Function

CGTase (abbreviation of cyclodextrin glucanotransferase) binds glucose to circular cyclodextrins.

Application

CGTase is used in the starch industry in the production of cyclodextrins (dextrins). Dextrins are used:

  • as transporters and for the micro-encapsulation of aromas

  • to stabilise fat-soluble pigments such as carotinoidsor annatto

  • to improve taste (e.g., by reduction of unwanted aftertaste in sweeteners)

With the aid of cyclodextrins, the omega-3 fatty acids contained in fish oils and algae extracts are wrapped chemically. Due to this wrapping, the disagreeable fish taste is eliminated and the valuable fatty acids may then be added to a variety of products.

Gene tchnology

In the EU to date, one preparation is manufactured with the aid of genetically modified micro-organisms (Bacillus licheniformis).

Labelling: labelling of enzymes in regard to their production using GM microorganisms is generally not foreseen in the European Union.
