An Interview with Best Sellin g Au t h or

ChristineHandy One of our favorites interviews with Christine Handy Best Selling Author of Walk Beside Me, Mother, Cancer Survivor, dedicated champion of charity, and Motivational Speaker. She never imagined those dreaded words would be said to her, you have cancer. Christine faced an ominous diagnosis of agressive breast cancer at age 40 and spent the next 15 months in a fight for her life. "Walk Beside Me is a must-read for anyone who has ever lost hope. Christine offers an inspiring message through her novel. I could not put the book down. Christine Handy is inspiring, empowering and shared her incredible journey to inspire others." Publisher, Cheri Cranford M issou r i M agazin e: Tell us a about your hometown and a few memories growing up in Missouri. Ch r ist in e Han dy: I grew up in St Louis. I am so proud of my roots and upbringing. I loved growing up in Missouri and I especially love the people. Mid westerners are kind, humble, hard workers and I have always found that they root for each other. ?We are who we surround ourselves with?is one phrase I always say when I speak to audiences, and that has been true of why I am who I am, because I grew up in such a solid, respectful city with like minded people. I have overcome so many obstacles, but it wouldn?t have happened without my solid foundation and that came from St Louis. My favorite memories from St Louis come from events like going to the Cardinals games and from working there in my teens. I started modeling at the age of 11 years for an agency in St. Louis called Talent Plus. That was my first of many modeling agents and I still have such incredible memories of the jobs and of the agents who worked there. I remember shooting for the St. Louis Cardinals catalog year after year. Since I went to the games with my family, it was so fun and exciting for me to be modeling their athletic wear. I was always very proud to be from a city with such a loyal fan base to our hometown team. Who?s not a Cardinals fan!?


I remember well the beautiful seasons we have in Missouri. I miss that a lot. Missouri is such a beautiful state with pretty distinct seasons which for me was comforting. I remember smelling fall coming and the flowers of spring. I have lived away from Missouri for many years, first in Dallas and now Miami and both of those cities don?t have the seasons like I had growing up. Fall was my favorite and being able to pick apples and having real pumpkin patches made my hometown special. It?s easy to go to the store and buy apples but to pick them is a memory I won?t easily forget. Of course, the best thing

about growing up there are the friends and family who have carried and loved me for so long. St Louis is a family town, that was a gift to have grown up there. M issou r i M agazin e: Christine, can you

briefly walk us through your story Ch r ist in e Han dy: Where do I begin with my story, it is long and difficult but filled with so much purpose and love. It began in St Louis with a little girl with a dream. I used to dream about writing a book for as long as I can remember. I had a pad of paper under my bed and I would write short stories in my early teens. But instead of following that dream, even though I did get into journalism and writing schools out of high school, I ended up continuing my modeling career which took me to Dallas for college. I attended Southern Methodist University and started working-modeling in Dallas. My modeling career took off and I

became a ?working model?so to speak. I shot Dillard?s, JC Penney catalogs, I booked bigger jobs in Los Angeles for Guess and I also went to Europe to model for Elite model management. But when I was 35 years old, I started to have some health issues. First a colon resection which had complications and I almost bled to death on the operating table, then 6 years later at 41 I had a minor arm issue that turned into a health catastrophe. I had a torn ligament in my right wrist which could be surgically repaired. Unfortunately, the doctor who performed the surgery left an infection in my right arm undiagnosed for months and months. That doctor told me the pain was in my head and bullied me, but one day I went to get a second opinion and the infection was found. It took one Xray to show the infection and damage. That was all that the doctor needed to do, and my arm would have never been destroyed. I was in surgery almost immediately and within months my right arm was fully fused. The damage to my wrist was unfixable and that led to 9 more surgeries. 6 weeks after my arm was fused, I was diagnosed with breast cancer. It came out of nowhere. I was 42 years old with no family history and still in a cast from my arm fusion. I went on to have 28 rounds of chemotherapy and more surgeries which included mastectomies, reconstructions, a PICC line and a port. I think in 4 years I had had 18 surgeries and 28 rounds of chemo,


a fused arm and chronic pain. It was a whirl wind. I went from being a thriving model, mom and wife to a sickly woman dependent on others to even get a glass of water. But my story wasn?t over, I had really only just begun. When I finally emerged from all those battles and wounds, I went on to write my book, I became a motivational speaker, worked as a breast cancer expert from the patient?s perspective for Fox Radio news and have become a spokesperson for multiple breast cancer organizations. I travel on Humanitarian efforts to Haiti and I am on the Board of a non profit called EBeauty. EBeauty redistributes wigs to women in treatment who can?t afford to purchase one. M issou r i M agazin e: How did the idea of your book Walk Beside Me come about? Ch r ist in e Han dy: I knew when I was going through chemotherapy that I had finally gotten the story that I had wanted to write since I was that little girl with that pad of paper under her bed. I had the story I needed to tell. It may not have been the story I would have chosen but it was the story I was given. When I completed chemo and started to get my feet on the ground while healing from cancer and a fused right arm, I started taking meticulous notes about my experiences and journey. I kept all the texts, emails from the several years I was sick and used those to put my story together. I hired an independent company to interview 28 women who helped me through all the illness and obstacles. Once I had those interviews, I went to work to create an honest story with all the grit and grace and all the pain and triumph. M issou r i M agazin e: Tell us a little about your book ?Walk Beside Me?. What?s the core message you want readers to be inspired by from your story? Ch r ist in e Han dy: Walk Beside Me is a fictional depiction of my life and journey. It



chronicles my story from being a model and my dependence on my physical appearance to getting sickness after sickness, losing my physical beauty and finding who I was inside. Through months of pain and illness all the while my friends never left my side. Those women took care of me and my family for season after season. They gave up their time, resources and other commitments to stay and help heal me. I was totally lost on who I was and how I would ever see life or light, but they never forsake me. Not only did they show up physically they showed up in prayer. They prayed the entire morning I was in my first surgery to take the cancer out of my breast and when I came out of surgery, the doctor was shocked that the tumor was smaller than what they originally measured. These women taught me to believe in myself and the healing power of God and prayer. They mentored me, fed me, drove me, walked with me and fought for me. It's no coincidence these women were there for me. I believe this story was meant for a greater purpose. To show women what true friendship looks like and how to do it. This story is an example of why we need to take care of our self-esteem and self-worth before we take hits with health or relationships. Because when I was diagnosed with cancer, I didn?t know who I was, the only thing I knew was what I looked like. That is not sustaining and without those illnesses and cancer I would have never been able to find me, know me and fulfill my true destiny which was to write this book and give hope to others. M issou r i M agazin e: Do you have a

personal quote you live by? Ch r ist in e Han dy: I have a personal quote I live by. ?What will you do today because you are exchanging a day in your life for it, make it count? I always say that when I speak to audiences. I had not lived

such a thoughtful, purposeful life until I realized my days were truly numbered. Only then I think can we really soar to live our fullest. Make today count, we can?t get it back. M issou r i M agazin e: Tell us about your

team of Angels. Ch r ist in e Han dy: My ?team of angels?I call them, are the women who stood by me, carried me through the trials. They are courageous and Godly women. Many of them St Louis women. I was living in Dallas at the time but most of my family is still in St Louis, and many of my high school friends came to visit and help during this time, good Mid-Western women. All of them were dedicated to our friendship and they literally became my hands and feet until I could stand on my own. Although I was raised with faith in God, they elevated my understanding of God and His faithfulness. They had so many tricks up their sleeves to nurture my soul during this time. They brought me books on faith and prayer, they taught me to always have faith-based music around and they even posted scriptures all over my house so that in every room and almost everywhere I looked I saw the word of God. They also made me realize my life mattered and that living was a gift, one I needed to use to show others hope and how to live. They were unstoppable which taught me to be unstoppable. M issou r i M agazin e: What are you

working on now? Ch r ist in e Han dy: I completed my second book which is a sequel to the first. I love it. It's very different then the first but I won?t give anything away. It is in the editing phase and will be published I hope this year. I am a motivational speaker and I still do some modeling after all these years. I do love to share my story, there are so many lessons wrapped into my book but written as a novel. I want to inspire people but also, I want to show what


true friendship can look like. Women are often portrayed as caddy and back stabbing; my book is the opposite of that. It?s a beautiful tale of friendship and perseverance. M issou r i M agazin e: Anything else you would like to share with our readers? Ch r ist in e Han dy: Willow the feature film is also being made. It is in a very early phase of development, but it is truly an incredible script that was written by Ziad Hamzeh, American film maker and award winner screenplay writer and director. I always dreamt that this book would be made into a film and now I am watching all my dreams come true. Walk Beside Me is a novel about cancer, illness and the power of friendship, prayer and hope but it?s about so much more than that. Willow Adair could be anyone- your sister, your mother, your best friend, yourself- and sometimes only by reading fiction do we allow the deepest truths of human experience to wash over us like warm summer rain.

It is my pleasure to introduce to you, Tiffany Ash, the heart and face behind Gold + Gray. M issou r i M agazin e: Tell us a little bit about you and how you opened your business Gold + Gray. Tif f an y Ash : This is my first year in business and getting to this point in my life has been quite a journey. Let me start at the beginning (well sort of). For 10 years I was married to my high school sweetheart. We had 2 beautiful and amazing children together and were planning our futures (in our early 30?s) when my husband had a tragic accident at work. He fell 3 stories on a jobsite and did not survive the severe trauma to his brain. At 30 years old, I found myself picking up the pieces of a shattered life and a shattered heart and trying to make sense of the chaos that had broken my family. My children were 4 and 7 at the time and for the next several years we endured a deep grieving journey as we battled our way towards healing. It was hard and humbling work and one that often brought me to my knees asking God all those hard questions about WHY, and WHERE WERE YOU, and HOW DO I MOVE FORWARD? But, we did move forward? one baby step at a time. I completed a masters degree in counseling and became a school counselor at a local high school. Counseling teenagers was one of the most rewarding and meaningful things I?ve ever done career wise, but also extremely challenging and trying at times. I loved working with teenagers and often felt like I learned more from them than they did from me. I was so blessed to get to watch them grow and mature, stand alongside them as they wrestled with struggles and hard life questions, and to be inspired daily by their creativity, passion for life, and pure energy! But after 8 years of working so hard in this career, I began to long for more autonomy in my life


and family. I desired to have more ownership in how I spent my time, how much money I earned, and what my message could be to young women. I have always loved fashion (side note : my students even voted me best dressed on several occasions). Making the decision to say good bye to them was one that was heart wrenching? but the super cool thing is how they all cheered me on for pursuing my dream and still do to this day! Thus, Gold+Gray was born and I said good-bye to working in public education and hello to creating a space and place I felt did not exist at the Lake of the Ozarks. In part because of the lessons I learned as a result of losing my husband, Jason, I was willing to take a big risk and pursue a dream that kept nudging at my heart. Life is too short to settle! My message for young women is one of inclusivity and community and it doesn?t just go away because I don?t work in a high school anymore. In fact, it?s gotten louder, clearer, and more real than ever! I want to create a super cool store to shop and an environment of love and support for all women! YOUR HEALTH | TAKING INITIATIVE


Taking Care of the Basics EATING RIGHT Everyone knows to eat a balanced diet, but it?s still one of the most important factors in good health. Eating lots of fruits, vegetables and whole grains, while avoiding too many rich and heavy foods, can help you have more energy and feel better. A healthy diet can also help stave off conditions like diabetes, heart disease and obesity or help you in controlling those conditions.

EXERCISING Regular exercise can also help you feel better overall, in addition to managing longterm health conditions such as diabetes. Your joints last longer and hurt less if you?re exercising regularly, plus getting outside and working up a sweat is good for your mental health. Find physical activity that you enjoy and can do regularly. This can be high-intensity exercises like running, hiking, kickboxing or weightlifting, or low-intensity exercises like walking, yoga and pilates.

SLEEPING ENOUGH The CDC suggests seven to nine hours of sleep a night for adults. Simply being in bed for that long isn?t sufficient, though; you need good quality sleep at night. If you?re waking up after eight hours of sleep and still feeling tired, waking up multiple times a night or if you snore or gasp for air while you sleep, you?re probably not getting enough deep sleep. Try to go to bed and get up at the same time every day and cultivate other good sleep habits, including reducing screen time right before bed; having a quiet, dark room; keeping screens out of the bedroom; and not eating large meals of drinking caffeine right before you go to bed.

GETTING REGULAR HEALTH CARE See your doctor for an annual physical to get your blood pressure and cholesterol checked and get any tests you may need (such as for mammograms and pap smears for women and prostate exams for men). Make sure you?re up to date on vaccines, and take this chance to talk over any concerns or ask questions. You should see a dentist twice a year and see an eye doctor regularly as well.


Weight is no one?s favorite topic, but it is an important factor in your health. Being overweight or obese puts people at greater risk of being diagnosed with chronic conditions like diabetes, arthritis and heart disease, it puts greater stress on your joints and can make exercise harder and have an overall greater sense of dissatisfaction with your health. That means maintaining or reaching a healthy weight or reaching a healthy weight. According to the Centers for Disease Control and Prevention, what that number looks like is different for everyone; talk to your doctor to find out what range you should be in, and, as you?re making lifestyle changes, think more about how much energy you have, how your clothes are fitting and how you?re feeling than just the number on the scale. Healthy weight management

will not happen through fad diets or even short-term changes. For most people, it doesn?t mean cutting out certain foods either. If you love cookies, any long-term diet that doesn?t include cookies isn?t likely to be successful for you. Instead, find a lifestyle that includes a mix of healthy eating and regular exercise. The first step is to determine the number of calories you need in a day. The standard 2,000 recommended daily allowance is more than many American adults need. Once you know your calorie count, start planning meals that fit into your intake, provide the nutrients you need and taste good. A healthy diet is full of fruits, vegetables, whole grains and low-fat dairy products; lean meat like poultry and fish, as well as other lean proteins like beans, eggs and nuts; and is low in saturated and trans

fats, cholesterol, salt and added sugars. This necessitates avoiding processed foods, which means more cooking and meal preparation on your part, but there are shortcuts or different methods that will still taste good and be healthy ? use frozen, already sliced or canned fruits and vegetables (just make sure canned fruit is packed in juice, not syrup); substitute brown rice for white rice; and find healthier substitutions for ingredients in your favorite dishes or different ways of cooking, such as sautéing instead of deep frying food. For high-calorie foods like desserts, chips, French fries, cheese and anything with butter, keep them as part of your diet, but cut back how much you eat and how frequently,

INGREDIENTS

FOR THE CRUST

In a large bowl, stir together crushed Nilla wafers and melted butter until completely combined and mixture is the texture of wet. Grease a springform pan with cooking spray, then press mixture into pan.

In a food processor or blender, process blueberries until pureed. Stir in lemon juice and lemon zest, then sprinkle gelatin on top. Let sit for 5 to 10 minutes to bloom.

1 1/2 c. blueberries, plus more for Meanwhile, place chocolate chips in a heatproof bowl. In garnish a small saucepan over medium-high heat, bring 1 cup 2 tbsp. lemon juice heavy cream to a simmer then remove from heat. Whisk in softened gelatin and blueberry puree and stir until 2 tsp. lemon zest completely dissolved. Pour mixture over white chocolate 2 tsp. unflavored gelatin chips and whisk until chocolate is melted. Place mixture in refrigerator for at least 15 minutes. 2 1/2 c. white chocolate chips 3 c. heavy cream, divided 1/2 c. powdered sugar FOR THE TOPPING 1 c. blueberries 1 tbsp. lemon juice 1/4 c. granulated sugar

In the bowl of a stand mixer fitted with a whisk attachment (or in a large bowl using a hand mixer), beat remaining 2 cups cream with powdered sugar until stiff peaks form. Stir in about 1/4 cup whipped cream into melted chocolate mixture. Gently fold in the remaining whipped cream until fully incorporated and pour over prepared crust. Refrigerate until firm, about 4 hours. Before serving, toss blueberries with lemon juice and sugar. Garnish cake with sugared blueberries.


IN THE KITCHEN| HEALTHY RECIPES

Honey GlazedCarrots INGREDIENTS 15 carrots (2 lbs.), peeled and halved lengthwise 1/4 c. butter 2 tbsp. honey 1/2 tsp. dried rosemary 1/2 tsp. garlic powder kosher salt Freshly ground black pepper Fresh thyme, for garnish (optional)

DIRECTIONS 1. Preheat oven to 400º. In a saucepan over low heat, melt butter. Stir in honey, rosemary, and garlic powder and season with salt and pepper. 2. Place carrots on a large baking sheet. Pour over glaze and toss until coated. 3. Roast until caramelized and glazed, 35 to 40 minutes. 4. Garnish with thyme, if desired, before serving.

DIRECTIONS Place eggs in a large saucepan and cover with cold water. Set pan over medium-high heat and bring water to a boil. Turn off heat, cover pan with a lid and let sit for 11 minutes. Drain, rinse eggs under cold water and peel. Halve eggs crosswise and scoop out yolks into a medium bowl. Add mayonnaise, hot sauce, and Dijon mustard to bowl, then mash yolks with the back of a fork and stir until mixture is smooth. Season with salt and pepper. Spoon mixture into each egg. Garnish with chives and paprika and serve

2 c. frozen strawberries 2 c. frozen raspberries, plus more for garnish (optional) 2 c. frozen blackberries 2 c. coconut milk 1 c. baby spinach 1/2 freshly squeezed orange juice Unsweetened shaved coconut, for garnish (optional)

DIRECTIONS In a blender, combine all ingredients (except for coconut). Blend until smooth. Divide between cups and top with raspberries and coconut, if using.


LemonAsparagusPasta INGREDIENTS 1 lb. penne pasta 1 lb. thin asparagus, trimmed and cut into 2" pieces 3 tbsp. extra-virgin olive oil, divided 1 small onion, diced 2 cloves garlic, thinly sliced 1/2 c. heavy cream 1 c. dry white wine, such as Sauvignon Blanc 1 lemon, zested and juiced 1 tsp. kosher salt 1/2 c. freshly grated Parmesan, plus more for serving 1/2 tsp. freshly ground black pepper, plus more for serving 1/4 c. fresh parsley, finely chopped 1/2 tsp. crushed red pepper flakes

DIRECTIONS Bring a large pot of salted water to a boil. Add penne and cook according to package directions, until al dente. Reserve ½ cup pasta water, then drain. Set aside. Meanwhile, in a large skillet over medium-high heat, heat 1 tablespoon oil. Cook asparagus until crispy, then season with pinch of salt. Transfer to a plate and set aside. Heat remaining 2 tablespoons oil over medium heat. Cook onions and garlic until softened, about 5 minutes. Add heavy cream, white wine, lemon juice, and zest. Bring mixture to a boil, then simmer for 5 minutes. Add in salt, Parmesan, and black pepper. Reduce heat to low and mix until well combined. Turn off heat and mix in pasta, asparagus, and parsley until well coated. Add small amounts of pasta water until you reach desired consistency. Serve with more grated Parmesan, cracked black pepper, and red pepper flakes.

It appears that our very long and very cold winter is finally coming to an end. It may not be noticeable by the present weather conditions, but you can be assured by the number of daffodils blooming and rosé wines suddenly appearing on dealers shelves are a sure sign of the approaching spring season. The traditional rosé wine is made by pressing red grapes and then removing the color producing skins as soon as possible leaving the juice with a light pink color and not simply mixing red and white wines as some like to suggest. The juice is then fermented as one would a white wine resulting in a wine with depth, body, flavor, and character. Ber on ia 2017 Rosé ($16). The indigenous grapes Tempranillo, and Garnacha of Spain proved to be perfect for the production of quality rosé wines. The Beronia 2017 Rosé has been made from 60% Garnacha and 40% Tempranillo grapes and is a perfect representative of its Spanish birthplace and the exuberance of the Spanish personality. This soft and attractive light pink dry rosé wine is reminiscent of the great French wines of Tavel that ares the model for all dry rosé wines. The aroma of this wine can be said in two words, pure perfume as it alternates between sun-warmed rose petals and fresh picked cherries. Black cherry, raspberry, and strawberry flavors share the flavor with a vibrant acidity. These same flavors continue on to the finish, which for a rosé, is rather long. This is a very interesting and delightful wine and a true herald of the upcoming warmer seasons that I can recommend without any reservation. Fleu r de M er Rosé Cot e de Pr oven ce ($19). The best translation of the name Fleur de Mer would be "Flower of the Sea" and if that alone doesn't pique the interest, nothing will. There are few in the field of wines, who do not believe that the dry rosé wines from the Cote de Provence in France, are among the finest of the type to be found anywhere. The Fleur de Mer displays an


SpringbringsRoseWines inviting salmon pink color and a wispy aroma of peaches, pears, and red summer fruits. The flavor stresses summer berries but in light refined amounts. There is also a bit of tannin in the wine, which assures that it can be cellared for as long as five years, which is a rarity for a rosé wine. This wine, as with any rosé wine, should be served slightly chilled and will go very well with spicy foods as well as Asian and Pacific Rim specialties. Van Du zer Willam et t e Valley Pin ot Noir Rosé ($20). The Van Duzer Willamette Valley Pinot Noir Rosé is a giant step backwards to a time when Rosé wines were made to honor a vineyard and not, as an afterthought. The aroma of this Rosé is filled with scents of strawberries and cranberries with pomegranates quietly lying in the background which then follows through to the flavor and then on to the very long and fruit packed finish. If I scored this wine with number as some do, on a 1 to 10 scale, we give this wine a 24. This wine may be a bit hard to find in local stores, but it can be obtained via the internet at h t t p:/ / w w w.van du zer .com / .

Ch at eau Gassier Le Pas du M oin e ($25). Another rosé from France that is definitely among the most interesting rosé wine from France. This rosé however is one with a slightly different grape makeup than the usual mish mash of red grapes found in many French rosé wines. In this wine the usual compliment of red grapes was augmented by the Ugni Blanc, a white grape that is use in the making of Cognac, adding a whole series of features including a host of summer light colored fruits while the flavor concentrates on guava and grapefruit that extends to a delightful finish. This is a wine for those looking for something beyond the same old thing.
