is an Edmonton-raised chef who focuses on classic French techniques and owes his passion for cooking to his Ukrainian heritage. Currently working as a sous-chef at the Shaw Conference Centre, he obtained his Red Seal from NAIT in 2011. He entered the competitive world of cooking at a young age, winning him a full scholarship to post-secondary school. Since then, he has earned multiple gold medals with Culinary Team Alberta at the Culinary Olympics, Skills Canada, and was named the Canadian Culinary Federations Junior Chef of the Year in 2011 and Senior Chef of the Year in 2013.

Buying and cutting whole animals is a fantastic way to pay less for the best-quality meat in the province. But even if you don’t think you’ll ever buy a whole animal and cut it yourself, this meat-cutting demonstration is an excellent way to learn about where your food comes from and how best to prepare it. Who can take a Metro class? Adult continuing education classes are designed for adults age 18-years and over. With special permission, a 16- or 17-year old may be admitted to a class.

What is the refund policy? Full refunds will be issued for any cancelled classes and may take up to four weeks to process. You may withdraw or transfer at least two business days prior to the start date of your class for a full refund. If you cannot attend a class, a friend or family member can take your place. Classes are not cancelled due to severe weather.
