Hello readers Happy New Year to you all. I hope 2024 brings you all much joy and happiness. We have plans to extend the distribution this year and it starts this month with another 272 homes in the Dishley area. We are recruiting in that area so if you know someone who is lookig for a little bit of exercise and wants to earn while doing it, then please pass on my number. We like folks that live in the area they are delivering but it’s suitable for folk of all ages over 13. The recipe in this issue is for Lemon & Asparagus Risotto. Absolutely delicious. Asparagus & Lemon Risotto
225g Arborio rice 600g asparagus (fine cut spears) 1.2 litres vegetable stock 40g butter 4 shallots finely cut 6 tabs dry white wine leaves from a sprig of mint 2 tabs double cream finely grated zest of an unwaxed lemon 50g pecorino cheese - finely grated plus extra for serving
Method Make the stock by snapping the woody ends of the asparagus spears, cutting the ends in half and boil in a pan of water for 15 mins to extract the flavour. Once cooked, strain into a fresh pan and put on a low heat to keep hot. Discard the woody ends. Cut off the asparagus tips (about 2-3cms long) and put to one side. Then roughly cut the stalks and cook these in the pan of stock water (lightly salt) for 6 to 8 mins until tender.Remove with a slotted spoon into a colander to drain well. Once drained put into a food processor and blend to a smooth puree. Set aside. Using the same stock cook the asparagus tips for 2 to 3 mins. Remove with a slotted spoon and place in a colander and refresh with cold water. Dry well with kitchen roll. Heat the butter in a non stick med pan and add the shallots. Cook til soft but not browned. Add the rice and stir well until all the grains are coated in butter. Add the white wine and simmer gently, stirring until all the fluid has been absorbed. Slowly add the stock, bit by bit until it is all absorbed. Continue for about 20 mins, stirring frequently until the rice is tender and creamy. Finely chop the mint and add. Stir in the puree, cream, lemon zest and pecorino cheese. Add the asparagus tips saving a few to decorate the top. Sprinkle with the remaining pecorino. Serve immediately into warmed bowls.. Enjoy! 26
