Don’t miss your chance to get into the mind of a chef and discover how to turn local ingredients into sophisticated and delicious dishes. Join Chef Conor Dennehy from Tallula for a globally inspired feast made with an abundance of local, seasonal ingredients. BASIC CULINARY SKILLS AND TECHNIQUES

Dagmar Smith | Chef, Graduate: Cambridge School of Culinary Arts

This class is for students who want to develop classic cooking skills that will help them understand recipes as well as how to confidently improvise in the kitchen. The class covers essential knife skills, cuts of meat, where to shop, and kitchen equipment. The first two nights will emphasize learning how to use knives effectively. Each night of this hands-on cooking class, students will make a complete meal from appetizer to dessert. Recipes will include: BBQ braised chicken, carrot ginger soup, chocolate chip cookies, salsa, chili, shredded salad, many muffins, pan seared sirloin steak and much more. This class is best suited for beginner cooks.

BASIC KNIFE SKILLS

Honing your knife skills is the most important way to finesse your artistry in the kitchen. Through a combination of demonstration and class practice, you will learn how to chop, dice, and slice like a pro. Students will learn cutting techniques for a variety of different vegetables and will practice with guidance from the instructor. You’ll also learn about sharpening your knife, the many different types of knives and their applications, as well as general knife care. At the end of the night we’ll make a meal which showcases all the cuts including an herbed vegetable and red lentil soup, ratatouille, and apple crisp.

Pâte à Choux, sometimes referred to as “choux,” is used to make a variety of French pastries, including eclairs and cream puffs. What is better than a light and airy choux pastry with savory and sweet fillings during the hot days of summer? You’ll learn step-by-step techniques to make a classic choux pastry and then both savory and sweet fillings including a chicken salad and crème pâtissière with a chocolate glaze.

French macarons are sweeping the nation! These delicate and colorful almond confectioneries can be a sweet ending to a meal or just a snack. You’ll learn step-by-step techniques to make macaron shells and two fillings including buttercream and chocolate ganache.

FRENCH TARTS

Want to spend an evening creating delicious tarts worthy of display in a French Pâtisserie window? We’ll learn how to make the buttery tart dough and three different fillings. You’ll be making a rich and decadent Tarte au Chocolat (chocolate tart), a bright and citrusy Tarte au Citron (lemon tart), and small flavourful Tartelettes Framboise Frangipane (small tarts with frangipane and raspberries).

FONDANT HANDBAG CAKE

Sandra Frezza | Certified Instructor, Sandra’s Sweet Sensations

In this class you will be creating a fondant covered handbag cake. You will be using fondant, gum paste, and imprint mats to create your masterpieces. The techniques covered will enable you to create other creative fondant masterpieces on your own. Previous fondant experience is not necessary. Bring two 8-inch cake layers unfrosted. Icing, fondant, gum paste and cake board will be supplied by the instructor.

EDIBLE ART IN TWO MEDIUMS: POTATO AND RICE PAPER ART

Learn all about the differences in composition between potato starch paper and its more translucent, yet stiffer sibling, rice paper, while making edible art that ranges from realistic flowers and leaves to abstract, sculptural designs. Students will also learn about various coloring options that include luster dust, edible spray paint, and food coloring.

EXPLORING ART MOVEMENTS THROUGH PLATED DESSERTS: POP ART &

THE

RISE OF ARTISTS AS ACTIVISTS

During this part lecture, part hands-on confectionary art class, we’ll learn about the artists of the pop art movement that burst onto the scene in the UK and US during the 1950s, marking the beginning of the trend of artists as activists. We’ll craft an original recipe representing the artists’ works in aesthetics and flavors, incorporating the saturated hues and commercialized renderings of Andy Warhol’s screenprints with the graffiti style cartoonish silhouettes of Keith Haring’s paintings: a mini ruby chocolate cheesecake abloom with a banana taffy rose enshrined in a sugar dome punctuated with chocolate bourbon bites and bittersweet chocolate popping candy pearls. Whether one has synesthesia, possesses only a somewhat heightened sensory awareness, or is merely curious to explore how flavors correspond to shapes and colors, this class will inspire art history and confectionary enthusiasts to explore beyond the common sensory constraints.

AFTERNOON TEA

Tea and pastries are a match made in heaven. Join Ploy, a certified tea master who will teach you how to prepare sweet and savory selections as well as several choices of teas. In the first half of the class, we’ll make English tea sandwiches, scones, and sweet pasties. In the second half of the class, we’ll pair teas with the food that we’ve made and learn about the history and culture of tea, and how to steep it to bring out the best flavors.

Travel cakes, popularized by Gaston Lenotre, are the perfect shelf-stable dessert that is sure to impress your guests! These loaf-style cakes can be made in a multitude of flavor pairings and are often decorated with chocolate, nuts, candied fruits, and rich delectable glazes. Come learn how these traditional cakes have been gaining momentum in pastry shops around the world for their traditional flavors yet modern presentations. In addition, we will also prepare a refreshing summer dessert to go along with the travel cakes. Sabayon Semi-Freddo is the French version of a classic Italian custard preparation, zabaglione. This light, foamy frozen dessert is served brûléed over a selection of summer fruits—and makes a quick, elegant addition to your summer dinner party!

ARCHITECTURE OF A SALAD

The most enjoyable salads have a few things in common: contrasting texture, layered flavors and harmonious ingredients. This class presents the fundamentals to building a delicious salad using diverse, healthy, and surprising ingredients. Recipes will include a kale salad, grilled cabbage salad, avocado egg salad, and goi ga, a Vietnamese salad.

BARCELONA: DISCOVERING CATALONIAN FOOD

Luis de Haro | Spanish Cuisine Expert, Chef Barcelona, the bustling metropolis nestled in the Spanish region of Catalonia, is known in culinary circles as the capital of the Mediterranean diet. Barcelona is famed for its award-winning restaurants, yet Chef Luis will give us an intimate look at the cuisine of a Barcelona household in this class. We’ll begin the night with a Marcona almonds tapa and a glass of Catalonian cava. next, we’ll prepare Pa Amb Tomaquet (tomato and garlic bread), Botifarra Amb Mongetes (Catalan sausage with white beans), Espinacas Catalana (spinach with pine nuts and golden raisin) and a Barcelona Seafood Fideuà. We’ll end the class with the quintessential Catalonian dessert, Crema Catalana.

COUPLE’S COOKING: VALENCIA PAELLA

Join Chef Luis and learn how to make the world’s most renowned rice dish, Paella Mixta. Luis’ authentic version contains shrimp, mussels, chicken, saffron, pimentos, peas, tomatoes, scallops or squid (depending on the season), and more. Because it takes time to make an authentic paella, we will start our night off with some simple tapas and a classic green salad from Spain and real sangria while the paella is cooking. You’ll learn about what distinguishes mediocre paella from exceptional paella, why to use the best type of rice from Spain and premium quality saffron from La Mancha, as well as other tools and ingredients to choose from. We will end our night with Chef Luis’ famous flan.

Luis de Haro | Spanish Cuisine Expert, Chef Friends, family, and food are a way of life in Spain and nothing signifies that better than classic tapas—little bites with big flavor! Learn how to make regional tapas including Gambas al Ajillo (garlic shrimp with sherry, parsley & olive oil), Stuffed Piquillos (fire-roasted peppers with bonito tuna & capers), Tortilla Espanola Classica, Croquetas (jamón serrano or drunken goat cheese), and Chorizo a la Sidra (chorizo cooked in cider). We’ll pair the tapas with authentic homemade sangria and end the night with Spanish Flan.

BRUNCH CON SABOR ESPAÑOL EN ESPAÑOL/INGLÉS

Yes, brunch is an American meal but you can have the best at The Ritz Hotel in Madrid. our Spanish brunch is full of flavors with fire and sparkles. The recipes and class discussion will be conducted primarily in English, but students are encouraged to use, practice, or ask anything in Spanish. We’ll begin with magdalenas, and Spanish lemon cupcakes. We’ll make Spanish potato salad and this recipe is like no other. We’ll also make the famous tortilla Espanola, a Spanish omelet. We’ll bake huevos flamenca, Andalusian flamenco eggs in a sofrito bed with layers of chorizo and serrano ham. A special Spanish flan will crown our brunch. natural orange juice and cava from Catalonia will make mimosas. This class is open to beginner and advanced speakers of Spanish alike.

SUMMER DINNER IN SPAIN

Summer in Spain means eating and drinking outdoors and is synonymous with breezy terrace bars, ice-cold summer beverages, and splendid summer dishes. In this class, we will make a classic Spanish summer menu including Catalan Tomato/ Garlic Bread, Ajo Blanco de Malaga (white almond gazpacho), Ensaladilla (Spanish potato salad like no other), Serrano HamWrapped Shrimp, Sweet Piquillo Peppers Toasts (parsley/garlic), and Pipirrana de Jaen (unique marinated fresh vegetable salad). our classic summer Spanish drinks will be Tintos de Verano (sparkling red wine spritzers) and Spanish Limonada (white wine sangria). The end of our summer dinner will be a homemade prepared ice cream with Extra Virgin olive oil Tortes from Seville.

SCOTTISH COUNTRY FOOD

Michael McComas | Gastronomic Adventurer

Scottish food tends to be hearty and simple: meat, root vegetables that will keep through the long winter months, and things that can be boiled or baked easily. Arguably Scotland’s most beloved contribution to Western cuisine, shortbread has only three ingredients, but done properly, it’s a melt-in-your-mouth wonder. In this class, we will prepare a Scottish meal that follows these principles of making simple country food scrumptious. The menu will consist of chicken and leek soup, a farmer’s “on the go” meat pie, a traditional vegetable side dish (tatties and neeps), and oatcakes for dessert. We will pair the meal with a tasting of Scotland’s favorite beverage.

COOKING WITH CAST IRON

Malcolm Jackson | Recipe Developer, Culinary Instructor

Cast iron skillets are one of the chef’s favorite cookware because of their unparalleled heat retention and non-stick properties. Students will learn how to optimize temperature when cooking a variety of proteins and vegetables, including salmon, steak, eggs, and potatoes. We’ll talk about different types of cast iron pans and how to buy, use, maintain, and—most importantly— season them.

ITALIAN SUMMER DINNER

Warm summer nights and Italian cooking with seasonal ingredients couldn’t be more enticing and relaxing. Cook up some great Roman dishes while sipping on a crisp cold glass of Prosecco. In this class, we’ll make sautéed mushrooms with baby arugula and pecorino crema on bruschetta, pan seared summer tomatoes with fresh ricotta and basil with bucatini, and fresh baked cod al forno with artichoke and olive tapenade. We’ll finish the dinner off with fresh seasonal fruit crostata for dessert.

MAKING PASTA FROM SCRATCH

once you learn how to make fresh pasta from scratch you’ll never go back. Chef Rebecca will guide you through different styles of long and short pasta with a pasta machine or by hand and also cover filled pasta, including different styles of ravioli. We’ll make a Ravioloni with ricotta and egg yolk with pancetta, peas and herb pistou as well as learn techniques for a classic marinara to enjoy with fettuccine or spaghetti. Pasta machine selection and maintenance and care will also be discussed.

MEDITERRANEAN MEETS NEW ENGLAND: COOKING THE MEDITERRANEAN DIET WITH LOCAL INGREDIENTS

This class covers how to cook and eat using seasonal, locally-grown ingredients, while adhering to the tenets of the Mediterranean diet. Recipes include dishes from cultures across the Mediterranean. The emphasis is on fresh vegetables and whole foods that are available locally and in season.

BREAKFAST OF THE EASTERN MEDITERRANEAN

Learn how to create the elements of a bountiful breakfast spread, perfect for a summer weekend. We will make Borekas filled with greens and cheese and a chopped salad with seasonal vegetables from the farmers’ market, as well as Cilbir (Turkish poached eggs with yogurt). You will also learn the basics of a foolproof sourdough bread that will complete any meal, and take home your own starter. We will put together a cheese board, fruit platter and plate the spread just as you would find in Israel or Turkey.

French cuisine needs no introduction. Simple, rich, and with an exquisite attention to detail, French cuisine has no doubt left its mark on almost every cuisine around the world. Come join Chef Evelyn Schichner who will teach you and a partner or friend how to prepare a delicious Vegetable Tart, Rice with Herbs, Asparagus with Almonds, Fish Filet with Creamy Shallots & White Wine Sauce, and a Lemon Tart to finish. We’ll toast with a glass of crisp white French wine as we savor our dinner together.

CULINARY EXPLORATIONS OF THE SEPHARDIC DIASPORA

Join us as we cook up some classic dishes from the Sephardic diaspora reaching from the Maghreb (Northern Africa) to the Levant (Western Asia). We will learn how to make a classic hummus from scratch, chraime from North Africa, a Yemenite hot sauce (schoug), and a yogurt flatbread to scoop it all up with.

MEXICAN STREET FOOD

Are you a taco fan? Ever hear of Elote (Mexican street corn)? There’s so much more beyond the surface of what we know about Mexican Street Food. We’ll explore culinary regionality and learn how tradition intermingles with other aspects of Mexican culture as we taste our way through some delicious street food.

MAKING MOZZARELLA

Mozzarella is a beloved fresh cheese, both for snacking and cooking. Surprisingly it’s not too hard to make, but takes practice! Learn about the few, but mighty necessary cheesemaking ingredients and experience mozzarella-making from curd to cheese. We’ll also enjoy a few light appetizers with our finished product.

ULTIMATE BURGERS

In this class we’ll put together a great gourmet burger bar. There will be mushrooms, bacon, fresh and sautéed onions, avocados, salsa, as well as lettuce and tomatoes. We’ll have an assortment of cheeses, rolls and condiments. Students will make slider size burgers out of turkey, beef and lamb with a vegetarian option and everyone will be able to try several different burgers. For accompaniment we’ll roast some potatoes and veggies and share a fabulous meal at the end of the evening.

ICONIC FOODS OF BOSTON

Have you ever wondered what “Tangerine Dream” tastes like? Terpenes are flavor compounds predominantly found in plants. They’re often structurally recreated in labs and re-introduced to products such as perfume to help create scents or flavors as desired. Strain-specific terpenes can be directly isolated from plants in a natural Co2 extraction, in this case utilizing the cannabis plant, without the inclusion of cannabinoids such as THC or CBD so you’re left with the pure essence of the plant flavor-wise without any of the psychoactive effects or plant matter. In this class we’ll experience strain-specific terpenes safely extracted in a lab from plants grown and harvested in Maine, combined with complex and diverse domestic and international honeys. When thinking of Venice, you may have idealized dreamy visuals of striped-shirt-wearing gondoliers navigating artfully-crafted boats through winding narrow waterways, but what about the food? Venetians, in addition to offering Italian cuisine similar to other parts of Italy, have their own culinary traditions—notably tapas-style snacks called cicchetti. not dissimilar to tapas, or more specifically pintxos, cicchetti are small bites of locally-crafted, seasonal products, usually served atop slices of bread, and are priced cheaply at around €1-€3. These varied snacks can be found at “cicchetterias” around the city, some highlighting a specific cicchetti specialty. Cicchetti are usually paired with local drink options such as Prosecco, a Venetian “Spritz” or “ombra”—local dialect for a small glass of wine. While the Italian concept of “aperitivo” usually applies to the hours leading up to dinner in other parts of Italy, Venetians serve cicchetti all day long. It’s definitely 17:00 somewhere!

The tradition of book clubs in the US dates back to the early 19th century in new England, and there are more than 5 million book club members in the US today.

CCAE is happy to introduce ESL students to this tradition by meeting regularly to read and discuss a book, its themes, characters, and related subjects. This summer we’ll be reading Lucy by the Sea by the Pulitzer Prize-winner Elizabeth Strout. Lucy Barton grew up poor and neglected in the Midwest, but moving to new York became a famous writer; still, she has never transcended her early poverty and desperation, and the demands of family—including her ex-husband, with whom she finds herself in pandemic lockdown on the coast of Maine. Required book: Lucy by the Sea by Elizabeth Strout.

This course is all about intonation, the most important part of English pronunciation. Intonation is the contrast between higher sounding parts of speech and lower sounding parts of speech. often, when people don’t understand what you say, it has to do with intonation. We’ll also practice primary stress for words. Primary stress is the most prominent, loudest syllable in a word. Get English intonation under control, and greatly diminish the frequency with which you experience this problem. With practice, you can eliminate this problem. You’ll also learn how to pronounce sounds (phonemes) that are difficult for you.

SAMBA & PORTUGUESE

Samba is a broad term for many of the rhythms that compose the better known Brazilian music genres that originated in the Afro-Brazilian communities of Bahia in the late 19th century and early 20th century, having continued its development in the communities of Rio de Janeiro in the early 20th century. Having its roots in the Afro-Brazilian Candomble, as well as other Afro-Brazilian and Indigenous folk traditions, such as the traditional Samba de Caboclo, it is considered one of the most important cultural phenomena in Brazil and one of the country’s symbols. Present in the Portuguese Language at least since the 19th century, the word “samba” was originally used to designate a “popular dance”. This class is for students who would like to immerse in the language and have fun by experiencing rhythms, dancing steps and conversation. no experience in dancing required. The class will be taught in Portuguese and students are required to have at least a high beginner level (CEFR A2 and above).

Kate Chopin, an author of short stories and novels based in Louisiana, has been considered a forerunner of American 20th century feminist writers. not many mid to late 19th century authors were bold enough to address subjects that Chopin dealt with. She is best known for her stories about the inner lives of sensitive, daring women. Chopin was a writer whose keen observation skills led to an impressive ability to translate life into perceptive stories. THE ART AND LITERATURE OF MODERNISM IN EUROPE AND RUSSIA

Art used to come from models and plasters in a studio; now, it is inspired by an old ashtray and the excretions of a mollusk. Death was a sacred mystery; now, every twitch is observed and recorded unflinchingly. The enigma of romantic love is examined under a microscope and, if not solved, described in minute scientific detail. Literature and art of modernism pulled the veil off the most venerated concepts and institutions and peered into their bowels, looking for mechanisms that make them tick, offering new answers to the old questions, what is love? What does dying feel like? What is human life? In this interdisciplinary seminar, we will read stories by Bunin and Chekhov; watch Anna Pavlova be a dying swan; listen to Rakhmaninov’s Isle of the Dead while examining the eponymous painting; discuss Swan Lake and recite Annensky’s poem.

For the past 40 years, Gilbert and Jaime Hernandez’ Love and Rockets has been one of the most successful and widely praised independent comic books. In this course, we will examine Jaime’s Locas series, which focuses on a group of young women—Hispanic, Anglo, Asian, lesbian, and straight—growing up on the punk scene in California. Themes will include racial, sexual, and ethnic identity, punk music and artistic creativity, love and connection, and growing older in a confusing world. We will also look at Jaime as a writer and storyteller, particularly his roots in midcentury culture, traditional comics, and movies.

THE ART OF FICTION: SHORT STORIES

Why do we call some writing “fiction”? It can be based on “real” life or have nothing to do at all with reality— either the reader’s or the writer’s reality. Reading works by a variety of authors, including Charlotte Perkins-Gilman, John Updike, Gabriel Garcia-Marquez, Manuel Muñoz, and Haruki Murakami, you will learn to discuss various sub-genres of fiction, articulate your opinions based upon your understandings of the texts, and on a personal level, convey why a text does or does not work for you. Fiction—like ogres and onions—has layers. In this fun, discussion-oriented summer course, we will familiarize ourselves with literary devices/ terminology, such as theme, symbolism, and imagery, to understand how our awareness of those layers contributes to our appreciation of short stories.

In this six-week writing-intensive course, we will take what Burghild nina Holzer calls a “journey into the unknown,” using our journals as a guide. We will write compelling stories, drawing inspiration from life’s ups and downs and the vast landscape of in-betweens. As our lives rarely follow straight lines, we’ll surprise ourselves by following the intricately curved pathways of our thoughts. one of the most influential artists in the history of modern painting, Paul Cézanne, created more than 900 oil paintings and 400 watercolors. As a Post-Impressionist painter, he introduced new approaches of representation and influenced modern artistic movements of the early 20th century. Cézanne is said to have formed the bridge between late 19th century Impressionism and the early 20th century’s new way of painting. PAINTING THE LANDSCAPE

Every landscape includes many complex shapes and textures. In this class, learn to develop your perceptions of five different zones inside the landscape space: through, between, within, below, and above. Traveling through these zones, you will learn the fundamentals of landscape painting techniques. MINIATURE AND GILDING (PERSIAN ART)

To study Persian Painting is to enter into a rich culture that produced major epics, sophisticated art and architecture, exquisite miniatures, and Sufi poets such as Rumi, Hafez, Ferdusi. This 10 week program is designed to give you a thorough grounding in fundamentals of Persian Art (Miniature & Gilding). In this level for beginners, the focus will be on the Safavid Period and the Isfahan school of art (17th century). Through our examination of works by Persian Masters of the 17th century we discuss what it took to create such works of art with regard to composition, subject, perspective, lines, lights, and colors. The inherent ability to capture vivid colors and moods all within a small window of time on location is known as plein air painting. The main focus of this intensive will be color and the use of brush techniques to build vivid landscapes as the old masters would have—as well as to find renewed life after a year of being shut away. Weekly assignments and group critiques will help students develop their photographic seeing and understanding of light while becoming more engaged with their surroundings, and the ideas and feelings that motivate their photography. INTRO TO CYANOTYPE

In this one session intensive workshop, we will learn about the process of making cyanotypes. Sometimes referred to as sun prints or blueprints, cyanotype is a 19th century photographic printing process that uses UV light to create a cyan blue print. Students will learn about the history of the process, as well as learn to coat paper and expose prints. We will use both the sun and indoor sources of UV light. Students are encouraged to bring photo negatives, flat objects, or different shaped 3D objects. no previous experience required. A $30 materials fee per student is included in the tuition.

“Tyh” the Dancer leads a dynamic hip-hop class. Starting with a warm-up, we check in with our bodies and establish a solid mind-body connection. Next, isolations, stretch, and conditioning set the tone for style. Then we warm up to the space with some across-the-floor travel steps, including but not limited to animal walks that transition to choreography. The combination is then drilled, and we perform it for each other in groups. This allows everyone to enjoy the dance from both perspectives: audience and dancer. After this, we cool down and check out with a cipher circle that will enable us to safely play with what we learned in class to build confidence in our style with hip-hop as the foundation. THE MUSIC OF MILES DAVIS

Immersion in the many stylistic developments made trumpeter Miles Davis the most influential trumpeter and band leader in the last 80 years of jazz history. Davis’ knack for introducing new musical trends and partnering with collaborators who would become major figures in their own right was unprecedented. His journey, from an apprenticeship with Charlie Parker in the early years of bebop through his pivotal role in launching the cool jazz, hard bop, modal jazz, and fusion movements, spans nearly five decades of innovation and timeless recordings. Special attention will be given to his two “classic” quintets, which featured John Coltrane and Wayne Shorter, and his orchestral collaborations with arranger Gil Evans. Each session will feature seminal performances by Davis and the artists in his ever-expanding circle.

This course will offer an overview of this material and then focus on the works of the greatest composers of pop songs, including Jerome Kern, Harold Arlen, Cole Porter, Richard Rodgers, and—of course—the greatest of them all, George Gershwin.

Enjoy a Sunday afternoon of backyard croquet and keen competition with the 7-time national USCA Champion Reid Fleming and his wife, USCA ranked player Mary-Catherine Deibel. We will play a six-wicket version of backyard golf croquet— easy and lots of fun to learn and play! We will set up our sticky wickets on a court at a private Cambridge residence, easily accessible by T and with available street parking. FIERCE AND FEMININE Boston By Foot From the 1600s to the mid-1900s, women’s contributions to Boston were often under-recognized. Who were these Bostonians and what achievements have been overlooked? Including women of mixed classes, lines of work, and domestic lives, their passions and professions ranged widely from creative survival to medicine, nutrition, education, art, literature, philanthropy, gender rights, and more. Overall, this tour acknowledges the steps these women took in making Boston and America what they are today. Policies

Register early!

CCAE reserves the right to cancel classes due to low enrollment or other considerations. We begin cancelling classes with low enrollment up to 10 days before a class is scheduled to start, so register as early as possible in order to reserve your seat and help it meet the minimum enrollment.

Please note: Students must be at least 18 years old to register for a class at CCAE, unless the class is specifically listed as one for an adult with a child.

Registration fees

An $8 registration term fee is charged for any class whose tuition exceeds $25. only one registration fee is charged per person per term. The registration fee is not refundable if you withdraw from a class. The fee is refunded if CCAE cancels your class or if changes to the class schedule prevent you from attending. This does not apply to individual classes rescheduled due to inclement weather or other significant factors beyond CCAE’s control.

Withdrawing from a class

If you withdraw seven days or more before the start date of a class, we will issue you a class credit (valid for 18 months from the date of issuance). If you prefer, we will refund the class tuition minus a $10 processing fee. All refund requests must be submitted within 90 days of purchase. Withdrawals from classes and events under $25 are only eligible for a class credit; no refunds are given.

If you withdraw six days or less from the start date of a class, we do not issue class credits or refunds.

Transferring to another class

You may transfer into a different class if you contact us at least three business days before the start of the class. If there is a difference in price, we will issue a class credit or there will be a remaining balance to be paid. Refunds are not given.

Cancellation or schedule change

If we cancel your class, you will receive a course credit good for 18 months from date of issue or, upon your request, a refund. Please call our registration office to request a refund. If CCAE changes the class schedule before the class begins such that you are unable to attend, you may receive a refund or a class credit upon request if you contact us before the withdrawal deadline. This does not apply to individual classes rescheduled due to inclement weather, other significant factors beyond CCAE’s control.

Typographical errors

CCAE reserves the right to correct the listed price of a class or other errors due to misprints.

Photos

We may occasionally take pictures of students in our classes for use in promotional materials. Your enrollment in a class indicates your approval.

online classes take place on Zoom. If you are unsure if you are able to use Zoom or if your camera and microphone work, we recommend testing it out by joining a test meeting before your class starts at zoom.us/test.

The Zoom link and information on how to join will be emailed to you. Please also check your spam folder. If you register within 12 hours before the class begins or after the first date, please contact zoom@ccae.org for the link.

Student expectations for online classes

Classes will take place on Zoom. Do not share the Zoom meeting invitation and link with anyone who is not registered for the class.

Classes will take place at the time they are scheduled. We cannot provide recorded classes if you are not able to attend the class at the time scheduled.

one registration is for one person. If you are planning to invite your spouse, partner, or friend to attend this online class with you, please sign up for an additional seat.

For the security of our instructors and students, please do not record the class. Please do not take photos of the class without the permission of the instructor and the other students.

WHAT INSPIRES YOU TO PLAY GUITAR?

In a word; it makes me feel better. It’s partly a meditative state which calms the mind, a tactile sense of moving air and muscle that stems from impulses of one’s own mind. There is also another dimension when you combine with others; it’s a shot of joy playing with people and hearing the connection between the musicians and communication in real-time that results in a satisfying soundscape.

WHO ARE YOUR FAVORITE GUITAR PLAYERS AND WHY?

There is an ever-changing lineup. I like most kinds of music styles so I gravitate towards players that command different styles. Currently I listen mostly to Guthrie Govan. He, to me, feels so far ahead of everyone else. His ability, both technically and mentally, is gobsmacking. He seems to pick all the right notes at the right times, create excitement with tension and release, and he blows you away with sheer technical ability. I also really like Lari Basilio, for much the same reasons. There’s Beck, who takes old songs and makes them new. Another is Pat Metheny. There’s Pierre Bensusan with his unmatched acoustic solo compositions. I could go on and on!

WHAT IS THE MOST IMPORTANT LESSON YOU TELL YOUR STUDENTS ABOUT PLAYING GUITAR?

Enjoy! If you’re not having fun, it’s pointless. Learning the first few chords and songs takes effort but there is so much

music that can be played and enjoyed by knowing only a few basic chords and strums.

WHAT HAVE YOU LEARNED FROM YOUR STUDENTS ABOUT THE ART OF TEACHING GUITAR IN THE DECADES THAT YOU TAUGHT AT CCAE?

Lots. I feel like I learn something every time. I’ve learned to walk them through all the things I ask them to do. In that respect my classes are as much an exercise routine as information. Come back to things and repeat. Go slower. Ask what they need. Inclusion. In the end, I’m probably a totally different teacher than what I was when I started at CCAE. Hopefully better!
