Spencer Long of Genesus A recent report by Ernst & Young (EY) suggests plant-based fake meat protein will grow significantly over the coming decades. EY’s forecast estimates global plant-based fake meat protein will reach $139 billion USD in sales by 2035. This number is dramatically higher than the $16.5 billion USD in sales for 2021. If true, it is a massive wakeup call for our industry. Even if it’s slightly accurate it would be a massive change from today. People may choose to go to a more plant-based fake meat diet for a multitude of reasons, they also might be turned off by the dreadful tasting ting pork that is too often flooding the market from the world’s biggest genetic company. Canadian meat consumption has largely remained the same for decades, pork consumption onsumption on the other hand has dropped. As an industry it has become more and more apparent that what we’re doing isn’t working, consumers are choosing to buy other types of meat over pork. On the other side of it we have seen how Beyond Meat (NASDAQ: BYND) has gone from being the poster child of the plant-based fake meat crusade having Bill Gates heavily invest and reaching $235 USD a share in 2019 to now trading at $6.50 a share and Beyond Meat now being sold at Dollar Tree. That is a remarkable market correction and Bill Gates sold all of his stock. The reality for Beyond Meat is that it doesn’t taste good. From what I’ve heard from people who have tried it, they say it just doesn’t

taste good. Sound familiar? At the end of the day the number one factor in consumers purchasing and repurchasing a product comes back to one factor – taste. It’s not complicated, it’s not ground breaking information, we’ve known this. As EY’s report suggest plant-based fake meat protein will grow astronomically over the coming decades and we see how one plant-based fake meat company has failed in their quest, we as a pork industry must be mindful of that and why. If we want to continue down a losing path in which consumers choose to buy fake meat or other types of meat over flavorless pork than were well on our way and unfortunately doing an excellent job at it. If not, it’s time we make a change thatt will ensure we don’t continue down a disastrous path that results in more misery. misery The issues with Canada’s meat producers and the UK’s ascension to the free trade deal Comprehensive and Progressive A Agreement for Trans-Pacific Partnership (CPTPP) is ongoing. The issue echo troubles from Canada’s European Trade Agreement, that promised access for Canadian pork but resulted in next to no gain due to regulatory issues on carcass washes which has been going on for six years when the deal was signed in 2017. The UK doesn’t want to accept Canadian meat due to the anti-microbial product, peroxyacetic acid, that Canada uses on meat carcasses to prevent E. coli. The irony is the UK uses peroxyacetic acid to attack bacteria in other foods but not meat. The Canadian government has already stated they are going ahead with the free trade deal anyways, another resounding success for the Canadian pork industry as will take pork from the UK but the UK won’t accept pork from Canada.

Jersey Red Duroc

2 tablespoons olive oil divided, 1/2 pound mushrooms roughly chopped, 6-8 cups raw chopped spinach, 3 cloves garlic, 1/2 teaspoon thyme, 1/2 tablespoon soy sauce, 1/3 cup cream cheese, 1/2 cup Panko breadcrumbs, 1 pork tenderloin approximately 1.5lbs, 1 tablespoon Dijon mustard, salt & pepper Instructions: Preheat oven to 450°F.

Filling: Heat 1 tablespoon olive oil in a pan. Add mushrooms, soy sauce and garlic, cook about 5 minutes until softened (don’t completely cook the mushrooms dry, the juice helps keep the pork moist). Add chopped spinach and cook until wilted. Remove from heat and add cream cheese, panko crumbs and thyme, stir until mixed. Place filling in the fridge until completely cooled

Pork Tenderloin: Butterfly the pork tenderloin by cutting in half lengthwise (but not all the way through) and open it like a book. Pound the pork so it is even (about 1/2”) thick. Spread cooled filling over the surface of the pork and roll up jelly roll style and secure with toothpicks. Mix the Dijon with 1 tablespoon olive oil and brush tenderloin. Season with salt and pepper Bake for about 25-30 minutes until the temperature reaches 135°F. Broil for another 5 minutes or until browned and internal temperature is 140-145°F. Let rest 5 minutes before slicing.

prAGmatic: HOW SUSTAINABLE INTENSIFICATION

feeds the world OUTPUT INPUT TRANSPARENCY Consumers are concerned about “sustainability” and “transparency”. They increasingly want to know how their food is produced and what the impact of that food production has on the environment. Fair enough. But where are they getting the information that forms their thoughts and how “grounded” (pun intended) is that information?

I find, while talking to urbanites and those detached from agriculture, the gap between perception and reality is wide and not very rooted in the reality of farming and I find, one of the best ways for consumers to become more confident in the food they eat is to talk directly to famers. November 28th to 30th in Red Deer, AB will see the debut of a new show called the Agri-Food Innovation Expo which aims to do two things. Connect consumers to farmers to narrow the perception gap and connect famers to consumers to examine value-added strategies which can be developed to bring more profit to the farm. The reason I am talking about this is because I believe we need more initiatives like this. I am excited for farmers attending to learn about industry trends and I am keen to watch as consumers connect with producers to learn more about what is actually happening on the farm.

If you could track the output/ input numbers and turned that into a transparency score would that mean something to you? And, most importantly, would you pay for it? Or better yet, what if you used drone technology to map every weed in the field and precisely sprayed only the weeds using only 10% of XYZ herbicide and still grew 200 bushels of oats? Image what that would do to a sustainability score! These are some of the ideas being brought forward at the Agri-Food Innovation Expo by Terry Aberhart a farmer from Langenberg Saskatchewan. Terry has an idea that goes beyond the “Organic” or “Non-GMO” labels but instead looks at the data. He’s looking a what is being produced, how much and what did it take to grow that crop by stacking those numbers against environmental metrics such as soil organic matter or water use efficiency or nitrogen use efficiency. The idea is called Pristine Ingredients, and the concept is where farmers track all their inputs and tally those against the outputs to produce a sustainability score or a Pristine Index. Now let’s stack this idea up against what Dr Sylvain Charlebois the “Food Professor” from Dalhousie University, who is also speaking at the Expo, will say about consumer trends. Will consumers grasp these ideas? Would they pay for a Pristine Index? I am keen to hear about whether consumers in a group act the same way as consumers do alone, in the aisle, with their shopping carts.

Let’s take herbicides for example. Farmers do not get paid to grow weeds. Weeds are problematic as they suck u p valuable resources such as nutrients and water significantly reducing crop yields. Weeds gotta go! But how?

The number one method is crop competition. Nothing like an even, rapidly emerging healthy crop to fight weeds. But it’s not enough. Weeds are prolific and need to be controlled by either mechanical or chemical methods. The most common form of mechanical control is tillage. And nothing is more destructive to soil structure than tillage which results in organic matter depletion and greenhouse gas release. This is the common method employed in organic crop production. When you stack sustainability metrics up against tillage of soil, will it come out ahead or behind the employment of a chemical herbicide to control weeds? And if we do control weeds with chemical herbicide (be they synthetic or organic herbicides) is it possible to use the products in ways that reduce the environmental footprint? Here’s an example using some cowboy math. If you grew 100 bu/ac of oats and used 1 liter per acre of XYZ herbicide or grew 200 bu/ac of oats using the same amount of XYZ, which one would have the lower footprint when looking at output verses input? Well, the 200 bushels per acre would have more output per input. 100% more oats for the same
