5 Questions: Salem Prime Cuts

Norwich native John Fusaro, owner of Salem Prime Cuts, has been in the meat business since he was a teenager. Now 65, he purchased the butchering and retail grocery business in 1986, and 10 years later he expanded it and moved the operation to its current location at Salem Four Corners. A handful of family members are among his 14 employees, including two grandchildren. He said that although retail traffic is actually up during the past year with fewer customers dining out as often as they had, gross sales have dipped about 15 percent because people are buying cheaper cuts of meat. At the same time, he is butchering more livestock that customers are raising in their backyards and pastures.
