Producing TIFF in-camera means the camera has to do the de-mosaicing. There is nothing inherently wrong with that, except that the resulting output is no longer a "RAW" record of the sensor reading.

If your argument is true, I cam take any still image from any camera, throw away an arbitrary amount of rows, reassemble the rest, and obtain a image that has deeper DOF than what I started out with.
