Transglutiminase costs more than the meat. It makes no sense to glue various pieces of beef together and sell it as a more expensive product, since it's less expensive to buy the more expensive product in the first place.

This stuff is used for creative "look what modern chemistry can do" dishes. (Such as ahi/hamachi/salmon nigiri.)

I only eat medium rare steaks.. I cannot stand an overcooked piece of meat that releases carcinogens...

If there are carcinogens in the steak and you eat it raw, aren't you still eating the carcinogens?

No. There are oxidants in the steak. The carcinogens come from burning the outside.
