D750. The FF OOF areas will be smoother. It also seems that Nikon has applied the same image processing to both cameras, so both should create equally pleasing jpegs.

Lack of an EVF is a major con against the A5100. Any camera with no EVF/OVF should be bumped from contention.

What are you talking about? The D750 and D610 are the same size, while the D750 actually has a better grip and lighter carbon fiber materials.
