Two of my favourite teachers from literature are Miss Stacy from the Anne of Green Gables series, and Miss Honey from Matilda. I also really liked Mr. Browne in Wonder.

All of these are such loving, encouraging people! None of them are really traditional or boring in anyway, but instead teach their students using unique, surprising, and sometimes totally goofy ways – which, really, are the best ways to catch and keep kids attention anyway!

The book that immediately jumped to mind for me was Reading with Patrick by Michelle Kuo.

The Water is Wide by Pat Conroy spoke deeply to my young idealistic heart. Now I'm on year 10 of teaching and wish I could feel that way again.
