Sometimes these patches can be extensive, like the Sloan Digital Sky Survey, which scanned over 30% of the entire sky, or the Hubble Ultra Deep Field survey, whose region that extends about 1/10th the diameter of the full Moon in length; For a survey, the telescope is used in much the same way as it is with individual objects, in that it attempts to collect all the light from a part of the sky. Rather than focusing in on a single object, however, it allows light from the entire region to fill the telescope, and optics redirect the light from different parts onto different areas of the CCD that is storing the image (the same way a digital camera captures a photograph))
