Coeliac (or celiac) disease is a condition that affects the small bowel, caused by an abnormal immune response, or sensitivity, to a dietary protein known as gluten. Sensitivity to gluten causes inflammation and damage to the small intestine, and sometimes the damage is so severe that the intestine is unable to absorb essential nutrients, leading to diarrhoea, vitamin and mineral deficiencies and eventually malnutrition.

Real Olive Company

Toby Simmonds first started trading in the market in 1993 when he managed to secure a vacant stall from Gerry Moynihan in the Princes-Street part of the market. At first Toby began with just twelve barrels of basic olives and for his first year was met with plenty of bemused customers who regularly asked what type of grapes they were.


Word soon spread throughout Cork and the surrounding areas about the exotic  and dressed olives for sale in the market. The taste buds of many changed and they became accustomed to the strange taste of the olives and so Toby started to sell more. So much so that he then moved to a larger stall in the Grand Parade market and increased his range of olives and the produce that he was selling to include chillies, feta cheese, pickles, sun-dried tomatoes, vine leaves, olive oil and dried fruits.

The Real Olive Company can be seen at many of the outdoor and farmers markets around the South East.
