They were the Hunter’s ‘accidental vignerons.’ A Sydney couple who made a spur-of-the-moment decision to buy a block of land in the Hunter Valley and produce wine. This months cover story is one we can certainly relate to, as we did precisely the same thing almost 15 years ago - packing up our family and moving to Wine Country to start a local business. Like the Degans, what began as a dream soon became a reality (and a load of hard work), but we’re so pleased to have escaped the city life, and you couldn’t find a more beautiful area to call home than the Hunter. Read more about the Degan’s story on page 10. Another family winery that has grown from the passion of its owners is Mistletoe Wines. Three generations of Ken and Gwen Sloans family are involved in the production of their award-winning wines, created with the guiding principle of quality over yield. Read more on page 14.

When bushfires swept through the country earlier this year, carers and volunteers at local wildlife shelter Cedar Creek Wombat Rescue were run off their feet caring for injured wombats and other native animals. From the paintbrush of Australia’s finest wildlife artist, James Hough comes an extraordinary exhibition at Morpeth Gallery this August – and it's sure to be one that shouldn’t be missed. It might be the sight of colourful local art or unique handcrafted homewares that draws you into our markets, but it’s the smell of sumptuous slow-cooked and smoked delights that will have you searching {and lingering} for a meal.

After working up an appetite browsing the stalls, follow your nose to The Crafty Pit. Established in 2016 by Raymond Terrace couple Paul and Amanda Bull, the food van offers a range of barbecued meats cooked ‘low n slow with a twist’ and incorporated in a range of delicious dishes, from burgers and wraps to nachos and subs. “I bought my first Weber Kettle barbecue back in 2000 and started my love for charcoal cooking,” Paul said. “Nearly every weekend I would be cooking pork or chicken roast along with vegetables all on the Kettle. I love to cook for family and friends, and it was my family and friends that said to us we need to get out there, purchase a food van and let other people try our creations. “The Crafty Pit started in early 2016. The name came together based on trying to do things differently when it comes to pit cooking, giving people an exciting new take on the flavours they crave but may not be able to achieve at home.” Passionate about cooking meats that are tender and full of flavour, Paul said the secret lay in the spices they use and the patience required not to rush the process. “All my meats are cooked low and slow over ironbark wood,” he said. “The secret is the quality and cuts of meat used, good spice rubs to give flavour, temperature control and time to cook it – it can’t be rushed. “Working closely with the team at Terrace Meats Raymond Terrace we are able to source the best cuts for low and slow cooking. The barbecue sauce we use is freshly made every week and our spice rubs are also handmade using the freshest of ingredients.” The Crafty Pit has been making its way to the Handmade in the Hunter Markets since March 2018 and regulars will notice that while they have a core offering, Paul and Amanda love to change up their menu.

With so many tasty dishes on offer, Paul said it was tough to select just one favourite. “My favourite is the Pulled Beef Burger with smoked pulled beef, beetroot relish and vintage cheese – the combination of all three tastes is unexpected and delicious,” he said. “Amanda’s would be the Cheeseburger Spring Rolls. Freshly made for every event, these are definitely a crowd favourite. And you can’t go past our nachos using our pulled meats, fresh tomato salsa and all the trimmings – it’s a meal for two.” Check out The Crafty Pit at the Handmade in the Hunter Markets this month, which will be held at Kevin Sobels Wines from 9am to 3pm on July 18 + 25 and August 1, 8, 15, 22 + 29. They were the Hunter’s ‘accidental vignerons’, a Sydney couple who made a spur-of-the-moment decision to buy a block of land in Pokolbin and grow their own vines. But more than two decades later, the awardwinning single vineyard varieties on offer from Jean and Thomas Degen’s family-run vineyard and cellar door are firm favourites among wine connoisseurs, while their luxury, larger group accommodation attracts five-star reviews from guests blown away by what’s on offer across the picturesque 54-acre property.

Tell me a little about your background - how did you come to be in the Hunter? Jean: My husband Tom and I have two children, and for most of our lives, Sydney was home and working on our vineyard was our weekend passion. Tom is a Sydney boy and spent most of his career at sea in the merchant navy as an engineer. I’m originally from India and arrived in Australia in 1968. I worked for a global IT company, specialising in organisational behaviour. If you had asked me as a young girl in Bangalore if life would see me growing grapes and producing wine in Australia, I would have thought you were mad. For Tom and I, buying a property in Pokolbin with the

idea of developing a vineyard was rather a spur-of-the-moment decision back in 1997. But we’ve always loved the Hunter Valley, and I think our little block of land just spoke to us. We could see our future here, and we thought, ‘Why not? Let’s give this idea a go’. Our daughter Sasha followed us to the Hunter, and with her partner, John, runs Hunter Valley Stays, so the Hunter Valley is very much home now. How did you become involved in the wine industry? Jean: You might say we’re accidental vignerons. It was on a day trip to the Hunter that we chanced upon a block of land for sale in Pokolbin and became owners of a small 11ha, heavily-wooded bush block. And with that, our lives changed. We would work our jobs during the week, and then every Friday evening drive to Pokolbin and swap our city shoes for boots to work on our block over the weekend. That was our weekly routine for nearly 20 years. Somehow, while doing all that, we studied viticulture. In fact, in our course, we were the only two students who had land to put theory into practice. It took a few years to carefully plan and prepare the soil for planting vines, and in late 2001 we planted 10,000 Chardonnay, Shiraz and Semillon vines. We’re one of the smallest commercial vineyards in the Hunter Valley. I see a lot of our guests looking around at what we’ve created, perhaps trying to picture themselves doing something similar, and often they’ll ask, ‘How did we do it?’ I tell them, follow your passion, but setting up and running a vineyard is a lot of hard work. How did Degen Wines begin? Jean: We were so very proud of having planted our vines in late 2001. We had cleared the land, built a dam, installed trellises and irrigation and done everything to make sure our young vines would thrive. (Continued next page) F

(Continued) Looking back, this was the easy part. For us, our paddock full of newlyplanted vines were like children. Each one needed to be nurtured, cared for and protected. You could say we didn’t rest until they were able to walk and reach the wire. But over time, we saw they were thriving, and our crazy idea of creating a vineyard was working. We picked our first crop of Chardonnay and Shiraz by hand in 2004. Our first winemaker was Max Patton at neighbouring Rothvale Wines. I can’t tell you how we felt tasting our own wine for the first time; the fruits of our labour. Incredible! That was an important milestone in the history of our little vineyard. In 2005 and 2006 our Chardonnays were made by Dan Dineen at Len Evans’ The Tower, and we knew what we were doing was working. In those early years, our plan was to build up our stock of premium aged wines and work closely with talented winemakers. You have to remember, for just the two of us, the three blocks of vines (13 acres) were what we could manage to do on our own on the weekend. We’d hire some wonderful local vineyard workers in winter to help us with pruning, but for the most part, what you see is what two people could manage in their spare time, and we’ve bootstrapped our business along the way as we grew. As we started to look ahead to the future, Tom and I began our plans to move from Sydney and make the vineyard our home. We built a small cellar door, as an annexe to our house, that overlooks the vineyard. I think that’s what people see when they visit Degen, that you’re visiting a family-run vineyard and you are guests in our home. With the considerable help of my daughter Sasha, and her partner John, we opened for cellar door tastings in 2013. Selling our own wine, from our own cellar door, was something that was only dreamt about when we started. From our original block of land, we expanded to purchase the neighbouring property in 2014 and to offer luxury vine stay accommodation in three houses for up to 20 people. Why do Degen Wines only produce single-vineyard wines, and what is your overall winemaking philosophy? Jean: I think you can summarise it neatly as ‘we’re good at being small, and we’ve grown at the pace that feels right to us.’ That’s been our approach from the beginning. We’re proud of what we produce and how we do it, and that’s reflected in each bottle of wine. I think there was no question that we’d focus on producing wine that is of our own vines and labour. Being small is our advantage. We’re nimble, and we can quickly adapt. Our family name ‘Degen’ means ‘fencing sword’ in German. Hence, the image of the fencer lunging forward with his sword aligns our family name with agility, skill and precision - qualities we embrace as a small producer. Most importantly, it’s the quality of our grapes that has impressed the winemakers we work with, and together our collaborations showcase exciting wines.

What do you think is the defining characteristic of your wines? Jean: From a winemaking point of view, our goal of producing high-quality wines, which started by working with Max Patton, Len Evans and Dan Dineen, has continued with the hugely talented Liz Jackson, Annabelle Holland, Rauri Donkin, Scott Stephens and Damien Stevens. Working with leading and up-and-coming winemakers who are looking to create different expression in wine from our fruit makes us attractive to wine lovers. From a viticulture point of view, Tom and I literally know every vine on our vineyard. That knowledge of our vines and experience of nurturing them through whatever nature has in store, through drought or weighing up the right time to harvest, translates into quality. I think our wines are defined by the quality of the grapes we harvest. Each of our varieties is hugely expressive, too, so it’s a constant learning experience. Our Semillon is so versatile. We produce a wildly popular dry, crisp, zesty Semillon, that begs for another glass, but we’ve also released low alcohol demi-sec style Semillons, which show such subtle sweet and floral tones that always wins hearts. Our Chardonnays established our reputation early on for aged single-vineyard wines, and have been awarded for their delicate balance of fruit and oak. Our range of Shiraz is rich in berries, full-bodied and quite ‘big reds’ as a result of drier growing conditions in recent years. Our varieties have also allowed us to experiment. Again, our Semillon shines in our sparkling white wine, and we are thrilled to be exploring new ground with a soon-to-be-released Degen Rosé and a Sparkling Shiraz.


The main house is positioned with views overlooking our vineyard and across to Bimbadgen, and to the west towards Brokenback Mountain. It is set amongst manicured lawns, a fruit orchard and native trees, and is great for entertaining. The two accompanying self-contained cottages each have two bedrooms. They feature luxury bedding, a modern bathroom, kitchen and open living space spilling out to a spacious verandah with private views of the vineyards. What makes staying at Degen Estate so special? Jean: We want our guests to have a luxurious stay. Whether it’s a weekend away with family and friends, a big celebration or a mid-week corporate retreat, there are inviting spaces across the property to explore, to enjoy and to feel at home. The beds are made for serious slumber and the lawns are perfect for greeting the day with yoga, while in the Summer House you can curl up on the comfy sofas with a book and a glass of wine and watch the sunset. And of course, there’s our award-winning swimming pool, ideal for a dip on hot days. Dining is a huge part of staying at Degen, and the perfect place to gather is around our huge dining tables inside, or on the terrace beside the pool while taking in the stunning views. Guests can be as formal or as casual as they like, there’s a spot for every mood. What can you expect from a cellar door experience at Degen Wines? Jean: At Degen, you’re visiting a family-run vineyard, and you’re treated as a guest in our home. So, there’s no standing around at the bar waiting to taste, and there is always one of the family to chat with. We like to get to know our cellar door guests. It’s an opportunity for us to introduce our wines, explain our approach to winemaking and tell guests about our story. I dare say, long after people have visited our cellar door, they’ll remember our story about the small family vineyard they visited in Pokolbin where they met the vignerons, tasted premium singlevineyard wines matched with a platter of local produce, and experienced something very special. Can you tell me a little about your luxury on-site accommodation? Jean: We began offering our vine stay accommodation in 2016. There is a large main house with a swimming pool and two separate cottages. In total the whole property can comfortably accommodate 20 people, making it perfect for hosting large groups of family and friends, corporate retreats, milestone celebrations or wedding accommodation.

It's been a tough first half in 2020 - what are you looking forward to for the rest of the year and beyond? Jean: Drought and bushfires were challenging at the beginning of the year, but we were pleased with the autumn rains, and our winter pruning is going well. Of course, Coronavirus brought our cellar door tasting and accommodation to a halt. However, our online wine sales grew, and we are hugely thankful to our loyal customers who supported us during the weeks of lockdown. Since regional travel restrictions were lifted, we’ve worked very hard to adapt to the new normal. It’s been wonderful to welcome guests back, and though these are still challenging times, we feel people are considerate of the extra steps we need to take to keep everyone COVIDsafe. We’re working to keep the experience of cellar door tasting or staying at Degen Estate special. That’s always been important, but it’s even more important now. We’re optimistic and if you can take away a positive, the challenges of this year have meant we’ve looked carefully at everything we do and are trying to find ways of doing what we do better. Looking ahead, we’re excited about the release of our 2019 wines and offering something completely new with our Rosé and Sparkling Shiraz. It’s our third decade in the Hunter Valley, and we’re as excited as the first day we began our journey. P

Oishii Japanese Thai Restaurant As with many businesses in the Hunter Valley, Oishii Japanese Thai Restaurant is a family business. Bo Boonsong opened the restaurant on her own in 2004 and was joined by her son Patrick each weekend for added support. But what started as a tourism restaurant limited to weekend trade has developed into a seven day a week gig for the pair.

Cedar Creek Bushfire Recovery Boosted by Kinder

Family confectionery brand, Kinder, has made a vital contribution to Cedar Creek Wombat Rescue that will support the rehabilitation of native animals in bushfireaffected areas of the Hunter Valley region. Kinder’s $30,000 donation will fund a new hospital facility equipped with specialised surgical equipment and three Intensive Care Units. These improvements mean Cedar Creek’s team can continue to provide a critical service for local animals, expanding its recovery program for injured or displaced wombats and increasing capacity for other vulnerable wildlife. “Kinder’s generous donation means so much to us here at Cedar Creek. Sweet it is! Dessert Wines D

Dessert wines are sweet, luscious after-dinner drinks that linger on your palate more deliciously than any mousse, cake or tart. Affectionately known as ‘stickies,’ these sweet wines are a sensational accompaniment to fruit desserts and are perfect with blue or soft cheeses. Alternatively, they can stand alone as a replacement for dessert at the end of a meal.

Fermented in the same manner as conventional white wines, dessert wines tend to be intensely flavoured, deeply gold in colour with bouquets of dried apricots, a rich sweet flavour and a sharp acid finish. The types of desserts that a dessert wine can go with are limitless, but the general rule is for the dessert wine to be sweeter than the dessert to avoid having the food overpower the wine. Here's a quick overview of three of our favourite fortified and dessert wine styles.

Lightly Sweet Dessert Wine

Lightly sweet dessert wines are the ultimate dessert wine for fruit-based and vanilla-driven desserts. These wines are generally refreshingly sweet and perfect for a hot day. When it comes to food, these wines are well matched to spicy foods like Indian and Asian cuisine. Some of the lightly sweet wines on the market today include Gewürztraminer, Riesling and Chenin Blanc. These wines are usually best served cold and should be enjoyed at their freshest, although some, such as Riesling, age well.

Richly Sweet Dessert Wine

Richly sweet wines are made with the highest quality grapes in an unfortified style and can age 50 years or more. This is because their sweetness and acidity preserve their fresh flavour. There are several ways to produce richly sweet dessert wines: Late Harvest: Late harvest means precisely that. Often described as ‘liquid sunshine’ these wines are traditionally made from grapes that are left on the vines until the end of the harvest so that they ripen to their fullest before naturally dehydrating. The result is a wine that has a higher residual sugar (or alcohol, depending on how long it is left to ferment). Being late harvest generally indicated a sweeter dessert wine such as late harvest Riesling, Pinot Gris or Semillon. Semillon is the favourite grape used in dessert wines because its thinner skin allows for a more effective state of botrytis and therefore sweeter juice. When it comes to food, Foie gras, blue cheese and light chocolate desserts are excellent pairings for a late harvest Semillon.


Noble Rot: While it may not sound very appealing, some of the most sought after dessert wines in the world are made from grapes that are, well… rotten. The fruit is covered in a fungus called botrytis cinerea – also known as ‘noble rot,’ which causes it to shrivel up and dehydrate, leaving behind extra sweet pulp - which the winemakers then press for juice. While it sounds and looks disgusting, it adds a unique and highly sought after flavour of ginger and honey to the wine. Some of the world’s most exceptional sweet wines such as Sauternes from Bordeaux are made from Noble Rot. Readers may also be familiar with De Bortoli Noble One Botrytis Semillon - arguably Australia’s most famous dessert wine. Wines made from botrytised grapes are generally medium-sweet to very sweet, typically displaying aromas and flavours of tropical, stone and soft citrus fruits, honey, marzipan and liquorice. These wines are not only beautiful with desserts such as a fruit tart, but are also perfect when accompanied by sharp washed-rind cheese and blues such as Roquefort. Ice Wine (Eiswein): Freezing grapes is another way to concentrate sugars to make sweet wine. When made in the traditional way, ice wine, or ‘eiswein’ as it is often called in Germany and Austria, is left on the vine long after the typical harvest is finished until temperatures drop enough for the grapes to freeze. Ice wines are commonly produced in cold regions like Canada, Germany and Switzerland.

Fortified Wines

Fortified dessert wines such as Sherry, Port, and Madeira are made by adding alcohol (brandy spirits) during fermentation. This kills the yeasts that convert sugar to alcohol, leaving the wine very sweet and increasing the alcohol level to between 15 and 20%. The types of spirit used and the point in the process that the spirit is added has an enormous impact on the style of wine being made. Generally, the earlier the spirit is added, the sweeter the resulting wines.

After fortification, the wine is left to mature in oak barrels, sometimes for decades, developing into complex, aromatic wines, with immense depth and concentration of flavour and colour. Muscat grapes are used to make a variety of sweet dessert wines in various parts of the world. Typically, these are fortified wines, although some sweet late harvest and noble rot wines are also made from Muscat grapes. Liqueur Muscat is a fortified wine from the Muscat Blanc à Petits Grains, which is a white wine grape and considered one of the oldest grape varieties in existence (also known as Brown Muscat grapes). The wine is sweet, dark and highly alcoholic with similarities to the Portuguese fortified wine Madeira. Liqueur Muscat essentially starts out as a late harvest wine, with the grapes left on the vine longer than usual - until they are practically raisins and very sweet. ■

For almost 150 years it kept some of Australia’s most infamous criminals contained behind its towering sandstone walls and razor wire fencing. These days, however, Maitland Gaol welcomes a far more law-abiding crowd through its foreboding iron gates.

Thousands of visitors from all over the world flock to the commanding convict-built structure every year to explore the fascinating, frightening and sometimes far-fetched sounding stories of what life was like behind its grim stone walls. The award-winning tourist attraction is one of around a dozen historic gaols and similar sites that are now open to the public across Australia, providing an insight into the country’s prison system, as well as many other aspects of early life in the colony. Positioned prominently on top of a hill in East Maitland, Maitland Gaol was built in the mid-1800s using sandstone sourced from the local area including Morpeth and Farley. The foundation stone was laid in 1844, with the first prisoners incarcerated in the multi-building complex in December 1848. The Gaol was built over several stages between 1844 and 1900, with much of the masonry work carried out by prisoners. While some additions and alterations were undertaken in the late 1960s and ’70s, the closure of the Gaol was announced in 1996 as part of an upgrade to the state’s prison system. It was determined that security at the site no longer met community expectations, while the overall conditions were considered unsuitable and the cost of operating the antiquated facility was excessive. Maitland Gaol closed as a maximum-security prison on January 29, 1998, with the honour of being Australia’s oldest structure in continuous

use as a gaol. Thirteen months later Maitland City Council was awarded a 50-year lease for the site, with plans to adaptively reuse the Gaol as a museum. The Gaol was also added to the State Heritage Register in 1999. Over the years since being reopened as a tourist attraction, several guided tours have been developed at the Gaol, with themes covering everything from crimes of passion to daring escapes. There is undoubtedly plenty of source material to draw from for the tours, with the Gaol housing some of the country’s most notorious criminals at one time or another. Previous ‘guests’ included Sydney underworld figure Arthur 'Neddy' Smith, John Travis and the Murphy Brothers, who were convicted of the murder of 26-year-old nurse Anita Cobby, bank robber Darcy Dugan and backpacker serial killer Ivan Milat. A total of 16 executions (carried out as public hangings until 1861) were enacted on the Maitland Gaol site between 1843 and 1897, including 13 for murder and three for rape, while the last corporal punishment in NSW – the whipping of an inmate – occurred at Maitland in 1905. The Gaol was also the site of numerous daring escapes, with almost 40 attempts made throughout its history, although most of them failed. The last recorded escape plot, on May 17, 1997, was thwarted before it even began after drug baron George Savvas, Milat and two other prisoners planned to overpower the prison officer in A Wing, steal his keys and use them to gain access to the general yard. From here they would have escaped over the wall to a car waiting for them on the other side. However, increased security regulations meant the plot was uncovered before it could be put into action. Not surprisingly, the ex-warder and ex-inmate guided tours are among the Gaols’ most popular offerings, providing a unique perspective into life behind bars with stories that are not for the faint-hearted. Maitland Gaol is also said to be the most haunted site in the Hunter, making its regular ghost tours another popular activity for those curious about the paranormal.
