This is awkward

I

don’t celebrate Valentine’s day. A long history of my husband’s bad experiences with his exes (Ahem) and a general lack of experience on my side in terms of stereotypical rom-com romance. As a couple, I think we’re just bad at it and the most romantic nights are the ones where absolutely nothing happens. That being said, this IS a Valentine’s edition so I’ll do my best and paint an ideal

picture of what this day should be like for me, in an alternate universe.

The concept of love and romance is a beautiful thing. Most of the days of the year are packed with suckiness and drama, but for this one day, all that is put aside to make people feel loved and all mushy. To make sure that happens this year for you too, whether it’s for a loved one or for yourself, we’ve got everything you need to make the 14th special. Let’s start with the most romantic thing of all… Food. I’m not talking about ugly eating that cheeseburger, I’m talking about beautiful dinners of delicate nature filled with rich goodness that we love- I’m talking chocolate, oysters, wine and other decadent ingredients that take a normal meal from Meh to Oomph! As a treat, we picked our favourite Valentine’s meals like Wine Brownies, Feta with Ice cream and so much more. We also give you the low down on aphrodisiacs (wink wink) because everyone needs a little help once in a while. But perhaps the firecracker of all this is Ekta Patel’s Pani Puri fusion with tequila that is guaranteed to take that dinner to another level. In this edition, you’ll also find various spots for a great Valentine’s dinner like Kempinksi, Sankara, Four Points and more. For those brunch lovers, we’ve got our top spots and the team from This is Essential share their top spots for dinner. THE POWER OF

Aquafaba You’ve probably heard this word before but here’s an actual guide on what it is and how you can use it. Aquafaba is the viscous water in which legumes like chickpeas have been cooked. The water, most popularly used from chickpeas, is used as a substitute for a number of egg-based dishes. Aquafaba is easy to use and while you enjoy your chickpeas, you can make something easy and tasty on the side. Here are 3 quick and easy recipes you can use with aquafaba:

VEGAN MAYO

All you’ll need is 3 tbsp of aquafaba, 1 tsp Dijon mustard, 250ml sunflower oil, 1 tsp white wine vinegar & a pinch of salt and pepper. Whisk up the chickpea water and mustard until frothy then slowly add the oil and emulsify. Finish with the vinegar and seasoning

VEGAN BUTTER

You’ll need 3 tbsp of aquafaba, 7 tbsp coconut oil, 4 tsp olive oil, 2/3 tsp apple cider vinegar and 1/3 tsp salt. Add melted coconut oil & olive oil slowly to aquafaba and blend using an immersion blender. Blend until you achieve a thick mayo like consistency. Pour it in a container (don’t cover it) and put it in the fridge overnight.

VEGAN MONKEY SOUR

You’ll need 45ml of whiskey, 30ml lemon, 15ml simple syrup, 30ml of aquafaba and a dash of angostura bitters. Put everything in a shaker except the bitters. Shake vigorously, add the bitters then transfer in a glass with ice and garnish with lemon peel.

Being the “chef” of the group, I needed a crowd-pleasing dish when I happened to glance over and see a bottle of tequila next to the tub of leftover puri’s from the previous night. I immediately started experimenting and even went down the route of pinto beans and avocado as the filling. The task was daunting, so much did go

wrong but after several experiments with ratios and ingredients, and the satisfied grins of my guinea pigs (my family), the dish quickly spiralled into a crowd-pleaser at

The Pani: Infuse the orange juice and tequila in a deep bowl with the red bullet chillies for a minimum of 10 minutes. Infuse the chillies for longer to intensify the flavour. Set aside to chill in the fridge.

Build Your Mexican Pani Puri: Layout all the fruit, the pani, the mint, the limes, the tajin & the puri in bowls. Set out shot glasses for the pani & plates so everybody can dig in and customise their own versions of the pani puri.

YUMMY TIPS You can pre-prep the puri’s beforehand and pass them out at your next lunch/ dinner party. Switch up the fruits to include green mango, apple mango, pears, dragon fruit, grapes & even watermelon.

Chocolate Truffles By Ekta Patel INGREDIENTS

400 gms digestive biscuits 10 tbsp. drinking chocolate 2 tbsp. cocoa powder 10 tbsp. salted butter 1 tsp. salt 1 tsp. cinnamon powder 5 tbsp. desiccated coconut, plus extra for coating • 390 gms of sweetened condensed milk Optional - chopped almonds, pistachios and walnuts Optional - dark & white Chocolate chips

METHOD

1. Add the biscuits to a grinder or a ziplock bag and crush into a powder using a rolling pin. 2. Melt the butter in a large saucepan and stir in sweetened condensed milk. 3. Take the mixture off the heat and add the drinking chocolate, cocoa powder, salt, cinnamon powder, desiccated coconut and any of the optional ingredients. 4. Mix thoroughly until the mixture forms a fudge-like texture and pulls away from the sides of the pot. 5. In a plate, spread the remaining desiccated coconut. 6. Grease your hands with some butter & roll the chocolate ball mixture into bite-size balls. Coat these with the coconut.

Deep Fried Feta with Häagen-Dazs By The Bastard Baker INGREDIENTS

1 packet feta cheese cut into strips 1/2 cup cornflour 1 cup breadcrumbs 2 eggs 1 tbsp lemon Salt and Pepper to taste Häagen-Dazs Cookies and Cream Ice Cream

METHOD

1. Whisk the salt pepper and lemon in with the eggs. 2. Dip the Feta in the egg cornflour and breadcrumbs and repeat the process for all the strips. 3. Fry for 2 mins until golden brown. Sprinkle with Himalayan sea salt and devour with Häagen-Dazs cookies and cream ice cream! Yummy. Food. Drink. Life

Red Wine Brownies with Dried Black Currant By Philna Otieno Prep:

15mins Cook: 35 mins

INGREDIENTS

1 - 1/2 cups all-purpose flour 3 Eggs 1/2 cup salted butter 1-1/2 cup sugar 180grms Dark chocolate 1/2 cup Cocoa powder, unsweetened 3/4 cup Mont Rochelle Cabernet Sauvignon • 1/2 cup dried Black currants • 1/2tsp salt METHOD

1. Preheat oven to 350F. Grease baking pan 8 by 8 inch, with butter and set aside. 2. In a bowl mix red wine and blackcurrants, let sit for 3mins to let currants soak in the wine until plump. 3. In another bowl over boiling water, heat butter, chocolate and cocoa powder until mixed together. Let cool for about 5mins. 4. Whisk in eggs one at a time. Add sugar, whisk until everything is well incorporated. 5. Mix flour and salt in another bowl, pour in the chocolate mixture and mix. 6. Finally, fold in the wine mixture. 7. Pour the batter in the baking pan and bake for 30-35mins or until an inserted toothpick comes out clean 8. Allow brownies to cool.

No-Bake Mini Cheesecake Jars By Cooking with Jaz INGREDIENTS

8 digestive biscuits 4 tablespoons unsalted butter 250 grams cream cheese ½ cup sweet condensed milk 1 tablespoon lemon zest Juice of 1 lemon

METHOD

1. Start by crushing the digestive biscuits and mixing with melted butter. Take your glass jars, divide mixture and press it down with a spoon at the bottom of each jar. Follow by placing cream cheese in a bowl and whipping with a hand mixer until soft. Add the condensed milk, zest and lemon juice and fold everything well together. 2. Scoop the cheesecake mixture into each jar and place in fridge to set overnight. Top with fresh fruit the next day and enjoy as a picnic dessert.

Literally coffee lovers heaven, Barista & Co’s hand pressed coffees are the star of the show. You get to pick between the Aeropress, Harion V60 and Siphon coffees. The staff are well versed with the terms and will be happy to explain what each of these terms mean. Their iced coffees are a treat too, with interesting flavors such as mandarin and peppermint mochas. Yum!

With their swanky decor, comfortable seating, massive milkshakes and burgers, Grill Shack has become a fast regular choice for us. A personal favourite for us is their cheeseburger with special cocktail sauce and thin crispy fries that quickly become addictive. HASHMI

This Indian BBQ restaurant has been a favourite for years. No matter its location or size, it’s almost a guarantee that whenever people come into town and need a recommendation, Hashmi is top of mind. Now located in the new wing of Diamond Plaza, Hashmi still has our favourites on their menu that we keep coming back for, especially their chicken tikka, butter naan and pili pili chips. OHCHA

From their Build Your Own option to their comforting fixed options, OhCha is a regular whether it’s ordering in or actually going to the restaurant. If you love pasta then you must have visited this corner store at the Village Market Food Court. They don’t just make pasta fresh every day that looks like it stepped straight out of a Pinterest board but it tastes just as good. Pass by and order a delicious plate of hot pasta or if you’re in the mood to cook pasta (without kneading for hours) take away a packet or two to cook at home. LA SALUMERIA

This adorable Italian restaurant is located behind Valley Arcade at Dhanjay Apartments in the cute rustic corner. They have been there for over 20 years and has been serving the best Italian food in Nairobi for the longest time. Their wait staff are completely knowledgable on the menu and are excellent at recommending dishes as well as wines, and the Salumeria menu can always be counted on to impress. Whether it’s for a date or group dinner, this restaurant is definitely one we’ll keep coming back to. Our personal favourite is their Boscaiola Fettuccine. SIERRA

It can’t be a surprise that Sierra is on this list. In 2019, they kept the same quality in their dishes while upgrading the decor in their Yaya branch and introducing our palates to a tender, juicy wagyu burger that we just could not get enough of. You can be sure to find us a healthy portion of steak or a lighter plate of sashimi. Maybe 2020 is the year you try one of their Kitchen dinners paired with incredible wine. ABYSSINIA

Nairobians have a running love affair with Ethiopian food and tasting the expertly cooked dishes at this casual restaurant explains why. The traditional decor adds to the warm ambience that makes you want to settle down for more than just one meal. Truffle Fillet with Rocket, Parmesan & Matchstick Fries By Kook Food INGREDIENTS

Steaks:

• 2 fillets, about 150g, 2cm thick • 4 tbsp good quality olive oil • 2 tbsp butter • 6 - 8 garlic cloves, crushed • 1 sprig rosemary • Freshly ground black pepper • Rock salt • Truffle oil

DIRECTIONS

1. Season the fillets generously with salt, black pepper & 1 tablespoon olive oil and marinate overnight with crushed garlic cloves & the rosemary sprig. 2. Heat a heavy bottom pan or cast-iron skillet over a medium to high heat until smoking. Pour olive oil into pan and sear steak for a minute. Add the garlic pieces and rosemary sprig from the marinade into the pan to add flavour to the fillets. 3. Using a pair of tongs, flip the steak for another minute to the other side. Flip and render the sides for 30 seconds on each. Flip back again and add the butter, tilt the pan and baste the steaks, cooking for 1 minute then repeat with the other side. 4. Remove from heat, drizzle with truffle oil and rest for 2 minutes. 5. To serve, layer with matchstick fries, followed by the steak, rocket and finally parmesan. Drizzle with pan juices, crispy garlic, salt & freshly ground black pepper. TO SERVE: Rocket, Shaved parmesan, Matchstick fries

• 2kgs Shrimp, peeled • 3/4 cup Mont Rochelle Sauvignon Blanc • 4 garlic cloves • 1/2 white onion, minced • 3 tbsp butter • 2 tbsp Olive oil • 1/2 cup fresh parsley, chopped • 2 tbsp lemon juice • 1/2 tsp salt • Fresh ground black pepper to taste DIRECTIONS

1. On your pan over medium heat, melt butter with oil. 2. Add onions and cook for 2mins or until they soften. Add garlic and sauté for 30 seconds. 3. Add wine, salt and black pepper and bring to simmer for 4 minutes or until the wine is reduced by half. 4. Add shrimp and sauté for 4 minutes, until pink and cooked through. 5. Remove from heat and stir in lemon juice and parsley.Serve with bread.

INGREDIENTS

• 1 kg baby lamb chops HOUSE MARINADE

• 5 tbsp Korean chilli paste • 3 tbsp dark soy sauce • 3 tbsp sesame oil • 2 tbsp grated ginger • 2 tbsp grated garlic • A handful of chopped spring onions • 1 tbsp of honey DIPPING SAUCE

• 1 tbsp miso paste • 1 tbsp Korean chilli paste • 1 tsp honey • 1 tsp sesame oil • 1 tbsp toasted sesame seeds • 1 tbsp lime juice • Salt to taste • Water for consistency DIRECTIONS

1. In a large bowl, mix in all the marinade ingredients together. 2. Add in the lamb chops and rub in the marinade evenly then refrigerate overnight. 3. For the best flavours, cook on the barbecue and baste with the remaining marinade. Cook 5 mins on each side and to keep turning them and checking with the fingers to see when cooked. 4. Once charred, serve with the dipping sauce and cucumber relish.

Lazy Cook

SOUFFLE PANCAKES Just because you’ve started your new year diet doesn’t mean you can’t indulge a little. These light and fluffy pancakes are the perfect Saturday morning treat and don’t require you to have anything but a hand mixer, eggs and your phone to capture that signature jiggle. INGREDIENTS

• • • • • • •

6 tbsp cake flour 2 1/2 tbsp skim milk 1 tsp baking powder 1/4 tsp vanilla extract 1/2 tbsp full-fat mayonnaise 3 tbsp granulated white sugar 2 large eggs

METHOD

1. In a medium bowl, add milk, baking powder, vanilla, mayonnaise and egg yolks. Mix with a whisk until batter is smooth and the mixture is a pale yellow. 2. In a separate bowl whip egg whites until stiff peaks form (about 2-3 minutes.) If you turn the mixing bowl upside down, the meringue will not slide out. 3. Using a spatula, gently fold the meringue slowly adding 1/3 of the meringue into the batter until there are no more white streaks. 4. Bring your pan to low heat. Drop a spatula spoonful of the batter onto the hot pan, then top with an additional ½ spoonful on top of each pancake to help add height and cook it for 3 minutes. 5. Flip them over after 3 minutes and then cook for a further 3 minutes or until both sides are browned. 6. Dust with icing sugar and syrup, and serve immediately.

LEMON POPPY SEED CAKE Prep Time: 20 Minutes

Cook Time: 30 Minutes

INGREDIENTS: For the Loaf:

• I ½ cup non-dairy milk • Zest of 1 large lemon • 1 tbsp Apple Cider Vinegar (ACV) or juice of 1 lemon juice • 2 ½ cups spelt flour or all-purpose flour or gluten-free flour • 1 tbsp baking powder • 1 tsp baking soda • ¼ tsp salt • ½ cup maple syrup • ½ cup of vegetable oil • 1 tsp vanilla extract (optional) • 3 tbsp poppy seeds For Cream Cheese Frosting:

• • • •

a 200g can of frozen coconut cream ½ cup icing sugar 1 tbsp lemon juice ½ tsp vanilla extract

METHOD

1. Preheat oven to 180°C. 2. Grease a 9-inch loaf pan with vegan butter or vegetable oil. 3. In a small bowl, add the non-dairy milk and

ACV and set aside to curdle, making vegan buttermilk. 4. In a large bowl, sift the flour, baking powder, and baking soda. Sift the ingredients a second time to better aerate your ingredients. Add the salt. 5. Make a well in the middle of the flour mixture and add the wet ingredients; buttermilk, maple syrup, oil, vanilla extract, lemon zest, and poppy seeds. Stir together until just combined. (Don’t overmix, or your cake will be too dense). 6. Pour the batter into your greased loaf pan, smoothing it out evenly. (Tap the pan gently on your work surface to release any air bubbles). Bake for 20-25 minutes or until a toothpick inserted into the middle of the cake comes out clean. 7. Allow to cool completely before frosting. For Cream Cheese Frosting: In a bowl, add all frosting ingredients and mix using a hand mixer until smooth and creamy (or mix in a blender). 8. Spread the frosting over your cooled cake evenly and garnish as desired. (I used poppy seeds and lime for garnish). Serve and enjoy.

2 tbs chia seeds 10 tbs coconut milk 2 tsp baobab powder 1 tbs desiccated coconut ½ cup chopped papaya

METHOD

1. In a glass, add combine chia seeds and baobab powder. 2. Add coconut milk and stir well. Let it sit in the fridge overnight or until gel-like. 3. Top with desiccated coconut and papaya (or other sweet fruit in season).

NOTES Make your chia pudding in bulk and store it in the fridge for up to 5 days Top your chia pudding with pears, dates, raspberries or even plums.

NOTES Use the whole turmeric in its natural form which is perfectly bio-available on its own, just like mother nature intended. I use canned coconut milk to avoid the carrageenan that is added to most boxed alternatives. Make sure you heat up your chai as the heat is said to increase the solubility of curcumin (the primary active constituent in turmeric) by 12 times, which may also increase its bioavailability in the body.

GOLDEN MILK/ TURMERIC CHAI PREP TIME: 15 Minutes INGREDIENTS:

• 1 cup of canned coconut milk • 1 cup almond milk • 2 tsp ground turmeric (from Daillies organic) • ¼ tsp ground ginger (from Daillies organic) • ¼ tsp ground cinnamon or 1 cinnamon stick • A pinch ground black pepper • 1 tbs maple syrup METHOD

1. In a sufuria, add all your ingredients. 2. Whisk to combine and warm over mediumlow heat, until hot but not boiling. (The longer you simmer, the stronger and more intense the flavours) 3. Adjust flavour to liking. 4. Serve immediately.

PESTO PASTA

PREP TIME: 20 Minutes INGREDIENTS:

Half a pack spaghetti 1/4 cup pumpkin seeds A handful of coriander 2 cloves garlic (minced) 2 tbs nutritional yeast 2 tsp of tahini Juice of ½ a lemon (about 2 tbs) A dash of water Salt and pepper to taste

METHOD

1.Cook spaghetti or other pasta of choice according to package instructions. Drain, rinse and set aside. 2. Prepare the pesto by throwing all the other ingredients in a blender. Taste and adjust flavours as needed. 3. Add the pesto to the spaghetti and toss to combine. 4. Garnish as desired and serve immediately.

NOTES Add more nutritional yeast for cheesy flavour, more tahini for creaminess and lemon juice for acidity. It is best when fresh, but keeps in refrigerator up to 3 days. Keeps well if pasta and pesto are refrigerated separately.

ere’s to beginning 2020 by setting the goal to grow some of your food at home whether it’s greens for your sandwich or herbs for your pasta. I’m going to show you how to create the perfect soil for your plants to thrive. Creating an ecological regenerative edible garden is one of the best things you can do for your health and environment. As a Permaculture Designer, I use permaculture

principles in all my edible landscaping designs. So how do we create the perfect soil for our gardens with Mother Nature’s help? Easy, look for how she has done it and repeat the same process. One of the best examples of this is Karura Forest (or any other Forest). There are no gardeners in the forest (not Human ones anyway) and there is no irrigation system yet everything is in balance and growing perfectly. The forest soil is dark, soft, moist, full of humus and millions of worms and insects that providing rich nutrients to the plants, who will die and fall to the ground to provide food for these critters. Above ground, it’s the same. To get our garden soils to function and behave the way the soil does in Karura Forest, simply replicate what happens there. Now, we can’t get as many wild animals

Then add 1 to 2 inches of dried leaves or grass as mulch, and give your newly made garden bed a thorough watering. The bed will be ready to plant after a week of curing. What we have done is create a regenerative garden bed. Over time, the organic matter will slowly decompose into compost and create a thriving environment for the underground economy to thrive. It will retain lots of water and nutrients for the plants it supports above ground. The sticks and twigs will also slowly decompose creating a home for the underground fungi which provides plants food in a mutual exchange of nutrients. The mulch you have added on top will need to be replaced every year as it will slowly decompose and provide compost for your plants from the top while aiding in retaining moisture underground. An ecological garden feels alive and well integrated, and this is the start. Look out for the next issue of Yummy, where we will be now explaining the basics of companion planting along with planting examples including how to create and complete your ecological garden once you have prepared the forest floor soil mentioned above. Pasta Sauce With a Kick Bright, Creamy Vodka Pasta Sauce

You might have taken a break from drinking but that doesn’t mean you can’t find a different way to use leftover liquor. A splash of vodka adds texture and flavour to this simple pasta sauce. YUMMY TIP The vodka adds a little heat and sharpness that balances out the tomatoes and heavy cream.

INGREDIENTS:

• ½ cup butter, • 1 small onion, • ½ cup vodka, • ½ cup tomato paste, • ½ cup heavy cream 1. Dice the onion. 2. Saute the onion in butter until browned. 3. Add in vodka and cook for 10 minutes 4. Add in tomato paste then heavy cream and cook for 30 minutes 5. Serve with your favourite pasta
