Pound Cake with Pumpkin caramel

INGREDIENTS

• 1 box pound cake mix

• 1 box vanilla pudding

• 1/2 cup pumpkin puree

• 1 tsp cinnamon

• 8 oz cream cheese

• 1 cup sugar

• 1/4 cup water

• 1/2 cup heavy cream

• 2 tbs unsalted butter

• 1 tsp Mexican vanilla

DIRECTIONS

1-Empty pudding into large mixing bowl.

2-Empty box cake mix into bowl and following directions on the box, prepare cake and let cool.

3-Using a mixer, mix cream cheese, 1/4 cup powdered sugar and 1 tsp vanilla.

4-In a heavy-bottomed saucepan, add the granulated sugar and heavy cream. Stir over medium heat until caramel colored.

5-Add vanilla to caramel.

6-Stir in pumpkin puree, unsalted butter and vanilla.

7-Use half of the caramel between the layers.

8- Spread cream cheese on sides of cake.

9- Spread remaining pumpkin caramel on top. Decorate with chocolate shavings.

Tomato Basil Gazpacho

INGREDIENTS

• 6 ripe tomatoes, roughly chopped

• 1 cucumber, peeled and chopped

• 1 red bell pepper, chopped

• 1 small red onion, chopped

• 2 cloves garlic, minced

• 3 cups tomato juice

• 1/4 cup fresh basil leaves

• 1/4 cup red wine vinegar

• 1/4 cup extra-virgin olive oil

• Salt and pepper to taste

 Wash and chop the tomatoes, cucumber, red bell pepper, red onion and garlic. You can leave a small portion of each ingredient aside for garnish if desired.

 In a blender or food processor, combine the chopped vegetables and garlic. Blend until the mixture becomes a chunky puree.

 Pour in the tomato juice and blend again until the mixture reaches your desired consistency.

 Add the fresh basil leaves to the blender and blend until they are fully incorporated into the mixture.

 Stir in the red wine vinegar and extra-virgin olive oil. Season the gazpacho with salt and pepper to taste. Blend briefly to ensure everything is well mixed.

 Transfer the gazpacho to a large bowl or container, cover and refrigerate for at least 2 hours or until well chilled.

 Season with white pepper and salt.

 Drizzle with sour cream and garnish with fresh basil leaves.

CHRISTMAS SLAW WITH HOT PEPPER BALSAMIC VINAIGRETTE

INGREDIENTS

For the Slaw

• 1 small Christmas red cabbage, thinly sliced or shredded

• 2 large carrots, peeled and grated

• 2 apples (such as Gala or Fuji), cored and thinly sliced

• 1 cup pecans, toasted and roughly chopped–leave some whole for garnish

• 1/2 cup dried cranberries (optional)

• Fresh parsley or mint leaves for garnish (optional)

For the Hot Pepper Balsamic Vinaigrette

• 1/4 cup balsamic vinegar

• 1/4 cup extra-virgin olive oil

• 2 tbsp honey

• 2 tbsp hot pepper jelly

• 1 tsp Dijon mustard

• 1 clove garlic, minced

• Salt and freshly ground black pepper to taste

DIRECTIONS

 In a small bowl, whisk together the balsamic vinegar, olive oil, honey, pepper jelly, Dijon mustard, minced garlic, salt and freshly ground black pepper. Taste and adjust the sweetness or acidity by adding more honey or vinegar if necessary. Set aside.

 Preheat your oven to 350°F (175°C). Spread the pecans on a baking sheet in a single layer. Toast them in the oven for 5-7 minutes, or until they become fragrant and lightly browned. Do not burn.

 Remove the pecans from the oven and let cool before roughly chopping them. Leave some whole for garnish.

 In a large salad bowl, combine the thinly sliced or shredded Christmas red cabbage, grated carrots, sliced apples, chopped pecans and dried cranberries. Gently toss the salad with the dressing to mix the ingredients evenly.

 Refrigerate the salad for at least 30 minutes before serving. This allows the salad to cool.

 Just before serving, garnish with fresh parsley or mint leaves and whole pecans.

Cranberry Stuffed Acorn Squash

INGREDIENTS

• 2 acorn squash, halved and seeds removed

• 2 tbsp olive oil

• Salt and freshly ground black pepper, to taste

• 1/2 cup brown sugar

• 1/2 cup chopped walnuts

• 1/2 cup dried cranberries

• 2 tbsp melted butter

• Fresh parsley or rosemary sprigs for garnish (optional)

DIRECTIONS

 Preheat your oven to 375°F (190°C).

 Cut the acorn squash in half horizontally and scoop out the seeds

and stringy membranes using a spoon. Brush the inside of each squash half with olive oil and season with salt and freshly ground black pepper.

 Place the squash halves, cut side down, on a baking sheet lined with parchment paper. Roast in the preheated oven for 30-35 minutes, or until the squash is tender when pierced with a fork.

 In a mixing bowl, combine the brown sugar, chopped walnuts, dried cranberries and melted butter. Mix well until the ingredients are evenly incorporated.

 Remove the roasted squash halves

from the oven. Turn them over so that the cut side faces up. Spoon the brown sugar, walnut and cranberry mixture into the cavity of each squash half, packing it down gently.

 Return the stuffed squash halves to the oven and bake for an additional 10-15 minutes, or until the filling is caramelized, and the squash is fully tender.

 Remove the stuffed acorn squash from the oven and let them cool slightly. Garnish with fresh parsley or rosemary sprigs if desired.

Vegetable Crudités Vegetable Crudités WITH ROASTED BEETROOT DIP

Ingredients

For the Crudités:

• Sweet mini peppers

• Cherry tomatoes

• Small carrots, peeled, (stems optional)

• Al dent, steamed green beans

For the beetroot dip:

• 5 medium beets, washed & halved

• 2 gloves of garlic, minced

• 1/2 cup no-fat plain Greek yogurt

• Sea salt

• Freshly ground pepper

Directions:

 Preheat oven to 350º F. Line baking tray with parchment paper, place beets on tray and bake for 40 minutes or until beets are soft. Remove beets from oven and let cool down. Once cooled, peel beets.

 Add beets, yogurt and minced garlic to food processor and blend until smooth and creamy. Season to taste with salt and pepper.

 Arrange vegetable crudité on a butcher block and serve with beetroot dip.

Yield: 4-6 servings

Prep time: 10 mins

Total time: 40 mins
